2 lbs cod fish fillets
1 bay leaf
white wine, as needed
1/2 bunch collard greens (shredded)
8 potatoes (peeled, sliced thin)
1/2 cup olive oil
4 large onions (sliced thin)
3 tomatoes (chopped)
salt & fresh ground pepper (to taste)
1/2 cup olive oil

Steps:

  • Heat oven 350.
  • Place cod in a deep skillet.
  • Ad bay leaf. Cover with wine. Poach cod until just cooked. Drain. Flake. Set aside.
  • Boil potatoes and greens until tender. Drain.
  • Heat oil in a skillet.
  • Add onions. Saute 10 minutes or until golden.
  • Add tomatoes. Saute 5 minutes. Season.
  • In a sprayed 9x13 baking dish, layer the potato mix, cod, and onion mix in 2 layers.
  • Pour oil over top.
  • Bake 1 hour.

2 tablespoons olive oil
1 cup onion (minced)
1 (28 ounce) can chopped tomatoes (drained well)
1 (10 ounce) package spinach (stemmed, blanched, chopped)
1/4 cup red wine vinegar
1/4 cup brown sugar
1 teaspoon dried oregano
1 teaspoon dried basil
salt & fresh ground pepper (to taste)
2 lbs cod fish fillets
olive oil (as needed)
2 tablespoons lemon juice
mesclun (as needed)

Steps:

  • Heat broiler.
  • Heat oil in a skillet.
  • Add onions. Saute 10 minutes.
  • Add the tomatoes, spinach, vinegar, sugar, oregano, basil, salt and pepper. Simmer 10 minutes.
  • Season fish. Brush with oil.
  • Broil 8 minutes, turning once.
  • Place mesclun on plates. Top with fish and sauce. Serve immediately.
