Easy 3 Ingredient Keto Banana Pancakes. A perfect low-carb, gluten-free, paleo and whole 30 friendly recipe that's great for breakfast or a healthy sweet treat. 3 Ingredients. 15 Minutes.

2 bananas
4 eggs
1 tsp cinnamon
1/2 tsp baking soda ((optional))

Steps:

  • Mix all the ingredients together until well combined.
  • Melt a knob of butter in a pan over a medium heat and cook about 4 pancakes per batch (depending on the size of the pan).
  • Allow the pancakes to cook about 1-2 minutes per side. I like to cover the pan while the pancakes cook on the first side before flipping. This allows the top to steam a little bit, making it fluffier and also easier to flip.
  • Serve immediately as is, or with a dollop of coconut cream and fresh strawberries.

4 Bananas, large & ripe
5 Utopihen Pasture Raised Eggs, large
2 tsp Vanilla Extract
1 tsp Cinnamon

Steps:

  • In a large bowl, mash bananas and whisk in your eggs until completely combined.
  • Add cinnamon and vanilla. Mix well.
  • Grease a pan or griddle and bring to medium-low heat.
  • With a measuring cup, scoop a 1/4 cup of batter into heated/greased pan or griddle.
  • Cook until golden brown, about 1 min and 30 seconds on each side. Continue until all pancakes are cooked. Grease pan in-between pancakes as needed.
  • Serve immediately.
  • Garnish with strawberries, almonds, whipped cream and a drizzle of honey.
