2 teaspoons baking powder
1 teaspoon baking soda
1 and 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
3/4 cup (180ml) canola or vegetable oil
4 large eggs (, room temperature)
1 and 1/2 cups (300 grams) light brown sugar
1/2 cup (100 grams) granulated sugar
1 (8-ounce) can crushed pineapple (, drained)
1 teaspoon pure vanilla extract
3 cups (300 grams) grated carrots (, lightly packed)
3/4 cup (90 grams) chopped walnuts
1/2 cup (75 grams) raisins ((optional))
1 (8-ounce) package brick style cream cheese (, softened to room temperature)
1/2 cup (115 grams) unsalted butter (, softened to room temperature)
2 cups (240 grams) powdered sugar
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350°F. Spray a 9x13-inch baking pan with non-stick cooking spray and set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until well combined. Set aside.
  • In a separate large mixing bowl, whisk together the oil, eggs, brown sugar, granulated sugar, crushed pineapple, and vanilla extract until fully combined. Add the grated carrots and chopped walnuts to the wet ingredients and stir until well combined.
  • Add the dry ingredients to the wet ingredients and mix with a whisk or rubber spatula until just combined, making sure not to over mix the batter.
  • Pour the cake batter into the prepared baking pan and spread around into one even layer. Bake at 350°F for 35-45 minutes or until the top of the cake is set and a toothpick inserted into the center of the cake comes out clean. If needed, tent with foil for the last 15-20 minutes of baking to prevent excess browning on top of the cake.
  • Remove from the oven, transfer to a wire rack, and allow to cool completely in the pan.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a hand-held mixer, beat the cream cheese until smooth. Add the butter and mix for about 30 seconds-1 minute until well combined and smooth. Add the powdered sugar and vanilla extract and continue mixing until fully combined, scraping down the sides of the bowl as needed.
  • Using a knife or an offset spatula, top the cooled carrot cake with the cream cheese frosting. Slice into pieces, serve, and enjoy!

1 large egg (at room temperature)
2 large egg whites (at room temperature)
1 1/4 cups light brown sugar (lightly packed)
1/4 cup canola oil
2 teaspoons vanilla extract
2 1/2 cups grated carrots ((about 3 large or 4 small/medium))
1 cup crushed pineapple (drained)
1/2 cup shredded sweetened coconut
2/3 cup buttermilk (at room temperature)
1/2 cup walnuts (or pecans, toasted and roughly chopped )
1/4 cup raisins, (golden raisins, or dried cranberries (optional))
3 ounces reduced-fat cream cheese
2 tablespoons Greek yogurt
2 tablespoons unsalted butter (softened)
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract (optional)
1/8 teaspoon kosher salt
1 1/4 cups powdered sugar
toasted chopped pecans (or walnuts)

Steps:

  • Preheat the oven to 350 degrees F. Lightly spray a 10-inch springform pan with nonstick spray.
  • In a medium bowl, stir together the all-purpose flour, whole wheat flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • In the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl, beat together the egg, egg whites, brown sugar, canola oil, and vanilla extract on medium speed until well combined. Add the grated carrots and beat for 1 minute. Add the pineapple and shredded coconut and beat just until incorporated.
  • With a wooden spoon, stir in half of the flour mixture, just until the flour almost disappears. Stir in the buttermilk. Add the remaining flour mixture, continuing to stir in by hand, just until combined. Gently fold in the walnuts and raisins.
  • Pour the batter into the prepared baking pan. Bake for 40 to 45 minutes, until a toothpick inserted into the center comes out clean. (Check at the 30-minute mark-if the edges of the cake are browning too quickly, tent with foil, then return to the oven to finish baking.) Remove the cake from the oven and let cool completely in the pan. Run a dull knife, such as a butter knife, along the edge of the cake to loosen, then unmold it. Carefully transfer the cake to a serving plate.
  • Meanwhile, prepare the frosting: In a medium bowl, beat together the cream cheese, Greek yogurt, butter, vanilla extract, almond extract (if using), and salt at medium speed for 2 minutes, until fluffy and well combined. Reduce the mixer speed to low and gradually add the powdered sugar, increasing the speed to medium as you go. Beat for 1 to 2 minutes until well combined.
  • Spread the frosting evenly over top of the cooled cake. Sprinkle with toasted nuts and serve.

1 egg (lightly beaten)

½ cup granulated sugar (raw organic)
½ cup crushed pineapple
¾ cup carrots (finely grated shredded or blended)
1 8 oz package cream cheese
¼ cup butter (softened)
3-4 cups powdered sugar*

Steps:

  • Preheat oven to 350 degrees F.
  • Line two 6" round cake pans, or one 9x9" square pan with parchment paper and grease. Set aside.
  • In a small bowl, mix flours, baking soda, baking powder, salt and cinnamon. Set aside.
  • In a large bowl, mix together egg and apple sauce.
  • Add vanilla, sugar and crushed pineapple. Stir until combined.
  • Pour dry ingredients into wet and gently mix with a spatula until completely combined.
  • Stir in carrots until evenly distributed.
  • Pour batter into prepared pan(s).
  • Bake in preheated oven for 25-35 minutes or until the edges are slightly brown and a toothpick inserted into the center of the cake comes out clean.
  • Let sit in pan for 5-10 minutes. Use parchment paper to lift the cake out of the pan and set it on a rack until completely cool.
  • While cake is cooling, make the frosting:
  • Cream the butter and cream cheese until smooth.
  • Add vanilla and salt and beat until combined.
  • Add the powdered sugar and beat until creamy. (you may need to add more powdered sugar to reach your desired consistency if you want to pipe it onto a cake).
  • Spread on cake!
