1/2 cup butter, softened,not melted
1 cup brown sugar
1 cup corn syrup
2 large eggs, slightly beaten
1 teaspoon vanilla extract
1 cup currants
24 2 inch unbaked tart shells (I often use frozen tart shells from the store,unless my Mom has made me some!)

Steps:

  • Beat butter and brown sugar with wooden spoon till creamy.
  • Add corn syrup and beat till blended.
  • Add the eggs and vanilla and beat till well blended.
  • Add the currants and mix in well.
  • Place tart shells on baking pan, and fill each shell 3/4 full.
  • Bake in 375 degree oven till shells browned and filling is bubbly and gooey.
  • Let cool before trying to eat one!

These are the tarts Nana would make every Christmas, although she would make her own tart shells. I've simplified it and buy the shells already made. These are easy and delicious and so difficult to stop at just one!

1 cup packed brown sugar
½ cup dried currants
1 egg
3 tablespoons melted butter
½ teaspoon vanilla extract
12 (3 inch) unbaked tart shells

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Whisk brown sugar, currants, egg, butter, and vanilla extract together in a bowl. Spoon into tart shells; place tarts on a baking sheet.
  • Bake in the preheated oven until golden brown, about 20 minutes.

My mom used to make these a lot when I was a child. These were so good that there was nothing like them. I could never eat enough of these, and you will see that when you make these syrupy tarts.

1 recipe pastry for a 9 inch single crust pie
⅔ cup butter
1 cup golden syrup
1 cup packed brown sugar
1 ½ cups raisins
½ teaspoon ground nutmeg
½ teaspoon salt
2 eggs

Steps:

  • Line three inch tart tins with pastry. Chill while making filling.
  • Melt butter. Stir in golden syrup, brown sugar, raisins, nutmeg, and salt; mix thoroughly. Let mixture cool. Beat the eggs just sufficiently to combine yolks and whites, and then mix into the butter syrup. Pour filling into pastry lined tart tins. Set tins on a cookie sheet.
  • Bake on lowest rack in very hot preheated oven, 450 degrees F (230 degrees C), for 15 to 20 minutes. When baked, loosen edges with pointed knife. Allow tarts to stand for at least 10 minutes before removing from tins.
