SHRIMP AND CORN CHOWDER

Steps:
- Melt the butter in a Dutch oven or large pot over medium-high heat. Stir in the celery, scallions, potatoes and corn. Add the thyme, bay leaves, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, 3 minutes. Stir in the flour until incorporated, about 2 minutes. Stir in the milk, then cover and bring to a boil. Uncover, reduce the heat to medium low and gently simmer until the vegetables are tender, about 6 minutes. Remove from the heat. Discard the thyme sprigs and bay leaves.
- Transfer one-third of the mixture to a blender and puree until smooth, then return to the pot. Return to a simmer over medium-high heat. Stir in the shrimp and cook until opaque, about 4 minutes. Season with salt. If the soup is too thick, stir in up to 1 cup water. Divide among bowls and sprinkle with paprika.

Steps:
- Brown the chicken pieces in the oil.
- Remove the pieces.
- Stir the flour into the drippings and cook until brown.
- Add the celery, pepper and onion and cook until tender.
- Add the soup powder, water, salt and paprika, bring to a boil.
- Cook for 5 minutes.
- Place the chicken in a baking dish.
- Pour the sauce over the chicken, bake uncovered for 45 minutes, basting often and skimming fat.

- Heat a heavy cast-iron skillet over medium heat. Add flour and cook, stirring constantly with a wooden spoon, until the flour turns a deep golden color, 7 to 10 minutes. Transfer the flour to a plate and let cool. (There will be a strong aroma similar to burnt toast. Be careful not to let the flour burn; reduce the heat if flour seems to be browning too quickly.) Alternately, toast the flour in a pie plate in a 400 degrees F oven for 20 minutes.
- Heat oil in a heavy stockpot over medium heat. Add onion, bell pepper, celery and garlic; sauté until the onions are lightly browned, about 7 minutes. Stir in the toasted flour. Gradually stir in broth and bring to a simmer, stirring. Add tomatoes, okra, pepper, thyme, oregano, cayenne and bay leaf. Cover and cook for 15 minutes. Stir in rice and cook, covered, for 15 minutes longer.
- Add shrimp, chicken and sausage; simmer until the shrimp is opaque inside, the chicken is no longer pink and the rice is tender, about 5 minutes longer. Discard the bay leaf and season with salt. Ladle into bowls.

LOUISIANA CHICKEN AND CORN
When I was cooking my Louisiana Pepper Chicken recipe, I went to chop the green peppers and they were bad inside. Then I was missing some other ingredients, so I kept improvising and ended up with this instead. DH absolutely loved it and asked me to write down what I did so I could make it again.

Steps:
- Rinse and dry chicken.
- Combine salt, cayenne and flour.
- Dust chicken with flour mixture.
- Heat oil in large skillet on medium heat.
- Add chicken.
- Cook until browned on both sides and no longer pink in center.
- Place on serving platter and keep warm in low oven.
- Add onion, corn and parsley to skillet drippings.
- Cook and stir about 3 minutes until onion is lightly browned.
- Spoon over chicken.
- Increase heat to high.
- Add chicken broth, lemon juice, basil and thyme to skillet.
- Cook until reduced to about half.
- Add corn starch mixture and stir until thickened.
- Place rice on a plate.
- Top with chicken and corn mixture, then pour some of the sauce over all, topping with some chopped green onion and a few drops of red pepper sauce.
