LOUIE DRESSING (FOR SEAFOOD SALADS OR REUBEN SANDWICHES)
One of my favorite memories of going to a restaurant when I was growing up was getting to order a Shrimp Louie or Crab Louie from someplace like the Reuben E. Lee. It wasn't until later in life that I discovered the joy of a well-crafted Reuben sandwich (no relation to the restaurant mentioned earlier), which later in life became one of our highest-rated sandwiches in our deli. This Louie dressing will make either of these better than simple Thousand Island or Russian.

- In a non-reactive bowl, mix mayo, red chile sauce, sweet chile sauce, seasoned salt, sugar, onion granules, and half the lemon juice.
- Chill and allow to rest for 15 minutes. Taste and adjust with salt, pepper, and remaining lemon juice.

LOUIS DRESSING... (SO DON'T PEEK!) :-)
This is pretty much a Seafood Louie minus the lettuce and seafood! My best friend's mom used to make this dressing in the galley of their boat while the crab pots were being pulled up! It's the best Louie (thousand island) dressing I've ever had. I like having it around when I have the craves for a Louie but not the time, because pretty much everything's in there but the lettuce and the shrimp or crab!

ORIGINAL LOUIS DRESSING

- Mix together well and adjust seasonings to taste. I like to add a little extra chili sauce and not quite as much green onion. Serve chilled.
CRAB LOUIS

- On 4 luncheon-size plates, make beds of lettuce. Mound crab on top. Combine dressing ingredients and spoon over crab, then garnish each plate with tomatoes and hard-cooked eggs.

LOUIS SEAFOOD SALAD
I once worked with a chef who made the most wonderful Louis dressing, but he wouldn't disclose his secret that made it so unusual and so good. Years later, he worked for my dad and told me his secret, the clove-flavored vinegar... you can't really taste it, but it adds something special! I'm sure he is long gone, so I feel free to pass on his secret.

Steps:
- Combine all dressing ingredients including any desired optional ingredients, and refrigerate, covered, for several hours before serving.
- Divide greens onto 4 individual salad plates or place in a large serving bowl.
- Top with shrimp and/or crab and/or lobster, and drizzle with lemon juice.
- Garnish with any or all of the optional ingredients, the more the better.
- Sprinkle with chopped chives.
- If serving individually, top each salad with a dollop of Louis Dressing, serving the remainder on the side.
- If serving from a large serving bowl, present, add dressing, and toss the salad at the table.
- Serve additional dressing on the side.

- Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
