1/2 cup all-purpose flour
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon instant coffee powder
Pinch salt
4 tablespoons unsalted butter, melted
1 3/4 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cardamom
1/2 cup strong brewed coffee
1/3 cup sour cream
2 sticks (1 cup) unsalted butter, room temperature
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Spray and line with parchment a 9-by-9-inch baking pan; spray the parchment as well.
  • For the crumb topping: In a medium bowl, mix the flour, brown sugar, cinnamon, instant coffee powder and salt. Add the melted butter and mix until crumbs form that you can clump together in your hand. Set aside.
  • For the cake: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt and cardamom. In a smaller bowl, whisk together the coffee and sour cream until smooth.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing until each is well combined. Then add the vanilla extract and beat until the mixture is light and fluffy.
  • Starting and ending with the dry ingredients, alternate adding the flour mixture and the coffee mixture to the stand mixer; mix each addition well, scraping the bowl each additions.
  • Pour the batter into the prepared baking pan and top with crumb topping, spreading it evenly. Bake for 45 minutes or until a toothpick comes out clean.
  • Remove the cake from the oven and allow to cool for 20 to 30 minutes before cutting and serving.

1/2 cup butter, softened
1 1/4 cups powdered sugar
3 egg yolks
1 teaspoon instant espresso powder
1/3 cup cold coffee
1/3 cup whipping cream
2 cups cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups frosting (of your choice or use Coffee Buttercream Frosting)
1/2 cup pecans, coarsely chopped
2 teaspoons orange peel, freshly grated

Steps:

  • Pre heat oven to 350 degrees F.
  • Cream butter and sugar in large mixer bowl.
  • Add egg yolks 1 at a time, beating well after each addition.
  • Dissolve coffee powder in cold coffee; stir into butter mixture.
  • Add whipping cream; stir well until smooth.
  • Set aside.
  • Sift together flour, baking powder, baking soda and salt; sift again.
  • Fold flour mixture into butter mixture.
  • Pour into 2 floured and greased 9" cake pans.
  • Bake until wooden pick inserted in centers is with-drawn clean, 20-25 minutes.
  • Cool on wire rack.
  • Place 1 cake layer on serving plate.
  • Spread top with 1 cup of frosting.
  • Top with remaining layer.
  • Spread top of cake with 1 cup of frosting.
  • Sprinkle pecans and orange peel over frosting.

One of my all time favorite southern classic desserts, that is excellent during the holidays, and even better everyday!

3 cups cake flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups granulated sugar
1 cup butter, softened
4 large eggs, room temperature
1/4 cup sour cream
1 cup buttermilk
2 teaspoons pure vanilla extract
1/4 cup granulated sugar
1/4 cup sweetened flaked coconut

Steps:

  • 1. Preheat oven to 350 Degrees Fahrenheit.
  • 2. Sift together cake flour, salt, baking powder and soda. Set aside.
  • 3. In a large separate bowl, beat butter until very fluffy (approx. 5 minuets) then add 2 cups of sugar. Continue to beat until light and fluffy (approx. 2 more minutes).
  • 4. Beat in eggs, one at a time, making sure that each egg is thoroughly blended before adding the next egg.
  • 5. Mix in sour cream and vanilla extract.
  • 6. Blend in some of the dry ingredients followed by some of the buttermilk in alternates. This is a way to ensure that the ingredients are being thoroughly blended together -- For example; add dry mixture followed by buttermilk, dry mixture, buttermilk dry mixture -- so on and so forth -- DO NOT OVER BEAT OTHERWISE CAKE WILL BECOME HARD AS A BRICK ONCE FINISHED BAKING!
  • 7. Grease a bundt cake pan. I used a non stick angle food spring formed tube pan. If you do not have a non stick pan, be sure to grease your pan and dust with flour! Add in 1/4 cup of sugar to the bottom of pan and about 3 inches up the sides, tapping the pan to ensure even distribution. Leave excess sugar in pan. Sprinkle coconut flakes to the bottom of the pan. Scrape batter into the bundt pan and spread evenly.
  • 8. Bake for about 50 minutes to an hour or until a wooden skewer inserted comes out clean (if it comes out wet, bake another 10 minutes or so, if it comes out crumbly, you over baked the cake).
  • 9. Let cake cool for about 10 minutes, then carefully remove from pan, making sure that the sugary coconut side is faced upward. Use a knife to scrape the sides if cake becomes stuck. (this step is very important otherwise your cake will continue to bake and will become very dry and completely stuck in the pan).
  • 10. Drizzle glaze over the crunchy top portion of cake. Please use my Vanilla Almond Glaze recipe to complete this cake!

2 1/2 cups flour
1 1/4 cups sugar
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon mace or 1/2 teaspoon nutmeg
1 cup unsalted butter, melted and cooled slightly (2 sticks, 8 ounces)
1 teaspoon vanilla extract
3/4 teaspoon almond extract
1/2 cup unsalted butter, softened (1 stick, 4 ounces)
1 cup sugar (7 ounces)
2 large eggs
1 teaspoon vanilla extract
1 cup sour cream (8 ounces)
2 cups unbleached all-purpose flour (or, bread flour is better)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder

Steps:

  • Adjust oven rack to center position and preheat oven to 350. Grease two 8-inch round cake pans; dust pans with flour, knocking out excess. Set aside.
  • Make the Crumb: In a medium-sized mixing bowl, wisk together the flour, sugar, salt and cinnamon.
  • Melt the butter in the microwave or in a small saucepan over low heat. Remove from heat and stir in the vanilla and almond extracts. Gradually drizzle the melted butter mixture into the flour mixture while continuously and gently tossing with a fork. Continue to toss until all the butter is absorbed and you have a uniformly moistened crumb mixture. If texture of crumb is too small, gently squeeze small clumps together to make large crumbs ranging in size from that of a pea to that of a grape, about 1/4- to 1/2-inch in size. (Adding the butter too fast, too much butter, and/or over-mixing can result in the crumb mixture coming together as a solid dough. If that happens, simply use your fingers to break-up the solid crumb mixture into big crumbs, about 1/4- to 1/2-inch in size. Crumbs don't have to be uniform, just try to get most about this size.) Set aside while you make the cake batter.
  • Make the Batter: In a large bowl, cream the butter and sugar together with an electric mixer on high speed until light and fluffy. Add the eggs, one at a time, beating after each addition. Beat in the vanilla and sour cream, scraping down the sides of the bowl with a spatula as needed. In a medium-sized bowl, whisk together the flour, baking soda, salt and baking powder. Add flour mixture to the sour cream mixture and beat on low or stir with a large spoon until evenly combined.
  • Turn the batter into the prepared pan(s) and spread evenly. Sprinkle the crumb mixture over the batter with your fingers, covering the batter evenly and completely. Bake 8-inch rounds for 20-25 minutes. Cake is done when a wooden pick or cake tester inserted near the center comes out clean, and the sides of the cake are golden and slightly pulling away from the edge of the pan. Remove from the oven and let the cake cool in its pan(s) set on a wire rack. Carefully transfer the cake, crumb side up, onto a serving plate. Dust with confectioners' sugar, if desired.
  • Makes 16 (2-inch) wedges.

This recipe pairs a nutty meringue with coffee-flavoured Victoria sponge. No wonder it made it into the top three in our 20th birthday cake competition

175g softened butter , plus extra for greasing
175g caster sugar
3 medium eggs
175g self-raising flour
1 tsp baking powder
2 egg whites
100g caster sugar
3 tsp instant coffee granules
25g chopped walnuts
100g softened butter
50g icing sugar , sifted
3 tbsp icing sugar

Steps:

  • Make the meringue: whisk the egg whites until stiff, add half the sugar, whisk again until stiff, then repeat with the remaining sugar. Mix the coffee with 3 tbsp boiling water to dissolve the granules. Gently fold the walnuts and 1 tsp of the coffee into the meringue. Set aside while you make the cake mixture.
  • Heat oven to 180C/160C fan/gas 4. Grease 2 x 20cm loose-bottomed sandwich tins and line the bases with baking parchment. Beat together the butter and sugar until light and fluffy, then gradually whisk in the eggs. Fold in the flour and baking powder, then finally fold in 2 tsp of the coffee liquid. Divide the mixture between the 2 tins, putting a little more mixture in one than the other.
  • Spread the meringue on top of the tin containing less cake mix. Bake the untopped sponge for about 20 mins until an inserted skewer comes out clean. Continue baking the meringue-topped sponge for an additional 20 mins, then carefully remove both cakes from their tins and leave to cool on a wire rack.
  • To make the filling, beat the butter and icing sugar together, adding 2 tsp more coffee. To make the icing, mix a final tsp of the coffee into the icing sugar. Add a drop more water to make a runny icing. 5 Sandwich the 2 cakes together with the coffee filling, putting the meringuetopped sponge on top. Drizzle all over with the coffee icing to finish.

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Spray a nonstick angel food cake or bundt cake pan with nonstick cooking spray. Drop the 1/4 cup of sugar in the pan and move the pan around to distribute the sugar evenly all over the bottom and up the sides. Leave excess sugar inside. Spread the sweetened coconut flakes evenly on the bottom. Set aside.
  • In a medium bowl, whisk the cake flour, baking powder, and baking soda until just combined. Set aside.
  • In the bowl of an electric mixer, fitted with the paddle attachment, cream the butter for 5 minutes. It should be come lighter in color and creamy. Add the sugar and continue to mix for another 2 minutes. Add the eggs one at a time waiting until each egg is completely mixed before adding the next. Add the greek yogurt next, along with the vanilla extract and the lemon juice. Add the flour mixture in 3 batches, alternating with the buttermilk, make sure to start and end with the flour mixture. Do not overmix. I stopped the mixer when the last flour mixture was added and stirred manually until just mixed.
  • Pour the cake batter into the prepared pan. Make sure to spread the batter evenly all over. Bake for 40 minutes to 1 hour. Insert a wooden skewer to test cake. A few crumbs to no crumbs is what you're looking for. Depending on whether you used the angel food cake pan or the bundt cake pan, your bake time will vary. I used an angel food cake pan and it took exactly 47 minutes. If using the bundt cake pan, it will take longer.
