LOWER CARB RHUBARB-PEACH OR NECTARINE CRISP
This feeds a crowd. Adjust as necessary. We like a lot of tart/sweet fruit and a little bit of crisp. I use CarbQuik low carb mix and oats to keep the carb count down in the crust, and sweeten the fruit with Splenda. I get the CarbQuik online through netrition.com. The carb count on the mix isn't figured into this recipe, but an average biscuit nets about 2 carbs and there's less than the equivalent of one biscuit's worth of mix in each serving. Most of your carbs are from the nectarines or peaches and the oats.

Steps:
- Cut the rhubarb into one inch pieces.
- Roughly chop the fruit; peel the peaches, if you use those instead of nectarines.
- Mix the rhubarb and stone fruit with the Splenda, tapioca, lemon juice and salt, and let stand for one - three hours at room temperature.
- Mix the margarine, oats, CarbQuik or other mix of choice, salt and splenda.
- Turn the fruit into a greased 9x13x2 inch pan and crumble the topping over it.
- Bake 375 degrees for about 70 minutes until fruit bubbles in the center and top nicely browned.
- Top with sugar-free ice cream or whipped cream.
- Note: this just fits in my baking pan; stick some foil under the pan if it looks like this will bubble over.

- Simmer rhubarb, berries, lemon zest, lemon juice and sweetener in a saucepan over medium heat and cook for 8-10 minutes until the rhubarb starts to breakdown. Stir mixture to combine and set aside to cool slightly. Taste the mixture and add additional sweetener if desired. It should still retain a little tartness and not be overly sweet because the topping is also sweet.
- To make the crumble, melt the butter until it goes a light golden color. Add the sweetener and simmer gently for about 2 minutes. Remove from heat and allow to cool for a few minutes. Add the almond meal, coconut, slivered/flaked almonds and salt to the butter mixture. Using a fork, roughly combine to form a chunky crumble mix. Use fingers to squeeze mix if desired to create larger chunks of crumble.
- Place the rhubarb berry mixture into a baking dish and top with the crumble mixture. Bake for 20 minutes or until golden and fruit mixture is hot. If topping isn't crisp enough up the temperature towards the end for a few minutes. Note that this will cook a lot quicker than a regular crumble mix so keep an eye on it for excess browning.

- Trim and dice the rhubarb. Place into a large pan and add the water. Cover with a lid and cook over moderate heat for 20-25 minutes until the rhubarb has completely softened.
- Remove the pan from the heat and use a soup ladle to scoop out the hot liquid and pour into a jug. Add the sugar-free jelly powder to this hot water mixture and whisk well. Once dissolved, add it back into the rhubarb in the pan and add the lemon juice. Stir well to combine.
- Use a potato masher to further break down the rhubarb, then pour the mixture into a clean bowl. Cover and place in the freezer for at least 6 hours. 4. Remove the mixture from the freezer and use a fork to ‘break up’ the mixture. Pour in the lime soda and use a whisk to mix in. Combine between two cocktail glasses (or 4 smaller ones) and enjoy!

- Chop the rhubarb into circa 3-5 cm long, finger-thick pieces. Large rhubarb stalks may benefit from peeling first. Mix the chopped rhubarb with the sweetener. Let it sit for 30 minutes to macerate. This process draws out excess liquid and prevents the cake from becoming soggy.
- Preheat the oven to 180 C / 350F and line the bottom of a 20 cm / 8 inch round springform with parchment paper. Grease the sides with butter.
- Fill the cake batter into the springform. Arrange the rhubarb pieces in a single layer over it. Top off with the streusel mix.

- Place a round piece of parchment paper on the bottom of the pie pan to make it easier to remove the slices of dream pie.
- Cut off the top and bottom parts of the rhubarb stalk. Dice the rhubarb into 1/2 inch cubes. If the outer layer is too tough, you can peel that off and discard it.
- Dairy Version: Using a stand mixer, add all of the ingredients to the mixing bowl and beat the whipped cream on high until it reaches soft peaks. Chill until you are ready to use it.

- Preheat oven to 260° F. Place cut-up rhubarb and 1/2 cup sugar (or sugar substitute) in bowl and microwave for 1 min. 30 seconds.
- In a mixer, beat together until well combined the eggs, water, cream, butter, vanilla, orange zest and remaining 1 cup sugar (or sugar substitute)
- Distribute the rhubarb evenly into 6-8 ramekins until they are about 3/4 full. I used 8 ramekins that were 5” diameter by 1 1/2 inch deep. Pour egg/cream mixture over the top of each ramekin and poke the rhubarb down to be under the custard mixture.
- If doing custard only, bake 35 to 40 minutes. If you want a charred custard top, turn on the broiler and leave custards under the broiler for a few minutes. Be sure and watch them at this point so they do not burn.
