1 pound boneless skinless chicken breasts
1/2 cup reduced-sodium chicken broth
2 tablespoons lime juice
2 teaspoons chili powder
1-1/2 cups frozen petite corn (about 5 ounces), thawed
1-1/2 cups chunky salsa
1-1/2 cups finely shredded cheddar cheese
1 medium sweet red pepper, finely chopped
4 green onions, thinly sliced
Baked tortilla chip scoops
Minced fresh cilantro

Steps:

  • Place chicken in a 6-qt. electric pressure cooker; add broth, lime juice and chili powder. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 7 minutes. Quick-release pressure. A thermometer inserted in chicken should read at least 165°. , Remove chicken; discard cooking juices. Shred chicken with 2 forks; return to pressure cooker. Select saute setting and adjust for low heat. Add corn and salsa; cook and stir until heated through, about 5 minutes. , Transfer to a large bowl; stir in cheese, red pepper and green onions. Serve with tortilla scoops; sprinkle with cilantro.

3/4 cup Food Network Kitchen™ Inspirations Mexican Style Cilantro Lime Vinaigrette
4 slices bacon
Vegetable oil, for oiling the grill grates
Kosher salt and freshly ground black pepper
1/4 cup chipotle mayonnaise (or other spicy mayonnaise)
4 panini rolls, split
1 avocado, sliced
1 tomato, sliced
1 cup loosely packed fresh cilantro leaves
4 small radishes, thinly sliced

Steps:

  • Combine the chicken breasts and 1/2 cup of the Mexican Style Cilantro Lime Vinaigrette in a resealable plastic bag. Let marinate at room temperature for 15 minutes.
  • Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 5 minutes per side. Drain on paper towels.
  • Preheat an outdoor grill or grill pan to medium-high heat.
  • Oil the grills grate or grill pan. Remove the chicken from the marinade. Sprinkle with salt and pepper. Grill the chicken, turning once, until cooked through, about 4 minutes per side, depending on thickness.
  • Spread the mayonnaise on the cut surfaces of the rolls. Slice the chicken and add to the rolls. Break the bacon in half and place on top of the chicken. 2 small onions
1 large lime
2 tablespoons canola oil
1 -2 small jalapeno, seeded and sliced
1 piece fresh gingerroot, peeled and thinly sliced
2 tablespoons fresh cilantro, chopped
2 tablespoons reduced sodium soy sauce
1 -2 teaspoon sugar substitute (Splenda)

Steps:

  • Cut each chicken breast into 8 pieces.
  • Cut each onion into 8 wedges.
  • Remove three strips of peel from the lime with vegetable peeler and cut into very fine shreds.
  • Juice lime and set aside 2 tablespoons of juice.
  • Preheat a wok or large skillet and add oil to pan.
  • Once oil is heated (about 30 seconds) add chicken, jalapeno and gingerroot.
  • Stir-fry over medium-high heat until chicken is no longer pink (about 3-5 minutes).

1 pinch monosodium glutamate (such as Ac'cent®), or to taste

2 cups vegetable broth
1 cup couscous

My husband has recently declared my kitchen a cilantro-free zone :( so unfortunately I haven't yet tried this dish, but I am posting it because it sounds good to me and thought it might appeal to others as well. The recipe comes from Ainsley Harriott, a British chef, and he cautions not to marinate the chicken longer than two hours as the lime juice will break down the chicken to the point that it will fall apart. Preparation time does not include marinating time.

2 teaspoons black peppercorns, coarsely ground

1 tablespoon sunflower oil
