This creamy healthy chocolate pudding recipe is surprisingly easy to make at home!

2 cups milk of choice OR canned coconut milk
heaping 1/8 tsp salt
1/4 cup dutch cocoa powder
1/3 cup sweetener ((sugar, pure maple syrup, erythritol, or honey))
1/2 cup milk of choice + 3 tbsp cornstarch
optional 3 oz chocolate chips or broken-up bar
3/4 tsp pure vanilla extract

Steps:

  • Healthy Chocolate Pudding Recipe: Heat the 2 cups milk of choice in a saucepan with the salt, cocoa powder, and sweetener. Meanwhile, whisk the cornstarch and 1/2 cup milk in a small bowl until dissolved. When the 2 cups milk are warm, add the cornstarch mixture and bring to a boil. Once boiling, stir constantly for 2 minutes. Lower to a simmer for an additional minute, then turn off the heat. Once the heat is off, stir in the vanilla and broken-up chocolate pieces until the chocolate melts. Transfer the pudding to the refrigerator to thicken. It gets thicker the longer it sits and will be ready to consume after a few hours or overnight. *Note: I've not tried arrowroot and have only tried this recipe with Dutch cocoa powder so can't vouch for the taste if regular unsweetened cocoa powder is used in its place. 1/3 cup agave nectar or packed light brown sugar
2 tablespoons cornstarch
Pinch of salt
2 12-ounce cans fat-free evaporated milk
2 large egg whites, lightly beaten
1 tablespoon plus 1 teaspoon vanilla extract
2 tablespoons white chocolate chips
1/4 cup unsweetened cocoa powder
2 tablespoons semisweet chocolate chips, plus more for topping

Steps:

  • Whisk the agave nectar, cornstarch and salt in a heavy-bottomed pot. Whisk in the evaporated milk and egg whites until well combined. Cook over medium-low heat, whisking constantly, until the mixture bubbles and thickens, about 10 minutes. Remove from the heat; stir in 1 tablespoon vanilla.
  • Transfer 1 cup of the mixture to a medium bowl. Add the white chocolate chips and the remaining 1 teaspoon vanilla and stir until the chips melt. Add the cocoa powder and semisweet chocolate chips to the remaining pudding and stir until the chips melt.
  • Divide the chocolate pudding among dishes and top with the vanilla pudding. Cover with plastic wrap and refrigerate until set, at least 2 hours. Chop some chocolate chips to sprinkle on top.

3/4 cup Dutch-processed cocoa powder
1 -2 tablespoon wasabi powder
2 limes, zest of
3 cups whole milk

Steps:

  • Whisk together instant pudding, cocoa, wasabi powder and lime zest. Whisk in milk. Divide into serving dishes. Cover each dish with plastic wrap; press the plastic right down to the surface of the pudding to prevent formation of a skin. Refrigerate until set, 4 hours up to overnight. Based on Alton Brown's recipe, using non-fat milk and sugar substitute. Works best with Splenda brand, but NutraSweet or SweetOne can be used easily. (The cooking time after adding the sweetener is not really long enough to break down the aspartame; if it's not sweet enough for you, you might add an extra packet.)

3 1/2 ounces large pearl tapioca (approximately 1/2 cup)
2 cups cold water
2 1/2 cups nonfat milk
1/2 cup heavy cream
1 egg yolk
6 (1 g) packets sugar substitute (up to 9 packets, to taste)
1 lemon, zest of
1 pinch salt

Steps:

  • Soak tapioca, covered, in cold water overnight. Drain well and place into slow cooker.
  • Add milk, cream and salt. Cook on high 2 hours, stirring occasionally.
  • In a small bowl, whisk sugar substitute into egg yolk. Temper small amounts of pudding base (1-2 tbsp at a time) into egg yolk to bring the temperature up slowly. When you've added about 1 cup of pudding base, transfer back into slow cooker. Add lemon zest, stir to combine and cook an additional 15 minutes.
  • Transfer to a medium bowl. Place a layer of plastic wrap down so it touches the surface of the pudding (to prevent a skin from forming), cool at room temperature for about 1 hour, then refrigerate. Serve cold.
  • Substitutions: You can use 3 cups whole milk in place of the skim milk and heavy cream; the fat content will be about the same. Do not use all skim milk - it will be flat and the flavors will be very muted.
  • Substitutions: You can leave out the lemon zest and use 1 1/2 tsp good, pure vanilla extract. You could also add 1 tbsp Dutched cocoa powder to the egg yolk and add 2 ounces melted bittersweet chocolate when you add the tempered egg yolk to the pot. Other potential flavorants: maple syrup, Irish Cream liqueur, instant espresso powder, fruit purées -- use your imagination.

1 (6 oz) chocolate-flavor crumb pie shell
1 cup fresh raspberries or Cascadian Farm™ frozen organic raspberries, thawed
1 tablespoon grated semisweet chocolate

Steps:

  • In a medium bowl, prepare pudding mix according to package directions using the 1 3/4 cups milk. Stir in vanilla; set aside.
  • Place cream cheese in a large microwave-safe bowl. Microwave, uncovered, on 100% power (high) for 15 seconds; stir. Microwave on 100% power (high) for 15 seconds more. Beat cream cheese with an electric mixer on medium speed for 15 seconds. Add half of the pudding mixture; beat until smooth. Add the remaining pudding mixture; beat until smooth.
