I'm always trying to make lighter salad dressings. Recently, I learned the trick of using water and cornstarch to replace most of the oil in dressing recipes. This version is much healthier and soo yummy!

1 tablespoon white sugar
1 teaspoon extra-virgin olive oil

¼ teaspoon onion powder

¼ teaspoon poppy seeds

Steps:

  • Mix water, vinegar, sugar, olive oil, cornstarch, salt, onion powder, mustard powder, and poppy seeds in a saucepan. Bring mixture to boil; cook, whisking constantly, until dressing is thickened, 30 seconds. Remove from heat and cool.

  • this is best when chilled before using.
  • Can use handheld electric beater for larger amounts.
