Homemade turkey sausage patties are easy to make. You can double the recipe and freeze some sausages for next time. This homemade turkey sausage recipe is a recipe every brunch lover needs.

2.2 pounds ground turkey ((I use turkey thigh for the juiciest sausages))
2 tablespoons maple syrup
1 1/2 teaspoons sea salt
1 teaspoon coarse ground black pepper
1/2 teaspoon garlic granules
1 teaspoon dried thyme
1 teaspoon dried sage

Steps:

  • In a large bowl, mix everything together. The best way is to use your hands and really mix it all together (I wear food prep gloves for this step) You can also use your stand mixer with the paddle attachment.
  • There are a few different ways you can do this. I like to use a large cookie scoop / ice cream scoop. I lightly pack the meat into the scoop, release the scoop, then flatten it with my palm. Alternatively, you can just divide the meat into 12 rough balls, and shape each ball into a sausage patty. Lastly, you can also roll out the meat between parchment paper, then cut the sausages with a round cookie cutter / lip of a cup.
  • Make 12 equal sized turkey sausages. I make them about 1/2-inch thick if I am going to cook them straight away, but you can make according to your preference.
  • If you are going to freeze half the batch, make the ones you are going to freeze no thicker than 1/2-inch, if you plan on cooking from frozen. Otherwise, you will need to defrost the sausage patties before cooking.
  • Heat some oil in a non-stick skillet over medium-high heat. Add the patties (you might need to do it in batches) and cook the first side for about 3-4 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through.The most reliable way to to check if a turkey sausage patty is cooked through is to use an instant read thermometer. The internal temperature of each sausage patty should be 165°F / 74°C.
  • If you are cooking from frozen, follow the same instructions, but you will need to slightly increase the cooking time. If the sausages are browned but not cooked through, turn the heat down and finish cooking.

8 eggs
1 cup (112g) shredded cheddar cheese
½ cup (56g) shredded mozzarella cheese
½ cup (120mL) heavy cream
½ tsp salt
¼ tsp black pepper
1 tbsp finely chopped fresh chives

Steps:

  • Preheat oven to 450 and coat 9×9″ baking dish with nonstick cooking spray.
  • To a large pan over medium-high heat, add sausage and break apart with a wooden spoon. Cook sausage until browned, about 5 minutes. Remove pan from heat and discard of grease. Transfer browned sausage to a prepared baking dish and set aside.
  • To a mixing bowl, add eggs, shredded cheddar, shredded mozzarella, heavy cream, salt, pepper and, using an electric mixer, mix until well-combined. Pour atop browned sausage in baking dish.
  • Transfer baking dish to middle oven rack and bake until edges of casserole are golden brown and bubbling, about 25-30 minutes.
  • Remove baking dish from oven and allow casserole to cool slightly before cutting and serving with sprinkle of chopped fresh chives.

Steps:

  • Using your hands, thoroughly combine all ingredients in a mixing bowl. Fold a 12" sheet of waxed paper in half. Divide the sausage mixture into eight equal portions (about one tablespoon each.) and roll into balls using your hands. Place the balls on one side of the waxed paper, fold the other side over, and press to flatten the sausage into patties.
  • Coat a nonstick skillet with cooking spray. Cook the sausage over medium-high heat for 10 minutes, turning halfway. Sausage should cook until the internal temperature reaches 160 degrees Fahrenheit.
  • Makes 4 servings, two patties per serving

1 1/2 teaspoons dried sage
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon ground marjoram
2 teaspoons brown sugar
1/4 teaspoon cayenne pepper
1/2 teaspoon poultry seasoning
1/2 teaspoon garlic powder
1 teaspoon onion flakes
2 tablespoons flour
12 ounces fat-free evaporated milk (not sweetened condensed)
1 cup skim milk

Steps:

  • Mix ground turkey and spices together and let sit in fridge overnight for flavors to meld.
  • Brown meat mixture in a large fry pan. Once brown, sprinkle with flour. Stir in milk and evaporated milk.
  • Bring to a boil, stirring constantly and simmer till desired thickness.
  • Serve with your favorite reduced fat biscuits, toast, rice or noodles.

1 Flax Egg (1 tbsp flaxmeal/3tbsp water)
1 tsp Liquid Smoke
1 tsp Cumin
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Dried Fennel Seed
Ground Pepper (To Taste)
1 tsp Liquid Aminos
1/3 cup Canned Pinto Beans, drained
1/4 cup Unbleached Flour

Steps:

  • Follow the recipe for basic TVP crumbles listed below. Don't bother with spices yet.
  • Preheat oven to 375°F.
  • Cover your baking sheet with aluminum foil and spray with cooking spray to prevent sticking.
  • In a food processor, blend all ingredients smooth.
  • Using about 1/4 cup portions, make patties by pressing mixture into a ball and then flattening between your palms into the desired shape.
  • Place each formed sausage patty onto your prepped baking sheet and spray each top with more cooking spray.
  • Bake for 10 minutes, flip, then bake for 10 minutes more.
