WHOLE-WHEAT CINNAMON-RAISIN BREAD

Steps:
- Make the dough.
- Measure out 1 1/4 cups very warm water and check the temperature; it should be 120 degrees F to 130 degrees F. Combine both flours, the dry milk, egg, canola oil, honey, salt, yeast and warm water in the bowl of a stand mixer fitted with the dough hook. Mix 3 minutes on the lowest setting, then increase to the next highest setting and mix 5 more minutes. The dough should be soft and sticky.
- Let it rise.
- Transfer the dough to a large bowl coated with cooking spray. Cover tightly with plastic wrap and let rise at room temperature until the dough has nearly doubled in size, about 1 hour, 30 minutes.
- Soak the raisins.
- Dry raisins will rob moisture from the bread, so soak them first in boiling water until plump, about 30 minutes. Drain and pat dry.
- Fold the dough.
- Transfer the dough to a floured work surface. Picture it as a loose square. Lift up one side of the dough and fold about one-third of it across; press down on the dough with spread fingers to remove any air bubbles. Repeat with the remaining 3 sides of the dough.
- Add the filling.
- Mist two 9-by-5-inch loaf pans with cooking spray. Divide the dough in half; roll out each half into an 8-inch square. Brush each square with canola oil, then sprinkle with the cinnamon (it's high in antioxidants!), brown sugar and raisins.
- Form the loaves.
- Roll up each square of dough into a tight cylinder; place seam-side down in the prepared pans. Cover tightly with plastic wrap and let rise at room temperature until the dough fills the pans and springs back when touched, about 1 hour, 30 minutes.
- Bake the bread.
- Preheat the oven to 375 degrees F. Brush the loaves with canola oil and bake until golden brown, 25 to 30 minutes. Remove from the pans and transfer to a rack to cool completely.
LOW-FAT ORANGE-RAISIN BRAN BREAD

- Mix flour, sugar, baking powder and salt in large bowl. Beat egg in small bowl with wire whisk. Add milk, orange juice, orange zest and oil; mix well. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and raisins.
- Pour into 9x5-inch loaf pan sprayed with cooking spray.
- Bake at 350°F for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.

- Preheat oven at 350.
- Prepare 2 bread pans with cooking spray and flour.
- In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another mixing bowl, combine applesauce, raisins, lemon peel, milk, vanilla, and egg white.
- Mix dry ingredients with wet ingredients just until moistened.
- Pour batter into prepared pan (s).
- Bake for 1 hour.

This is a recipe that I adapted from a 6 week bran muffin recipe. I'm doing Weight Watchers and this is really helping to take off the weight. It makes a very large batch but can be kept for 6 weeks!

- 1. In a large bowl, add boiling water to the 8 cups of whole bran cereal. Allow to Cool.
- 2. Mix applesauce, molasses, sugar, eggs, vanilla, and buttermilk . Add to bran mixture. Stir in flour, baking soda, and salt. Fold in the 8 cups of raisin bran cereal. Stir only until moistened.
- 3. Bake in a preheated 425 degree oven for 20 to 25 minutes.
LOW FAT APPLE BANANA RAISIN BREAD
This is a delicious low fat version of my mom's recipe. It yields 2 loaves. I'm a very busy person with small children and lots of pets, so I will offer my time saving hints; with a large spoon, mix the wet ingredients in a large bowl then sift the dry ingredients right over the top and stir slowly until combined. I also always have some sort of flavored applesauce snack pack on hand and that is what I use. It could be mixed berry flavor or apple cinnamon, even grape! They all work well and I use 2 snack cups.

- Spray 2 loaf pans with non-stick spray and set aside.
- Mix applesauce, egg whites, vanilla, brown sugar and mashed banana in a large bowl.

TASTY & HEALTHY APPLESAUCE BREAD
This is really good, and you'll be amazed at how low in fat and sugar it is! The recipe started as one from Sunset's Light and Healthy cookbook (1990), but I've tweaked it over the years, and I think I could get away with even less sugar. It's moist enough you don't need to spread it with anything -- just slice and enjoy. If you substitute craisins (sweeted dried cranberries), it works nicely for a holiday brunch or snack. - Preheat oven to 350°F Grease a loaf pan.
- Mix beaten egg with applesauce, oil sugars and salt, and combine thoroughly.

- Mash Banana coarsely with a fork.
- Stir in orange concentrate.
- Spread banana mixture over 2 slices of bread and top with the other two slices so you have two sandwiches.
- In a pie plate whisk together the egg whites and milk.
- Soak sandwiches for 20 seconds on each side.
- Transfer sandwiches to a plate.
- Stir together the yogurt and maple syrup set aside.
- Melt a 1/2 tsp butter in a non stick skillet, low heat.
- With a spatula place the sandwiches in the pan and brown the under side, 5-7 minutes.
- Flip and slip the other 1/2 tsp of butter under the sandwiches and brown about 5-7 minutes.
- Serve with the sweetened yogurt.
- Turn and brown the other side 5-7 minutes.

- In a small saucepan, bring raisins and water to a boil. Reduce heat; cover and simmer for 5 minutes. Drain, reserving 1/2 cup liquid. Stir oats into reserved liquid; set raisins and oat mixture aside. , In a large bowl, dissolve yeast in warm water. Stir in honey; let stand for 5 minutes.
