LOW-FAT GARLIC-LEMON AIOLI



Low-fat Garlic-Lemon Aioli image

This makes a nice sandwich spread, especially for turkey. Also works well for a veggie dip. (1 WW point per tablespoon) NOTE - Cook time is chilling time

1 clove(s) garlic, mashed or grated
1 pinch(es) salt
1/4 cup(s) low-fat mayonnaise
1 teaspoon(s) lemon juice
1/2 - 1 teaspoon(s) lemon zest
1 teaspoon(s) mustard, dijon or your favorite

Steps:

  • Sprinkle salt on mashed garlic. Let stand for a few minutes.
  • Mix the mayonnaise, lemon juice, lemon zest and mustard into the garlic. Stir to combine.
  • Chill for 1/2 hour or more.

¾ teaspoon salt

Steps:

  • Mix mayonnaise, garlic, lemon juice, salt, and pepper in a bowl. Cover and refrigerate for at least 30 minutes before serving.

2 large unpeeled garlic cloves
1 tablespoon olive oil
10 ounces firm silken tofu
2 tablespoons minced onions
1 -2 tablespoon lemon juice
1 tablespoon Dijon mustard

Steps:

  • Toss garlic with ¼ teaspoon olive oil. Roast at 425 until tender, 10-12 minutes. Slip off skin.
  • In food processor, combine roasted garlic with remaining ingredients until smooth.

small pinch saffron strands
3 garlic cloves , crushed
2 egg yolks
1 tbsp Dijon mustard
300ml olive oil

Steps:

  • In a small bowl pour 1 tbsp of boiling water over the saffron and set aside. Put the garlic, egg yolks and mustard into a food processor or blender. Blitz into a paste and very slowly dribble in the olive oil to make a thick mayonnaise-style sauce. When everything's come together add the saffron, saffron water and lemon juice, then season to taste. The aïoli will keep covered in the fridge for up to 2 days.

1/2 teaspoon salt
12 sun-dried tomatoes, chopped
2 cups nonfat cottage cheese
2/3 cup plain nonfat yogurt
1/2 cup low-fat mayonnaise

Steps:

  • Sprinkle the garlic with salt and crush.
  • Add sun-dried tomatoes to the garlic and mince into coarse paste.
  • Puree the cottage cheese in food processor.
  • Add yogurt, mayo and garlic/tomato paste and blend well.
  • Season with salt to taste.

fresh vegetables, for dipping

Steps:
