SPAGHETTI SQUASH PIE
This is my " altered" spaghetti pie recipe being allergic to wheat I often use spaghetti squash in place of noodles and as a diabetic I make other substitutions to lower fat and calories.

Steps:
- Spray 9" pie pan with non stick spray.
- Mix squash noodles with egg whites and parmesan cheese press into pan forming crust.
- Spread with yogurt.
- Cook ground beef in skillet with onions, green peppers, garlic and any of the spices and or herbs that you have chosen. When meat is brown, add tomatoes and tomato sauce.
- Add meat mixture to noodle crust and bake at 350 degrees for 20 minutes.

- 1. Preheat oven to 350 degrees
- 2. Stir everything together, pour into glass pie plate and bake until set. (appx 10 to 20 minutes. I am high altitude, so, sometimes it takes about 25 minutes. When I lived at sea level, it took about 10 minutes. So, keep an eye on it.)
- 3. Variations: Pumpkin Pie Taste: Put cooked spaghetti squash and other ingredients into blender and blend until smooth. Add 1 teaspoon of vanilla and 2 teaspoons of pumpkin pie spice (instead of 1/2 tsp vanilla and 1 1/2 teaspoon coconut extracts) 2 teaspoons maple flavoring (instead of 1 1/2 teaspoons of coconut) 2 teaspoons of banana extract instead of coconut
- 4. TO COOK SPAGHETTI SQUASH: Cut squash in half, remove seeds. Put cut side down on plate and cover with plastic wrap. Cook 5 to 15 minutes. Cooking time depends on wattage of microwave. I have a 1200 watt and it takes about 5 minutes. But it took 15 minutes or longer with my old one. It should be fork tender. When it is thoroughly cooked, take a fork and scrape out all of the 'spaghetti' blot excess water from spaghetti and continue as directed in the above recipe.
SPAGHETTI SQUASH PIE
I got a bag of frozen squash out to make what I thought would be butternut squash pie. But it turned to be speghetti squash so I decided why not. I created spaghetti pie. My 4 children and husband loved it Oh and so did I.. The taste is a lot like pumpkin but it is a very different texture. prep time does not include making pie crust. or cooking spaghetti squash.

Steps:
- Crack eggs into a large bowl.
- Add cream, and spices.
- Whip with a hand whisp.
- Stir in squash and salt
- Pour in un-bake pie crust.
- Back at 350 degrees about 60 to 75 minutes until a butter knive inserted about 1 inch from center comes out clean.
- Serve cooled with whipped cream if you like.

This is a very good and comes from George Stella's Low Carb and Loving it. I did change the way to cook the squash as it is much faster and less clean up.

Steps:
- Slice spaghetti squash in half lengthwise, scoop out seeds with a spoon; place squash cut side down in microwave safe dish with 1/3 cup water; Cook about 15 minutes or until tender when tested with a fork.
- Scoop out the cooked squash from its skin, discard skin; Use a fork to fluff and separate the squash into"spaghetti"- like strands; you can use your hands; Reserve the cooked squash and heat in Microwave just before serving.
- Melt half the butter in a medium saucepan over medium-high heat; add cream and reduce for about 2 minutes,then add garlic and cheese, WHISK QUICKLY, heating through;Stir in the rest of the butter and parsley.
- Place spaghetti squash in a large serving bowl, and, pour Alfredo sauce over squash, Garnish with basil and tomatoes, serve and enjoy.
LOW-CARB SPAGHETTI SQUASH CASSEROLE

- Place the spaghetti squash in a large pot of water (it should float) and bring to a boil; lower heat, cover and boil gently for 50 minutes.
- Another option is to bake the squash first-- cut it lengthwise and place the halves skin-side down in a baking dish with an inch of water; cover the dish with foil and bake at 350º F for about 45 minutes, or until meat is tender.
- While squash is cooking, peel and slice the carrots, celery, onion and bell pepper.
- Heat olive oil in a skillet and add the onion and carrot, with some water to prevent sticking. Sauté over medium heat for 5 minutes. Add remaining vegetables with some red pepper flakes and a dash of salt, if desired. Sauté, stirring frequently, till vegetables are barely tender, about 10 minutes.
- Pre-heat oven (if you are cooking squash on top of the stove)to 350 degrees F.
- Add crushed tomatoes, basil and oregano to taste, and a sprinkle of ground allspice. Squeeze in 2-5 cloves of garlic. Simmer uncovered for 15 minutes. Meanwhile, grate the mozzarella and Parmesan.
- Remove squash from pot or oven and allow to cool until you can handle it. If it is whole, cut it in half lengthwise, then remove seeds with a spoon and squeeze any excess water out of meat.
- Remove meat and break it up into strands with a fork or potato masher. Mix squash well with vegetables and put half in the bottom of a large baking dish. Top with half the cheeses, the rest of the squash, and then the rest of the cheeses.
- Bake for 30 minutes or until cheese is bubbly and slightly browned. Let cool 15-20 minutes before serving.
