Steps:
- Combine everything in a large pot EXCEPT the couscous.
- Stirring frequently, bring the mixture to a soft boil.
- Stir in couscous and immediately remove the pot from heat and cover with a lid.

- Heat a Dutch oven over medium heat. Add curry powder, garam masala and mustard seeds and toast, stirring, until the spices begin to darken, about 1 minute. Transfer to a small bowl.
- Add oil, onion, garlic, ginger and salt to the pot and cook, stirring, until softened, 3 to 4 minutes. Stir in eggplant, cauliflower, tomatoes, chickpeas, water and the reserved spices. Bring to a simmer. Cover, reduce heat and cook, stirring occasionally, until the vegetables are tender, 15 to 20 minutes. Top each serving with a dollop of yogurt, if desired.

- On parchment paper-lined or greased rimmed baking sheet, toast cashews in 350°F (180°C) oven until fragrant and golden, about 10 minutes.
- Meanwhile, in large bowl, combine 2 tbsp (25 mL) of the sugar, salt, curry powder and cumin; set aside.
- In saucepan, bring water, remaining brown sugar and butter to boil, stirring constantly. Add cashews, stirring to coat; simmer until no liquid remains, about 3 minutes. Add to spice mixture; toss to coat well.
- Spread nuts on same baking sheet; roast until coating is dry and slightly golden, about 10 minutes. Let cool on pan on rack. (Make-ahead: Store in airtight container at room temperature for up to 1 week.).

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Stir together the chickpeas, lemon juice, olive oil, brown sugar, cumin, coriander, cinnamon, garam masala, black pepper, cayenne pepper, and salt in a mixing bowl. Spread the chickpea mixture in a single layer on the prepared baking sheet.
- Roast in the preheated oven until the chickpeas are dark brown in spots, crisp, and have shrunk quite a bit, 25 to 30 minutes, stirring halfway through the cooking time. Cool to room temperature before serving.

CURRIED COUSCOUS WITH CHICKPEAS
This makes a great lunch or snack and is low-fat. Great for bringing to work or school and can be eaten hot or cold. I like it with Braggs sprinkled on top (but I'm known to add braggs to any rice or couscous dish for extra flavour!). Could also add some cooked chicken to make a main dish, maybe with a side green salad or additional steamed veggies.

- In a large pot, cook onion, red pepper and garlic in the olive oil over medium low heat until soft, about 7 minutes.
- Add tomatoes, chickpeas, peas, corn and spices and continue to cook, stirring occasionally for 5 minutes.
- Add broth, increase heat and bring to a boil. Stir in couscous, cover, remove from heat and let sit for 6 minutes.

INDIAN CHICKPEAS
This is a vegetarian side or main dish that is included in a bunch of recipes that I received from a friend.

Steps:
- Soak chickpeas overnight then rinse and cook in water till tender.
- Drain and keep the cooking liquid.
- Heat oil in frying pan and cook onion until golden.
- Add cinnamon and cloves and cook for a few seconds.
- Add garlic, ginger, chili pepper, and coriander and cook 5 minutes stirring.
- Add tomatoes with juice and cook till all liquid is absorbed.
- Add the chickpeas to pan, mix, and cook for 5 minutes.
- Pour in the cooking liquid from the chickpeas and simmer for 25 minutes or until all the liquid is gone.
- Sprinkle with garam massala and cilantro.
- Can be served hot or cold.
- Time to make does not include soaking the chickpeas overnight.

WHOLE WHEAT COUSCOUS WITH VEGETABLES AND CHICK PEAS
Created this delicious recipe because I didn't want to prepare the couscous by itself. As always, I used sodium free chicken broth packets mixed with water and Mrs. Dash. I also used homemade peas. So if you use canned...use low sodium and be sure to drain and rinse them.

- Steam Broccoli and Carrot, set aside.
- Heat Margarine, in a stock pot over medium high heat.
- Add the onion, pepper and onion. Saute for 3 minutes.
- Add seasonings to the vegetables and stir to combine.

- Stir in couscous. Cover and remove the pot from the heat.
- Let stand for 5 minutes.
- Add the vegetables and peas. Stir to combine.
