- Spread one slice of bread with mayonnaise. Spread the other slice with peanut butter. Place lettuce leaves on top of the peanut butter, then top with the mayonnaise-side of the other piece of bread to make a sandwich.

FUNKY PBO-OF SANDWICH (PEANUT BUTTER AND OLIVE)
As strange as this sandwich sounds, I grew up on them. It's hard to describe the flavor combination but they knock the socks off a traditional PBJ IMHO. You may use 2 slices of bread if you like but for some reason they taste better to me open faced. Enjoy!

- Slice the Spam Luncheon Meat into thin slices.
- In a large skillet over medium heat; combine the sliced luncheon meat and barbecue sauce. Cook until heated through.
- Spoon meat and sauce onto the bottom halves of the toasted French bread.
- Top the barbecued meat with the coleslaw, then place the other half of the toasted French bread on top, and serve.

I don't know exactly how Elvis ate this sandwich (I think he fried it), but this is my family's way of making this sandwich since I was a little girl. I craved these terribly while I was pregnant. Edited to add-Reviewer Bev is right- Miracle Whip makes it better than mayo! I used Honey Roasted Peanut Butter on my last one and it was (with the Miracle Whip) the BEST. sandwich!!! I could eat one everyday!
