WHOLE-WHEAT CINNAMON-RAISIN BREAD



Whole-Wheat Cinnamon-Raisin Bread image

Number Of Ingredients 12

2 cups bread flour, plus more for dusting
2 cups whole-wheat flour
1/4 cup nonfat dry milk
1 large egg
2 tablespoons canola oil, plus more for brushing
3 tablespoons honey
2 teaspoons salt
1 1/2 teaspoons instant dry yeast
Nonstick cooking spray
2/3 cup raisins
1 tablespoon plus 1 teaspoon ground cinnamon
1/3 cup packed dark brown sugar

Steps:

  • Make the dough.
  • Measure out 1 1/4 cups very warm water and check the temperature; it should be 120 degrees F to 130 degrees F. Combine both flours, the dry milk, egg, canola oil, honey, salt, yeast and warm water in the bowl of a stand mixer fitted with the dough hook. Mix 3 minutes on the lowest setting, then increase to the next highest setting and mix 5 more minutes. The dough should be soft and sticky.
  • Let it rise.
  • Transfer the dough to a large bowl coated with cooking spray. Cover tightly with plastic wrap and let rise at room temperature until the dough has nearly doubled in size, about 1 hour, 30 minutes.
  • Soak the raisins.
  • Dry raisins will rob moisture from the bread, so soak them first in boiling water until plump, about 30 minutes. Drain and pat dry.
  • Fold the dough.
  • Transfer the dough to a floured work surface. Picture it as a loose square. Lift up one side of the dough and fold about one-third of it across; press down on the dough with spread fingers to remove any air bubbles. Repeat with the remaining 3 sides of the dough.
  • Add the filling.
  • Mist two 9-by-5-inch loaf pans with cooking spray. Divide the dough in half; roll out each half into an 8-inch square. Brush each square with canola oil, then sprinkle with the cinnamon (it's high in antioxidants!), brown sugar and raisins.
  • Form the loaves.
  • Roll up each square of dough into a tight cylinder; place seam-side down in the prepared pans. Cover tightly with plastic wrap and let rise at room temperature until the dough fills the pans and springs back when touched, about 1 hour, 30 minutes.
  • Bake the bread.
  • Preheat the oven to 375 degrees F. Brush the loaves with canola oil and bake until golden brown, 25 to 30 minutes. Remove from the pans and transfer to a rack to cool completely.

3/4 cup fat-free milk
1/2 cup orange juice
2 Tbsp. grated orange zest
2 Tbsp. oil
2 cups wheat bran flake cereal
3/4 cup raisins

Steps:

  • Mix flour, sugar, baking powder and salt in large bowl. Beat egg in small bowl with wire whisk. Add milk, orange juice, orange zest and oil; mix well. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and raisins.
  • Pour into 9x5-inch loaf pan sprayed with cooking spray.
  • Bake at 350°F for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.

6 cups boiling water
3 cups unsweetened applesauce
1 cup molasses
7 cups sugar
12 eggs
12 cups buttermilk
15 cups whole wheat flour
5 tablespoons baking soda
1 tablespoon salt
1 tablespoon vanilla
8 cups Raisin Bran cereal

Steps:

  • 1. In a large bowl, add boiling water to the 8 cups of whole bran cereal. Allow to Cool.
  • 2. Mix applesauce, molasses, sugar, eggs, vanilla, and buttermilk . Add to bran mixture. Stir in flour, baking soda, and salt. Fold in the 8 cups of raisin bran cereal. Stir only until moistened.
  • 3. Bake in a preheated 425 degree oven for 20 to 25 minutes.

This is a delicious low fat version of my mom's recipe. It yields 2 loaves. I'm a very busy person with small children and lots of pets, so I will offer my time saving hints; with a large spoon, mix the wet ingredients in a large bowl then sift the dry ingredients right over the top and stir slowly until combined. I also always have some sort of flavored applesauce snack pack on hand and that is what I use. It could be mixed berry flavor or apple cinnamon, even grape! They all work well and I use 2 snack cups.

This is really good, and you'll be amazed at how low in fat and sugar it is! The recipe started as one from Sunset's Light and Healthy cookbook (1990), but I've tweaked it over the years, and I think I could get away with even less sugar. It's moist enough you don't need to spread it with anything -- just slice and enjoy. If you substitute craisins (sweeted dried cranberries), it works nicely for a holiday brunch or snack. 1 1/2 cups unsweetened applesauce
2 tablespoons vegetable oil
1/4 cup white sugar
1/4 cup brown sugar (firmly packed)

1 teaspoon salt
1/4 cup raisins
1/4 cup walnut pieces

Steps:

  • Preheat oven to 350°F Grease a loaf pan.

4 slices cinnamon raisin bread
2 large egg whites
1/4 cup skim milk
1/4 cup nonfat plain yogurt
1 1/2 tablespoons maple syrup or 1 1/2 tablespoons honey
1 teaspoon butter
1 ripe banana
2 teaspoons frozen orange juice concentrate

Steps:

  • Mash Banana coarsely with a fork.
  • Stir in orange concentrate.
  • Spread banana mixture over 2 slices of bread and top with the other two slices so you have two sandwiches.
  • In a pie plate whisk together the egg whites and milk.
  • Soak sandwiches for 20 seconds on each side.
  • Transfer sandwiches to a plate.
  • Stir together the yogurt and maple syrup set aside.
  • Melt a 1/2 tsp butter in a non stick skillet, low heat.
  • With a spatula place the sandwiches in the pan and brown the under side, 5-7 minutes.
  • Flip and slip the other 1/2 tsp of butter under the sandwiches and brown about 5-7 minutes.
  • Serve with the sweetened yogurt.
  • Turn and brown the other side 5-7 minutes.

2 cups raisins
1-1/2 cups water
1/2 cup old-fashioned oats
1 tablespoon active dry yeast
1-1/4 cups warm water (110° to 115°)
1/4 cup honey
2 eggs
3/4 cup nonfat dry milk powder
2 teaspoons salt
1-1/2 teaspoons ground cinnamon
2 cups whole wheat flour
3 to 3-1/2 cups all-purpose flour

Steps:

  • In a small saucepan, bring raisins and water to a boil. Reduce heat; cover and simmer for 5 minutes. Drain, reserving 1/2 cup liquid. Stir oats into reserved liquid; set raisins and oat mixture aside. , In a large bowl, dissolve yeast in warm water. Stir in honey; let stand for 5 minutes.
