These Chewy Chocolate Chip Oatmeal Cookies are moist and made light by swapping out most of the butter for applesauce which works great!

1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
2 tbsp unsalted butter (room temperature)
1/2 cup sugar
1/2 cup unpacked brown sugar
1 large egg
1/4 cup unsweetened apple sauce
1/2 tsp vanilla extract
2 cups quick oats
3/4 cup dark chocolate chips (I use Lily's sugar free)

Steps:

  • Preheat oven to 350°F; line two baking sheets with parchment paper or use a silpat.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.
  • In a large bowl, with a mixer, cream together the butter and the sugars on medium speed.
  • Add the egg, followed by the applesauce and vanilla extract.
  • Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain; stir in the chocolate chips.
  • Drop heaping tablespoonfuls (approx 1 tbsp each) of the dough onto prepared baking sheets, flattening each cookie slightly (I forgot to do this).
  • Bake for about 10-12 minutes, or until cookies become light brown at the edges.
  • Let cool on baking sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
  • Store in an airtight container so you don't eat them all in one sitting!

1 & 1/2 teaspoons baking powder
1 & 1/2 teaspoons cinnamon

1 large egg
1/2 cup honey
1/2 cup to 3/4 cup dark chocolate chips (divided)

Steps:

  • Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper or a silpat.
  • Pull out 2 medium bowls, one for dry ingredients, one for wet.
  • In one bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • Melt the butter in the other bowl. You don't have to melt it all the way, if there are a couple lumps it's okay. Let cool slightly.
  • Whisk in the vanilla, then the egg. Whisk in the honey.
  • Add the wet ingredients to the dry ingredients and use a wooden spoon to stir until it has just come together (don't overdo it).
  • Save out about half of the chocolate chips. Use a sharp knife to roughly chop the remaining chocolate, then fold it into the dough.
  • Refrigerate the dough for about 30 minutes, or freeze for about 15 minutes.
  • Use your hands to shape the dough into roughly 15 cookies (or 12 if you eat a lot of dough like me...)
  • Place on the prepared baking sheet about 2 inches apart.
  • Bake in the preheated oven for about 12-13 minutes, or until they have just started to brown on the edges.
  • Once you remove them from the oven, immediately press the remaining chocolate chips into the tops of the cookies.
  • Let cool on the pan for a few minutes before removing to a cooling rack.
  • Drink with lots of milk!

1 cup (100g) instant oats
¾ cup (90g) whole wheat flour or gluten-free* flour
1 ½ tsp baking powder
1 ½ tsp ground cinnamon
⅛ tsp salt
2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
1 large egg, room temperature
1 tsp vanilla extract
½ cup (120mL) honey or agave
¼ cup (40g) raisins ((see Notes!))

Steps:

  • Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the honey or agave. Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Chill the cookie dough for 30 minutes.
  • Preheat the oven to 325°F, and line a baking sheet with parchment paper or a silicone baking mat.

1/4 C. + 2 Tbsp. Honey
1 tsp. Vanilla extract
1 1/4 C. Raisins
Could also add nuts, dried cranberries, dried cherries, dried apples - I suppose any dried fruit you wish. I REALLY liked the jumbo raisins! YUMMY!!!!

Steps:

  • Stir flour, oats, Splenda, baking soda and cinnamon (mix well). Add applesauce, honey and vanilla. Still until the mix comes together and begins to stick. It will be a sticky batter. Add raisins and stir until well incorporated. Use teaspoons (or dinner spoons) to drop teaspoon size batter onto sprayed cookie sheet. Mash cookies down with the back of a serving spoon (sprayed lightly with cooking spray so it won't stick). I formed mine a little when I mashed them down so they would be somewhat round (not perfect of course). Cook for 6-9 minutes at 350 degrees until golden brown. I’m planning on freezing some of these for later use. They are WONDERFUL and easy to make!!! Bonus – you only dirty one bowl while making these :)

  • Using a standing mixer, cream butter and brown sugar together on medium/high speed until light and fluffy.
  • Scrape the sides of the bowl and then turn the mixer on low speed and slowly add the maple syrup to the butter and sugar. Beat on medium/high until light and fluffy.
  • Add egg and continue mixing. Scrape the sides of the bowl, add vanilla, and mix until light and fluffy.

1/4 tsp salt, optional
1 tsp vanilla, optional
1/2 cup dairy-free chocolate chips, optional (85 g)

Steps:

  • Pre-heat oven to 350 degrees.
  • Place the mashed bananas in a bowl and stir in the applesauce to combine.
  • Add the oats, powdered peanut butter and salt. Mix well.
  • Prepare a baking tray with parchment paper or a silicone baking mat, or very lightly spray with non-stick cooking spay.
  • Drop 12 spoonfuls of the dough onto the baking tray, pressing down a bit to form cookies.
  • Bake for 16 minutes until golden brown, do not overcook. If they seem slightly underdone when you take them out, that's about right.
  • Let cool on the pan.

1/4 cup water
3 egg whites
1 tablespoon molasses
1 cup sugar
1 cup packed brown sugar
1 1/2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 cup nonfat dry milk powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
2 1/2 cups quick-cooking oats

Steps:

  • In a medium bowl, combine the raisins, water, egg whites, and molasses.
  • Stir until well mixed.
  • Add the sugar, brown sugar, and vanilla.
  • Stir to combine.
  • In a small bowl, combine the flour, nonfat dry milk powder, baking powder, and cinnamon.
  • Mix well.
  • Slowly add the flour mixture to the raisin mixture.
  • Stir in oats.
  • On a baking sheet coated with nonstick cooking spray, drop batter by teaspoonfuls.
  • Leave 2 inches between each cookie. They do spread a little bit.
  • Bake at 350° for 8-10 minutes or until edges are light golden-brown (I baked mine for 7.5 minutes to keep them very chewy! Yum!).
  • Remove cookies from oven when they are done.
  • Place cookies on a wire rack to allow them to cool.
  • Enjoy without guilt!

½ teaspoon of pumpkin pie spice
1 Tablespoon of psyllium husks
1 cup of old fashioned oats, raw
½ teaspoon of baking powder

Steps:

  • Preheat oven to 375 degrees.
  • Process everything in your food processor, until you have a coarse batter.
  • You can process apples, water, and beans first.
  • Then add the rest of the ingredients and process again.
  • Using a spoon, place cookies on parchment paper on baking sheet.
