LOW CARB CARBONARA
This recipe is South Beach and Atkins Diet friendly. We have been eating high protein, low fat, low carb for quite some time and missed some of our favorite dishes, so I have been finding a way to remake them. This is a great recipe to utilize leftovers!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Place squash, cut-side down, onto prepared baking sheet.
- Bake in the preheated oven until flesh is tender, 30 to 45 minutes. Cool until easily handled.
- Scrape spaghetti squash flesh into a large bowl using a fork. Whisk eggs, evaporated milk, garlic powder, salt, and oregano together in a separate bowl; pour over squash. Mix chicken, 1/2 of the Parmesan cheese, 1/2 of the green onions, bacon bits, and black pepper into squash mixture; pour into a 9x13-inch casserole dish. Top mixture with remaining Parmesan cheese and green onions.
- Bake in the oven until cooked through and set, about 45 minutes.

LOW CARB PIZZA
Steps:
- Preheat oven to 375 degrees F.
- Make the crust: Generously spray 2 (12-inch) pizza pans with nonstick vegetable oil cooking spray. In a medium bowl, stir together all of the crust ingredients to make a smooth, thick, pancake-like batter. Using a rubber spatula, spread the batter as thin and evenly as possible over the 2 pans.
- Place pizza crusts on center racks of the oven and bake for about 12 to 15 minutes, or until lightly golden brown and firm to touch.
- Remove crusts from oven and increase the oven temperature to 400 degrees F.
- Meanwhile, make the sauce: In a saucepan over medium heat, heat olive oil and then sweat onions and garlic in oil, cooking just until softened and translucent. Add diced tomatoes and the remaining ingredients and simmer for about 2 minutes.
- Compile the pizzas: Spread the tomato sauce and then the mozzarella cheese evenly over both crusts. Top 1 pizza with pepperoni, sausage, and ham, and top the other with the bell pepper strips, onions, and mushrooms. Lightly sprinkle 1 tablespoon olive oil over each pizza, and sprinkle each with a dash of dried oregano.
- Place the pizzas back in the oven to bake for another 10 to 12 minutes, or until the cheese melts and starts to brown. Cut each pizza into 8 slices.

LOW CARB PASTA CARBONARA RECIPE

- Cook your pasta separately, according to package directions. Do not skip the dry frying. Set aside.
- In a bowl, melt the butter and set aside.
- In a second bowl, wisk together the eggs and parmesan cheese. Slowly stir in the cooled butter as if you are tempering the eggs. Slow, slow, slow!
- Then whisk in all the other spices.
- In a pan, cook the bacon, and then add the noodles and toss well. Turn off the heat.
- While the pan is still hot, slow stir in the sauce a little at a time. Again, slow, slow slow! The idea is to cook the egg without ending up with scrambled eggs. So stir! (I turned my heat back on for a bit because the pan cooled too quickly. The sauce wasn't cooking. It should thicken and coat the noodles instead of being an actual liquid).
- Top with a little extra parmesan and serve.

Steps:
- In a large stock pot, fill with enough water to cover squash.
- Cook until done, about 25 minutes.
- Meanwhile, in large fry pan, fry bacon until crisp.
- Remove bacon and set aside.
- Drain all but 2 Tbsp of the drippings, and add the butter, when melted and garlic and sauté careful not to burn, set aside.
- When squash is cooked and cooled enough to handle.
- Cut the squash lengthwise and scrap another pan.
- Add butter mixture, eggs, cheese and parsley and give it a good toss.
- Stir over low heat until mixture is slightly thickened.
- Stir in tomatoes and bacon.
- Add salt and pepper to taste.
- Serve immediately sprinkled with Parmesan cheese.
