LOW-CARB TACO SALAD RECIPE
This low-carb taco salad recipe is healthy, easy to make, and it's ready in less than 30 minutes. It's packed with delicious southwest flavors!

Steps:
- Add the olive oil, beef, and spices to a skillet over medium-high heat. Cook, using a spoon to break the meat up into smaller pieces (and stir often), for around 7 minutes or until it's cooked through.
- Meanwhile, prep your other salad ingredients and add them to a large salad bowl.
- Add the dressing ingredients to a small bowl and whisk them together.
- Once the ground beef is cooked, sprinkle it over the salad. Add dressing and toss. Serve immediately.

Steps:
- Brown the hamburger; drain off the fat. Stir in the seasoning mix. Allow to cool.
- Place lettuce, tomato, avocado and cheese in a large bowl.
- Blend the salsa and sour cream together (I use a food processor as we like ours smooth).
- Add ground beef to the bowl.
- Toss salad with desired amount of dressing and serve.

- Chop or tear lettuce.
- Cut tomatoes (or use cherry or grape) and onions.
- Toss with lettuce.
- Saute pepper, onions, and garlic in water.
- Add beef and cook until almost done.
- Add beans with juice.
- Add spices and heat through.
- Mix together salsa and fat free sour cream in a separate bowl.
- Cut tortillas into triangles.
- Spray with Pam on one side and sprinkle with a little salt or spices.
- Bake in 400 degree oven until crisp.
- Turn and brown on other side.
- Arrange salad on plate.
- Top with the meat and bean mixture.
- Arrange chips around the sides.
- Top with the salsa and sour cream mixture.

Steps:
- For the crust, beat the cream cheese and eggs until smooth.
- Add the cream and seasoning.
- Grease a 9"x13" baking dish; spread the cheese over the bottom.
- Pour in the egg mixture as evenly as possible.
- Bake at 375ºF, 25-30 minutes.
- Let stand 5 minutes before adding the topping.
- For the topping, brown the hamburger; drain fat.
- Stir in the seasoning, tomato sauce and chiles.
- Spread over the crust.
- Top with cheese.
- Reduce oven to 350ºF and bake another 20 minutes or so until hot and bubbly.
- Serve with the toppings of your choice (add additional carbs).

- Cook the Ground turkey in a stir-fry pan with the taco seasoning mix (make sure to figure out how much seasoning to use depending on how much meat you are actually cooking).
- Gently mix up the lettuce, tomato, salsa, honey mustard, dressing, and cheese together. You can add cayenne pepper into the mix, the more you put the hotter it will get -- pretty self explanatory haha.
