Cheesy soft rolls of pizza dough stuffed with tender chunks of chicken, sweet BBQ sauce, chopped red onion and salty bacon bits!

1 pound pizza dough (fresh, frozen or refrigerated, thawed)
½ cup BBQ sauce ((sweet) plus extra for serving)
1 ¼ cups part-skim mozzarella cheese (shredded, divided)
1 cup cooked chicken (finely chopped (rotisserie, poached, etc))
3 tablespoons red onion (finely chopped)
¼ teaspoon crushed red pepper flakes (optional)
3 slices bacon (cooked crisp, drained and finely chopped (optional))
fresh parsley leaves (chopped for garnish)
1 teaspoon vegetable oil (for greasing the pan, plus more for oiling the bowl)

Steps:

  • If frozen, follow instructions for thawing your pizza dough. If using refrigerated dough, place in a well oiled bowl, cover and allow to come to room temperature, 1 to 2 hours.
  • Lightly oil a large 9 or 10-inch round skillet or baking pan. Cast iron skillets work well for pizza. Set aside.
  • Preheat oven to 400°F. Lightly flour a clean work surface and roll out the room temperature pizza dough to an 18x10-inch rectangle. If the dough springs back and won't hold it's shape, let it rest an additional 5 minutes, then roll again. Spread the BBQ sauce over the surface of the dough leaving a 1/2-inch border all around the edges.
  • Sprinkle 1 cup of the mozzarella cheese evenly across the surface of the dough, then top with the chicken, onion, red pepper flakes and bacon, if using.
  • Starting on the long side, roll the dough away from you into a tight cylinder, tucking and pulling just a bit as you go. Pinch the seams together to seal. Cut into 8 equal slices and place cut side down in the prepared pan. When cutting try using dental floss instead of a knife. It works amazingly well!
  • Bake for 25 minutes in a preheated 400°F oven. Sprinkle the remaining mozzarella cheese on top and continue baking for another 5 minutes or until the cheese is melted.
  • Garnish with fresh parsley and serve immediately with additional BBQ sauce for dipping.

12 pepperoni slices
8 slices part-skim mozzarella cheese

Steps:

  • Flatten chicken to 1/4-in. thickness. Place three slices of pepperoni and one slice of cheese on each. Roll up tightly; secure with toothpicks. Place in a greased 11x7-in. baking dish. Spoon pizza sauce over top. , Cover and bake at 350° for 35-40 minutes or until chicken is no longer pink. Uncover; top with the remaining cheese. Bake 5 minutes longer or until cheese is melted. If desired, broil a minute or two to brown cheese slightly.

2 pounds of chicken breast or 6 chicken breast halves
salt
pepper
1 teaspoon paprika
2 tablespoons of tomato sauce
fresh basil leaves
½ cup mozzarella, shredded
1 yellow bell pepper, chopped
5 ounces of gouda
3.5 ounces of salami, thinly sliced
7 ounces of pizza dough
1 egg, whisked

Steps:

  • Grab 1 chicken breast half and cover it with plastic foil. Level it with a rolling pin. Repeat for all chicken breast halves.
  • Spread a large plastic foil on your wooden board. Lay 3 chicken breast halves on the side closest to you and the other 3 on the opposite side, slightly overlapping with the other.
  • Season the chicken with salt, pepper, and paprika. Evenly spread the tomato sauce over it.
  • Add the fresh basil leaves, mozzarella, and yellow bell pepper. Add the gouda cheese, salami, and some more mozzarella if you prefer.
  • Start from the end closest to you and carefully roll towards the opposite end so you don't lose any of the filling.
  • Preheat the oven to 365 degrees F/185 degrees C.
  • Lay the pizza dough on your wooden board and add the chicken roll on the side closest to you.
  • Cover the chicken with the dough and start rolling until the chicken is completely covered.
  • Line a baking sheet with parchment paper and place the chicken over it. Coat it with whisked egg.
  • Superficially score the dough with a knife in a criss-cross pattern.
  • Slide the tray into the oven for the next 50 minutes.

4 boneless skinless chicken breasts (about 1.5-2lbs)
4 slices provolone cheese
4 slices mozzarella cheese
4 tablespoons tomato paste
24 pepperoni slices
1/2 cup Italian breadcrumbs
1 tablespoon olive oil
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Pound each chicken breast with a meat mallet between layers of plastic wrap until slightly more than 1/8" thick.
  • Spread 1 tablespoon of tomato paste over one side of each flattened chicken breast. Cover tomato paste in pepperoni slices, about 6 per chicken breast. Top with a slice of provolone.
  • Starting at one end, tightly roll each chicken breast and secure with a toothpick. Coat each one lightly in breadcrumbs.
  • Heat olive oil in a skillet over medium high heat. Add chicken rolls and brown, turning once, about 3-4 minutes each side.
  • Transfer browned rolls to a baking dish and top each one with a slice of mozzarella and 1/2 tablespoon of parmesan cheese.
  • Bake for 10-12 minutes or until cooked throughout (170 degrees.).

6 boneless, skinless chicken breasts
Two 8-ounce packages fresh mozzarella
Kosher salt and freshly ground black pepper
2 cups fresh baby spinach
1/2 pound sweet Italian sausage, removed from its casing, cooked and cooled
1/2 cup julienned oil-packed sun-dried tomatoes
One 15.5-ounce can pizza sauce
Grated Parmesan, for garnish
Fresh basil leaves, for garnish

Steps:

  • Position an oven rack in the top third of the oven and preheat to 400 degrees F. Coat a 9-by-13-inch baking dish with cooking spray.
  • Lay a chicken breast on a cutting board with the tapered end pointing at you. Using a sharp knife held horizontally to your work surface, begin slicing the chicken breast in half, starting at the thicker end of the breast and slowly working towards you, leaving an outer edge connected so you can open it like a book. Butterfly all the breasts in this manner and set in the fridge until ready to roll.
  • Cut six 1/4-inch-thick slices from the mozzarella, then finely chop the rest.
  • To build the pizza rolls: Open the butterflied chicken breasts so they lay flat on your cutting board. Sprinkle the chicken evenly with salt and pepper. Top with some spinach leaves, sausage, sun-dried tomatoes and chopped mozzarella. Roll the chicken around the filling and tuck into itself so that the seam is facing down. Place the rolled chicken in the prepared baking dish, seam-side down. Sprinkle with salt and pepper. Repeat with the remaining chicken and fillings.
  • Bake the chicken until the internal temperature reaches 165 degrees F, 20 to 25 minutes. Meanwhile, heat up the pizza sauce. About 3 minutes before the chicken is done, top each piece with a slice of mozzarella.
  • Spoon the warm pizza sauce over the chicken and garnish with the Parmesan and basil.

All-purpose flour, for dusting
Olive oil, for oiling dough
Kosher salt
Marinara Sauce, recipe follows
1/2 cup grated Parmesan
10 slices mozzarella cheese
2 tablespoons jarred pesto
8 slices pepperoni
1/2 cup chopped olives
1/4 cup diced green bell peppers
4 pieces string cheese
1/2 teaspoon active dry yeast
2 cups all-purpose flour
1/2 teaspoon kosher salt
Scant 1/4 cup olive oil (a little less than 1/4 cup), plus more for the bowl
Olive oil, for oiling the pan
3 to 4 cloves garlic, minced
1 small to medium onion, chopped
1/2 cup white wine (or chicken broth)
Three 15-ounce cans crushed tomatoes
Kosher salt and freshly ground black pepper
Pinch sugar
Chopped fresh parsley, as needed
Chopped fresh basil, as needed

Steps:

  • Roll out the Pizza Dough on a floured surface until it's a large rectangle about 8 inches by 12 inches. Smear with a little olive oil and sprinkle with salt. Spread the surface with about 1/2 cup of the Marinara Sauce, then sprinkle with the Parmesan. Lay the mozzarella slices over the sauce. Smear the pesto over the cheese. Lay on the pepperoni, olives and bell peppers.
  • Unwrap the string cheese and lay it in a line at the top of the dough. Roll it towards you so that the string cheese ends up in the middle of the roll of dough; pinch the seam closed. Slice into 1-inch pieces and place them in a 10-inch cast-iron skillet. Allow the rolls to rise for 20 minutes.
  • Preheat the oven to 400 degrees F.
  • Bake until the bread is golden and the fillings are bubbly, about 15 minutes. Serve immediately with warm Marinara Sauce.
  • Sprinkle the yeast over 3/4 cup warm (not lukewarm) water in a bowl and leave to sit for a bit.
  • In a mixer, add the flour and salt and, with the mixer running on low speed (with the paddle attachment), slowly pour in the olive oil and keep going until it's mixed through. Next, pour in the yeast/water mixture and mix until just combined.
  • Coat a separate mixing bowl with a light drizzle of olive oil, tip the dough in and form it into a ball. Toss to coat the dough ball in the olive oil, then cover the bowl tightly with plastic wrap and allow the dough to rise for at least 1 hour.
  • Add a tablespoon or so of olive oil to a hot pan over medium-high heat, throw in the garlic and onion and give them a stir. Add the wine (or chicken broth), whisking to deglaze the bottom of the skillet. Cook until the liquid reduces by half.
  • Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Reduce the heat to low and simmer for 30 minutes.
  • Toward the end of the cooking process, chop up fresh parsley and basil and add it to the sauce to taste, stirring to combine.

2 cloves garlic, minced

½ cup chopped fresh cilantro
½ cup ricotta cheese
¼ cup grated Parmesan cheese

Steps:

  • Place the chicken breast in a saucepan with enough water to cover. Bring to a boil, and cook until no longer pink, about 20 minutes. Drain and cool slightly, then cut into strips.

½ cup BBQ sauce
1 ½ cups rotisserie chicken, shredded
½ g red onion, finely chopped
1 cup shredded cheese

Steps:

  • Preheat oven to 425°F (220°C).
  • Roll out the pizza crust into a rectangle.
  • Spread on the BBQ sauce. Top with chicken, onion, cheese, and parsley.
  • Roll it up longways, and cut into slices. Bake face-up for 15 minutes.
  • Enjoy!

1 chicken breast (and any vegetables of your choosing)
1 egg, beaten
1 (1/4 ounce) envelope active dry yeast
1 teaspoon sugar
1 teaspoon salt
1 1/2 cups water (105~ to 115 degrees)
4 cups all-purpose flour, unsifted

Steps:

  • Prepare pizza dough (see recipe following). While dough rises, prepare baked chicken and vegetables.
  • After dough has risen and chicken has finished baking, turn dough onto a lightly floured board.
  • Cut off a small piece of dough the size of a tennis ball to use for a top decoration.
  • Form remaining dough into a ball and roll out to a 12 x 17-inch rectangle. Place chicken, breast side down, in the middle of the dough.
  • Arrange vegetables around chicken.
  • Wrap sides and ends of dough over chicken.
  • Turn right side up and place on a baking sheet. Brush surface with beaten egg.
  • Roll out reserved piece of dough.
  • Using a cookie cutter, cut out a design and place on top of dough wrapped chicken.
  • Brush with egg.
  • Bake in pre- heated 425 degrees oven for 30 minutes, until golden brown.
  • To serve, let everyone tear off the bread, then cut up the chicken.
  • PIZZA DOUGH: Dissolve yeast, sugar and salt in warm water.
  • In large bowl, combine 2 cups of flour and yeast mixture; beat with an electric mixer several minutes.
  • Stir in enough additional flour to make a stiff dough.
  • Turn out on a floured board and knead 5 minutes until smooth and elastic. Place dough in a lightly oiled bowl; turn to coat surface of dough with oil.
  • Cover with a damp cloth and let rise in a warm place until double in bulk (about 2 hours).

1 tube (8 ounces) refrigerated crescent rolls
2 teaspoons sesame seeds
1/4 cup mayonnaise
1 teaspoon dried basil
1/4 teaspoon grated lemon zest
1 cup shredded Monterey Jack cheese
4 ounces sliced deli chicken, cut into 1-inch strips
6 bacon strips, cooked and crumbled
2 plum tomatoes, thinly sliced
1/2 cup shredded Swiss cheese

Steps:

  • Preheat oven to 375°. Unroll crescent dough and separate into eight triangles; arrange in a single layer on a greased 12-in. pizza pan. Press onto pan to form a crust and seal seams; sprinkle with sesame seeds. Bake 8-10 minutes or until edge is lightly browned., In a small bowl, mix mayonnaise, basil and lemon zest. Spread over crust; top with Monterey Jack cheese, chicken, bacon, tomatoes and Swiss cheese. Bake 8-12 minutes or until crust is golden and cheese is melted.

4 boneless skinless chicken breast halves
12 pepperoni slices
8 slices mozzarella cheese, divided
1 (15 ounce) can pizza sauce
minced fresh parsley (optional)

Steps:

  • Flatten chicken to 1/4 inch thickness.
  • Place 3 slices of pepperoni and 1 slice of cheese on each.
  • Roll up tightly and secure with toothpicks.
  • Place in greased 11 inch x 7 inch x 2 inch baking dish.
  • Spoon pizza sauce over rollups.
  • Cover and bake at 350* for 35 to 40 minutes.
  • Uncover, top with remaining cheese.
  • Bake 5- 10 minutes longer or until cheese is melted.

These pizza rolls are made with the dough made with Recipe #387518. I've given a couple different fillings, however the recipe can easily be modified to fit your family's taste. Great for lunches!

1 lb refrigerated bread dough (No-Knead Flatbreads - Master Recipe (Pizza, Naan, Focaccia), grapefruit size piece)
1/2 cup pizza sauce
1 1/2 cups mozzarella cheese, shredded
4 ounces pepperoni, sliced (to taste)
1/2 cup parmesan cheese, grated
1/2 cup barbecue sauce
1 cup diced chicken breast, cooked
1 cup mozzarella cheese, shredded
1/2 cup Fontina cheese, shredded
pickeled jalapeno pepper (to taste)
2 tablespoons cilantro, chopped (to taste)
1/2 cup pizza sauce
1 (8 ounce) can pineapple tidbits, drained
1 1/2 cups mozzarella cheese, shredded
4 ounces deli ham, sliced

Steps:

  • Use the refrigerated pre-mixed dough for No-Knead Flatbreads Recipe #387518.
  • Prepare 2 large baking sheet pans with parchment or Silpats, set aside.
  • Preheat oven to 400 degrees F.
  • Remove the Olive Oil Flatbread dough (Recipe #387518) from the refrigerator. Lighly dust the surface with flour and cut off a 1 pound (grapefruit size) piece.
  • With lightly floured hands quickly shape dough into a ball by streching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter turn as you go.
  • On a lightly floured board, flatten the dough, with hands and rolling pin, into a 1/4 inch thick rectangle, dusting with minimal flour if necessary to keep dough from sticking to the rolling pin. If difficulty is experienced in rolling out the dough, allow it to rest for a few minutes. I've found that pulling the dough with my hands works best.
  • Spread the sauce on the dough, then cheese and top with meat, leaving some of the cheese exposed so that it can help hold the roll together as it bakes.
  • Starting with the long end roll the dough into a log.
  • NOTE: Cut only the number of pieces you want to bake. The rest can be wrapped and stored in the refrigerator for up to 5 days, or can be frozen for up to 2 weeks.
  • Using kitchen shears, cut the dough into 1/2 inch pieces.
  • Place them on the prepared sheet, leaving plenty of space for them to expand when they bake.
  • Bake for 15-18 minutes, or until golden brown and the cheese has melted and caramelized a bit.
