This Creamy Chicken Enchilada Casserole is everything you love about delicious Chicken Enchiladas in a super simple to make casserole dish! The best thing is you still get the flavors of enchiladas and won't even miss the tortillas.

2 lbs boneless (skinless chicken breast)
1 10 oz can red enchilada sauce
8 oz cream cheese (softened)
1/2 cup sour cream
1 cup sharp cheddar cheese
Pico de gallo
Guacamole
Sour cream
Chopped cilantro

Steps:

  • Mix softened enchilada sauce, cream cheese, and sour cream together until smooth.
  • Place chicken breast flat in the casserole dish pour the sauce mixture over the chicken. Sprinkle the cheese evenly over the top.
  • Bake uncovered at 375˚F for 30-40 minutes or until the chicken is 165˚F internal temperature.
  • Remove from oven and let set for 5-10 minutes, then top with desired toppings and serve warm.

If you don't care for hot food, you could use plain Monterey jack cheese instead of the pepper-jack. For myself I added more pepper. 2 (7 ounce) cans whole green chilies, drained well
8 ounces monterey jack pepper cheese, shredded
3 eggs
3/4 cup heavy cream
1/2 teaspoon salt
4 ounces cheddar cheese, shredded

Steps:

  • Grease an 8x8" baking pan.
  • Slice each chile along one long side and open flat.
  • Arrange half of the chiles in the bottom of the baking pan, skin side down, in a single layer.
  • Top with the pepper-jack cheese.
  • Arrange the remaining chiles over the cheese, skin side up.
  • Beat the eggs, cream and salt well.
  • Pour evenly over the chiles.
  • Top with the cheddar cheese.
  • Bake at 350º for 35 minutes, until golden brown.
  • Let stand 10 minutes before cutting.

1 Can (7 ounce) Green Chiles (, diced)
1 Package (8 ounce) Cream Cheese (, softened)
2 Cups Shredded Monterey Jack Cheese (, divided)

Steps:

  • Preheat the oven to 350 degrees. Prepare a (9x13) casserole dish with nonstick cooking spray.
  • In a gallon size freezer bag, shake together the dry seasonings. Add the chicken, sealing the bag. Toss the bag and knead the chicken until the spices are evenly distributed.
  • Dump the chicken into the casserole dish, creating an even layer with space between the chunks of chicken if possible.
  • In a large mixing bowl, beat the cream cheese until soft and creamy. Stir in half of green enchilada sauce, green chiles, and 1 cup of cheese. Spread over the chicken layer.
  • Pour remaining enchilada sauce over the cream cheese layer and top with remaining cheese.
  • Bake for 45 to 50 minutes or until the chicken is cooked through, the cheese has melted, and the edges are bubbling.
  • Garnish with freshly chopped cilantro, black olives, diced tomatoes, and diced avocado if desired.

But sometimes even " low carbers " crave a casserole that's full of cheesy goodness. ;) So, I decided to try to come up with a recipe that was low in carbs and still fit the bill for cheesiness.For the chicken seasoning, I used Weber's Grill Creations " Kick' N Chicken " seasoning. But you can use whatever chicken seasoning you have on hand.And as always with my recipes, you can adjust the amount of seasoning as you like. Submitted to " ZAAR " on May 21st, 2009.

1 (16 ounce) bag frozen cauliflower, thawed and set aside
3 tablespoons stick margarine
1 1/2 lbs boneless skinless chicken breasts, cut into bite size pieces

2 1/2 tablespoons stick margarine
2 1/2 tablespoons flour
2 cups shredded sharp cheddar cheese, divided
1 1/4 cups 2% low-fat milk
1/2 teaspoon black pepper (to taste)
1/4 teaspoon salt (to taste)

Steps:

  • Preheat oven to 350 degrees.
  • In a skillet large enough to hold chicken, melt margarine over medium heat.
  • Add chicken and sprinkle with chicken seasoning, stirring well to coat.
  • Cook chicken until no longer pink and slightly browned, set aside.
  • To make the Cheese Sauce:.
  • In a medium sized sauce pan, melt margarine over medium/low heat.
  • Add flour and cook until lightly browned, and stir in milk a little at a time until slightly thickened.
  • Stir 1 1/2 cups cheese into milk, to get desired thickness or thinness you might want to add a bit more milk .
  • Then add salt and pepper to taste.
  • In a large bowl, add cauliflower,chicken, and cheese sauce.
  • In a greased 2 quart baking dish, add the cauliflower mixture.
  • Sprinkle with remaining cheese,and bake at 350 degrees for 35 minutes.

  • Heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.

1/2 cup chicken stock (or 1 tsp chicken base with water)
10 ounce can tomatoes with green chilies (drained)
2 ounces cream cheese
1 cup pepperjack cheese (shredded)
1 cup monterey jack cheese (shredded)

Steps:

  • Add chicken breasts, stock and garlic to skillet.
  • Cook chicken in the stock over medium heat until cooked through and tender.

I think next time I’ll use some sour cream in the chicken mixture or maybe in with the eggs mixture. And I did use heavy cream instead of milk to make it more keto friendly. This one’s a keeper!
