HEALTHY GINGERBREAD PANCAKES



Healthy Gingerbread Pancakes image

These yummy pancakes are perfect for the holidays, Christmas morning breakfast, or any chilly winter morning! They're moist and fluffy with lots of rich spice flavor. They remind me of eating my favorite gingerbread cookies-just as a healthy breakfast instead! Leftover pancakes will keep for at least 5 days (if not longer!) if stored in an airtight container in the refrigerator, and they freeze really well too!

Number Of Ingredients 18

1 cup + 2 tbsp (135g) white whole wheat flour or gluten-free* flour
2 tsp ground ginger
¼ tsp ground cinnamon
¼ tsp ground allspice
⅛ tsp ground nutmeg
⅛ tsp ground cloves
1 tsp baking soda
½ tsp baking powder
¼ tsp salt
1 tsp unsalted butter or coconut oil, melted
1 large egg white, room temperature
1 ½ tsp vanilla extract
¼ cup (60g) plain nonfat Greek yogurt
1 ½ tbsp (22mL) molasses
1 tbsp (15mL) plain white vinegar
¼ cup (60mL) nonfat milk
6 tbsp (90mL) water
optional: almond drizzle, for serving ((see Notes - highly recommended!))

Steps:

  • Whisk together the flour, ginger, cinnamon, allspice, nutmeg, cloves, baking soda, baking powder, and salt in a medium bowl. In a separate bowl, whisk together the butter, egg white, and vanilla. Stir in the Greek yogurt, stirring until no large lumps remain. Stir in the molasses and vinegar. Stir in the milk. Alternate between adding the flour mixture and the water, beginning and ending with the flour, stirring just until incorporated. (For best results, add the flour mixture in 3 equal parts.)
  • Lightly coat a large nonstick pan or griddle with nonstick cooking spray, and briefly preheat over low heat.
  • Using a scant 2 tablespoons of batter for each pancake, dollop the batter onto the hot pan, and spread into a circular shape using a spatula or back of a spoon (if desired). Let the pancakes cook for 2-3 minutes, or until a slight skin starts to form around the edges. Slide a spatula underneath, and flip. Continue to cook for another 1-2 minutes or until cooked through. Re-coat the pan with nonstick cooking spray, and repeat with the remaining batter.

1 tablespoon sugar
1 teaspoon baking powder
1 teaspoon ground ginger

1/2 teaspoon salt
Pinch ground cloves
1 cup buttermilk
1 egg
2 tablespoons molasses
1 tablespoon vegetable oil
Maple syrup and whipped cream, optional

Steps:

  • In a bowl, combine the first eight ingredients. Combine buttermilk, egg, molasses and oil; add to dry ingredients and mix well. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubble form on top of pancake. Cook until second side is golden brown. Serve with syrup and whipped cream if desired.

1/2 cup oat bran
1/2 cup white whole wheat flour or 1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs or 1/2 cup egg substitute
7 tablespoons skim milk
3 tablespoons molasses
2 tablespoons unsweetened applesauce
4 teaspoons brown sugar
2 -3 tablespoons chopped pecans (optional)
3 -4 tablespoons chopped apples or 2 -3 tablespoons cranberries
1 1/4 teaspoons ginger
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon orange rind

Steps:

  • Mix together dry ingredients. (You can do this the night before).
  • In a separate bowl, mix the wet ingredients and brown sugar then add to the dry, mixing until just moist, folding in pecans and cranberries.
  • If using cranberries, prepare as follows: Thaw if frozen. Cut in halves and place in bowl with sprinkle of white sugar. Toss in sugar then fold into pancake batter with pecans. (This cuts the tartness).
  • Let stand for five minutes **Don't skip this step.
  • Heat GREASED griddle to 350 while the pancake batter is standing.
  • Pour pancake batter onto griddle, and lightly spread outwards with a spatchula. Due to the molasses, this batter can thicken quite a bit.
  • Flip when bubbles form on top of pancake and edges are dry. Enjoy with maple syrup, caramel sauce, pear sauce, or applesauce.

LOW FAT GINGERBREAD PANCAKES

150g self-raising flour
½ tsp baking powder
1 tsp ground ginger
1 tsp cinnamon
2 tsp golden caster sugar
1 egg , beaten
½ tbsp maple syrup , plus extra to serve
200ml full-fat milk or semi-skimmed milk
vegetable oil , for frying
100g pitted dates , chopped, to serve
100ml crème fraîche , to serve

Steps:

  • Put the flour, baking powder, ginger, cinnamon and sugar in a large bowl with a pinch of salt. Combine the egg, maple syrup and milk in a jug. Gradually add to the dry ingredients, whisking until a smooth, silky batter forms.
  • Heat a drizzle of oil in a large, non-stick pan over a medium heat and ladle 2-3 small rounds into the pan. Cook for 1-2 mins until bubbles start to appear on the surface, then flip over and cook for a further 1 min until fluffy. Do this in batches until you have 10 pancakes.
  • Serve in a stack, with extra maple syrup, a blob of crème fraîche and dates scattered over.

2 tablespoons dark brown sugar
1 1/2 teaspoons baking powder

  • Cook until the batter bubbles on the surface and browns on the bottom, a minute or two, then carefully flip. Cook until the batter is completely cooked through and the pancakes are slightly dark brown. Repeat until all the batter is used. Serve pancakes as you make them or keep them warm as you cook them by setting them on a baking sheet in a 250-degree oven.
