While on the South Beach diet, this dish satisfies my craving for the standard chicken parmesan dish.....but this recipe is missing the breadcrumbs. But it's so good you won't miss the breadcrumbs! In the world of low carb dieting, I like to serve this with a green veggie and/or tossed salad.

2 (4 ounce) boneless skinless chicken breasts
1/2 cup no-sugar-added spaghetti sauce (I use Hunt's No Added Sugar Italian Baking Sauce or Classico Spicy Red Pepper Spaghetti Sauce)
1/2 cup shredded mozzarella cheese
1 teaspoon grated parmesan cheese
garlic salt, to taste
italian seasoning, to taste

Steps:

  • Preheat oven to 375 degrees.
  • Spray a shallow, small baking dish with non-stick cooking spray.
  • Season each side of breast with garlic salt and Italian seasoning to your liking; place in casserole dish.
  • Spoon pasta sauce equally over top of each breast.
  • Bake for about 45 minutes; sprinkle equally with cheeses and bake an additional 5 minutes or until cheese are melted.

I saw Recipe#132383 which I liked the sound of, but decided to try the idea of a parmigiana stuffed with Camembert. I thought it came out really well and the Camembert did give a good flavour burst in the middle that went well with the sauce.

2 (250 g) chicken breast fillets, skinless
50 g camembert cheese
1 egg
2 teaspoons garlic, crushed
1/2 teaspoon onion powder
1/2 teaspoon tarragon, dried
1/2 cup breadcrumbs
1/2 cup pasta sauce
2 tablespoons parmesan cheese, grated

Steps:

  • Pre-heat oven to 180°C / 350°F.
  • Cut pocket into thickest part of chicken breast and stuff with slices of Camembert cheese. Put it well into the middle and press down the outer edges to keep it together.
  • Lightly beat together egg, garlic, onion powder and tarragon in a bowl.
  • Dip chicken breasts in egg mix and roll in breadcrumbs to coat.
  • Place chicken in a foil lined baking dish and place in oven on a lower rack for 35 minutes.
  • Remove and spread pasta sauce evenly over the top, and sprinkle with parmesan.
  • Return to oven on a higher rack (but not too close to the top) for around 15 minutes until cheese has melted.

2 large egg whites, lightly beaten
1/2 cup dried breadcrumbs
1 tablespoon italian seasoning, dried
1 teaspoon olive oil
1 1/2 cups canned tomato sauce or 1 1/2 cups pasta sauce
1/2 cup part-skim mozzarella cheese, shredded
1 tablespoon grated parmesan cheese

Steps:

  • Preheat oven to 350°F.
  • Coat an 8-inch square pan with cooking spray.
  • Dip chicken in egg whites and turn to coat. Then mix breadcrumbs with Italian seasoning and dip chicken in breadcrumb mixture, turn to coat thoroughly.
  • Heat oil in a large skillet; add chicken. Cook until lightly browned and no longer pink in the center, about 4 minutes per side.
  • Pour ½ cup sauce into prepared baking dish. Place chicken in dish and pour remaining sauce over chicken. Sprinkle with cheese and bake until bubbly, about 25 minutes.

Steps:

  • Preheat oven 350°F.
  • Dip chicken in beaten egg, then coat with breadcrumbs thoroughly.
  • Heat oil in frying pan. Add coated chicken pieces.
  • Brown lightly on both sides.
  • Pour 1/3 of the sauce into an 8-inch square baking dish.
  • Layer chicken in the dish.
  • Pour remaining sauce evenly over chicken.
