The secret of this light frosting is to mix it with a mixer for the recommended time at high speed. This incorporates air to make it light. 1-1/2 cups frosting is enough to frost the top of one 9 inch cake.

Light and fluffy icing. Perfect for an angel food cake. You would swear it was a boiled frosting, all the taste, very little effort! I like to change it up a bit and use maple or peppermint extract instead of the vanilla.

FLUFFY FAT-FREE CHOCOLATE FROSTING
Try this using different flavors of sugar-free pudding. Make certain to completely thaw the Cool Whip before adding to the pudding, if you like a sweeter frosting add in some Splenda or alternative sweetener into the pudding mix. - Combine sugar, water, Sweet-n-low egg whites and cream of tartar in top of a double boiler and beat at high speed for 1 minute. Set over simmering water in the bottom of the double boiler.
- Continue to beat at high speed for 4-5 minutes or until soft peaks form.
- Remove from heat.
- Add vanilla to frosting and continue to beat at high speed 1-2 minutes or until thick enough to spread on a cooled cake or cupcakes.

FLUFFY CREAMY CREAM CHEESE FROSTING (LOWER FAT/CAL)
I'm a cream cheese frosting lover and have been looking for the perfect lower fat/cal frosting that doesn't taste low fat. After trying many recipes and experimenting on my own I think I've finally come across one that fits the bill. It should come out nice and fluffy and not too sweet (I don't care for overly sweet frosting) although one can always add more sugar. I use two packages of Neufchatel Cheese (1/3 less fat cream cheese). It would probably also be good with one package Neufchatel cheese and one light cream cheese. I wouldn't suggest using both light cream cheese, and certainly would not suggest fat free cream cheese. This recipe yielded enough to frost two 8x11 sheet cakes very thickly.

- Add Splenda then slowly add 21/2C powdered sugar. Beat until combined.
