Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Break bread into small pieces into an 8 inch square baking pan.
- Drizzle melted oil over bread.
- If desired, sprinkle with raisins.
- In a medium mixing bowl, combine egg whites, milk, sugar, cinnamon, and vanilla Beat until slighty foamy.
- Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
- Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.
RUSTIC CHOCOLATE-CINNAMON BREAD PUDDING (LOW FAT, LOW(ER)SUGAR)
I just tried this and I love it! I'm a real bread pudding fan and I always save the bread heels and any bread that may be aging in the freezer. I only use whole wheat/multi grain and this works fine for any bread pudding. I love Lindt bittersweet chocolate with a passion so I used 2 ozs of that. This recipe asks for 1-3/4 cups milk and that seemed a bit dry to me so I made it 2 cups. It's from Kraft.

Steps:
- Preheat oven to 350°F.
- Beat cream cheese spread and sugar in large bowl with electric mixer on medium speed until well blended.
- Add egg whites and cinnamon; mix well.
- Gradually add milk, mixing until well blended.
- Place bread cubes in 8-inch square glass baking dish.
- Sprinkle chocolate over bread. Pour cream cheese spread mixture over bread mixture in dish.
- Bake 30 to 35 minute or until set in center. Cool slightly; serve warm. Store leftover pudding in refrigerator.

- Preheat oven to 200 degrees F.
- Slice challah bread if not already presliced, and the cut into 1 inch cubes.
- Place cubes onto cookie sheet, lightly spray with butter spray, and bake in oven until completely dry, stirring occasionally.
- In the meantime, in a medium sauce pan, mix together the half and half, salt, cinnamon, and sugar.
- Bring to a boil oven medium heat, stirring occasionally.
- In the meantime, in a medium bowl, wisk together the eggs or egg substitute.
- Once the half and half mixture comes to a boil SLOWLY whisk it into the eggs, never stop whisking until fully mixed together.
- When bread is dry, remove from the oven and spray with butter spray again, and layer the bread HALF way up the casserole dish.
- Sprinkle on half the rasins and then add the rest of the bread, but only until it reaches the top of the casserole dish.
- Sprinkle on the rest of the raisins.
- Slowly pour on the half and half mixture.
- Let this sit for 1 hour, stirring occasionally.
- Preheat oven to 350 degrees F Bake for 30-40 minutes, uncovered.

- Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
- Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
- Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
- Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
- Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
- Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

- tear the bread into pieces and place in a large bowl. Add the flour, spices, sugar and mixed fruit. Also add the lemon peel if using.
- Add the egg, and mix to combine. Then add the milk and fruit juice. Stir everything together to make a fairly soggy, gloopy mixture.
- Melt the margarine and add to the bread mixture. Stir it in.
- Pour the mixture into a deep loaf tin or other baking tray of similar size. The deeper it is the longer it will take to bake.
- Bake in the oven at 200 degrees celcius for 1 hour. After the first 30 minutes, cover with tinfoil to avoid burning the top.
- When the bread pudding is done, take out of the oven but leave in the tin to cool over night. If you take it out at this stage it will be very crumbly and may collapse! It tastes best the next day after it has cooled and become firm.
