1 (3-4 pounds) chuck roast
1 packet ranch dressing mix
1 packet au jus gravy mix
1/4 cup butter
4-5 pepperoncini peppers

Steps:

  • Place roast in the slow cooker and sprinkle the top with the ranch dressing mix and the au jus mix. Place peppers on top of the mixes, and add the butter.
  • Cook over low heat for 8 hours. Serve with noodles, rice or mashed potatoes. Enjoy!

Classic Sunday Pot Roast is an easy to make comfort food that is hearty, filling, and can easily feed the whole family. This recipe will work for a classic oven braise as well as in a slow cooker or Instant Pot.

1 3 to 5 pound beef roast (chuck, round, or brisket)
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons vegetable oil
6 cloves minced garlic
1 to 2 cups red wine*
2 cups low sodium beef broth
1/4 cup Worcestershire sauce
2 large white onions (cut into 2 inch chunks)
1 pound baby carrots
1 pound red potatoes (cut into bite-sized chunks)
1 sprig fresh rosemary

Steps:

  • Preheat oven to 350 degrees F. Get a large oven safe dutch oven pot heating over high heat.
  • Season both sides of chuck roast with salt and pepper. Add vegetable oil to pot and sear roast until browned, about 3 to 4 minutes each side.
  • Remove roast from pan and set aside briefly on a plate or cutting board. Add garlic to pot and saute 60 seconds. Deglaze pan with red wine and beef broth. Add roast back to the pot.
  • Pour Worcetershire sauce over roast and place the onion chunks, carrots, and potatoes on top of and around the meat. Place rosemary sprig on top.
  • Place a lid on the pan and transfer it to the preheated 350 degree oven. Cook 3 hours, or until meat reaches an internal temperature of 202 degrees F and shreds easily with a fork. Season vegetables with additional salt and pepper to taste and serve hot.

Salt and freshly ground black pepper
One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

1/4 cup onion, chopped very fine
1/4 cup celery, chopped very fine
1/4 cup bell pepper, chopped fine
2 tablespoons unsalted butter
1 teaspoon salt
1 teaspoon white pepper
3/4 teaspoon black pepper
3/4 teaspoon garlic, Minced
1/2 teaspoon dry mustard
1/2 teaspoon cayenne, Ground
4 lbs boneless beef sirloin

Steps:

  • In a small bowl combine the onions, celery, bell peppers, butter and seasonings, mix well.
  • Place roast in a large roasting pan, fat side up.
  • With a large knife make 6 to 12 deep slits in the meat (to form pockets) down to a depth of about 1/2 inch from the bottom; do not cut all the way through.
  • Fill the pockets to their depths with the vegetable mixture, reserving about 1 tablespoon of the vegetables to rub over the top of the roast.
  • Bake uncovered at 300F until a meat thermometer reads about 160F for medium doneness, about 3 hours.
  • For rarer roast, cook until thermometer reads 140F.
  • Serve immediately topped with some of the pan drippings if you like.

In the late 1960's I got this from a small Restaurant outside of Houma Louisiana. I remember I "oiled" the cook's vocal cords with a lot of cold Jax Beer to finesse the recipe out of him. About the only thing I've changed is re figuring it for the crock pot.

1 (15 ounce) can crushed tomatoes in puree
1 cup beef stock or 1 cup chicken stock
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
1 bay leaf
1/2 teaspoon cayenne
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
3 lbs chuck roast, lean, trimmed of fat, cut into 1 1/2 inch thick steaks
2 tablespoons olive oil
2 onions, chopped
3 stalks celery, chopped
1 green bell pepper, chopped
4 garlic cloves, minced
2 tablespoons flour

Steps:

  • Add tomatoes, stock, thyme, basil, red pepper flakes and bay leaf to the crock pot set on high; mix well.
  • Mix cayenne, black pepper, and salt. Rub well into the roast.
  • Heat a cast iron pan, add oil and brown meat on all sides. Add to crock pot.
  • Sauté the vegetables in the drippings until tender. Add flour and cook for two minutes, stirring constantly.
  • Add vegetables to the crock pot.
  • Cover, reduce heat to low and cook 6-7 hours.
  • Cut into serving size portions.
  • Serve on a bed of rice.

8 oz. unsalted butter (2 sticks)
3/4 c. all purpose flour
1 c. chopped yellow onion
1/2 tsp. celery seeds
1 Tbsp. minced garlic
2 Bay leaves
1/4 c. tomato paste
1/2 c. dry sherry
5 c. fish or shrimp stock
1 (14.5 oz.) diced tomatoes with juice
1 Tbsp. sugar
1/2 tsp. Tabasco sauce
1/2 tsp. crushed red pepper
24 med. shrimp, peeled and deveined
36 shucked oysters, drained
3 cans lump crab meat, drained
6 oz. heavy whipping cream
1 Tbsp. Creole Seasoning (recipe to follow)
3 c. cooked white rice

Steps:

  • In a Dutch oven or large heavy pot, heat half of the butter over medium-high heat. Add the flour, reduce the heat to medium, and cook, stirring constantly with a large wooden spoon, to make a thick roux almost the color of milk chocolate, 15 to 20 minutes. Add the onions and celery seed, cook, stirring, for 1 minute. Add the garlic and bay leaves, and cook, stirring, for 30 seconds. Place the tomato paste in a small bowl and whisk in the sherry to blend. Add to the pot, and cook, stirring, for 30 seconds. Add the stock, and whisk to blend. Add the tomatoes and their juices, the sugar, salt, black pepper, and red pepper, and cook, stirring, occasionally, for 20 to 25 minutes. Add 2 cups of the court-bouillon and bring to a simmer. Season the shrimp, crab meat, and oysters with Creole Seasoning. Add the shrimp and cook for 3 minutes. Add the oysters and cook until the oysters curl, 1 to 2 minutes. Add heavy whipping cream and boil for 1 minute. Add last 4 oz. of butter. Divide equally between 2 large soup bowls, and repeat with the remaining ingredients in 2 batches. Spoon 1/2 cup of rice into the center of each bowl and serve immediately. Creole Seasoning: 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried leaf oregano 1 tablespoon dried thyme Combine all ingredients thoroughly and store in an airtight jar or container. Yield: about 2/3 cup
