1 lemon (juiced)
3/4 cup sugar
1/3 cup flour
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup flour
1 cup packed brown sugar
1/3 cup butter

Steps:

  • Preheat oven to 375 degrees and press pie crust into pie plate.
  • In a large bowl mix the apples, lemon juice, sugar, flour, cinnamon and nutmeg.
  • Add the apples to the pie crust.
  • In a medium bowl add the 1 cup flour and 1 cup brown sugar together and stir.
  • Using a fork or a pastry cutter, cut in butter until mixture is crumbly then pour it over the apples.
  • Bake in preheated oven for 25 minutes covered very loosely with foil.
  • Remove foil and bake an additional 25 to 30 minutes, until the top is crisp and golgen brown.

1/2 c. all-purpose flour
2 tbsp. all-purpose flour

1 stick cold butter
FILLING
7 medium to large tart apples (about 3 1⁄4 lb), such as Granny Smith
1 tbsp. lemon juice
1/2 c. granulated sugar
3 tbsp. all-purpose flour
1/2 tsp. ground cinnamon
tsp. ground nutmeg
Garnish: confectioners' sugar

Steps:

  • Have ready a 9-in. pie plate and a baking sheet. Place oven rack on lowest rack position in the oven. Heat oven to 450°F.
  • Line pie plate with pie crust as package directs. Flute or crimp edge.
  • Topping: Mix flour, brown and granulated sugar, the cinnamon and walnuts in a medium bowl. Cut in butter (or rub in with fingertips) until mixture forms moist, coarse crumbs that clump together easily.
  • Filling: Peel, halve and core apples. Cut in 1⁄8-in.-thick slices by hand (or with the slicing disk of a food processor). Place in a large bowl, add lemon juice and toss to coat. Mix remaining ingredients in a small bowl, sprinkle over apple slices and toss to coat.
  • Layer apple slices in pie shell, mounding them higher in center. Gently pat topping evenly over apples to form a top crust. Place pie on the baking sheet to catch any drips.
  • Bake 15 minutes. Reduce oven temperature to 350°F and bake 45 minutes longer, or until a skewer meets some resistance when center of pie is pierced (apples will continue cooking after pie is removed from the oven) and topping is golden brown. (If topping browns too quickly, drape a piece of foil loosely over the pie.) Cool pie completely on a wire rack before dusting with confectioners' sugar and serving.

Steps:

  • For the dough: Pulse the flour, granulated sugar and salt in a food processor until combined. Add the butter and pulse until the mixture resembles yellow cornmeal mixed with pea-sized bits of butter. Add the egg mixture and pulse until the dough just comes together. (If the dough is very dry, add up to 1 extra tablespoon cold water.) Remove the dough, gently pat it into a round, wrap it in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour and up to 2 days.
  • For the filling: Meanwhile, put the lemon juice in a medium bowl. Peel and core the apples; cut each in half, and cut each half into 4 wedges. Add the apples and brown sugar to the bowl with the lemon juice, and toss.
  • Melt the butter over medium-high heat in a large skillet. Add the sugared apples and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.
  • Strain the apples in a colander set over a medium bowl to catch all the juices. Shake the colander to extract as much liquid as possible. Return the juice to the skillet and simmer over medium heat until it has thickened and lightly caramelized, about 10 minutes.
  • Toss the apples with the thickened juice, cinnamon, salt, cloves, ginger and nutmeg in a medium bowl. Set aside to cool completely. (The cooled filling can be refrigerated for up to 2 days or frozen for up to 6 months.)
  • For the streusel topping: Whisk the flour, sugar and salt together in a medium bowl. Add the butter and rub it into the flour mixture with your fingers until it has been absorbed. Mix in the almonds.
  • To assemble and bake the pie: Position a rack in the lower third of the oven and place a baking sheet on it. Preheat the oven to 375 degrees F. On a lightly floured work surface, roll the dough into a 12-inch circle. Layer it between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.
  • Ease the dough round into a 9-inch pie pan. Fold and crimp the edges as desired. Add the filling, and spread it out to make an even layer. Squeeze handfuls of the streusel topping, and drop clumps of it on top of the filling to completely cover it.
  • Bake the pie on the preheated baking sheet until the crust and streusel are golden brown, about 1 hour. Let it cool on a cooling rack for at least 3 hours before serving. (The pie keeps well, covered, at room temperature for 24 hours or refrigerated for up to 4 days.)

Steps:

3/4 to 1 cup granulated sugar
1/2 teaspoon kosher salt (we use Diamond Crystal)
1 tablespoon apple-cider vinegar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cardamom
1/8 teaspoon freshly ground black pepper
Pinch of ground cloves
3 tablespoons unbleached all-purpose flour, plus more for dusting
1/2 recipe Test Kitchen's Favorite Pate Brisée (1 disk)
1 large egg, lightly beaten
6 tablespoons unsalted butter, softened
1/4 cup packed light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon kosher salt (we use Diamond Crystal)
3/4 cup unbleached all-purpose flour
1/2 cup quick-cooking rolled oats

Steps:

  • For the Filling: In a large heatproof bowl, toss together apples, granulated sugar (use 1 cup if your apples are very tart), salt, vinegar, and spices. Let stand at room temperature, stirring occasionally, for at least 3 hours, or refrigerate (covered) up to 24 hours.
  • Stir flour into macerated apple mixture, then set a colander over another bowl and drain, reserving liquid. Transfer liquid to a small saucepan; return apples to bowl. Bring liquid to a boil over medium-high heat, whisking constantly, until thickened to the consistency of loose pudding, 1 to 2 minutes. Stir back into apple mixture.
  • For the Crust: Preheat oven to 400°F, with a rack in bottom third. On a lightly floured surface, roll out disk of dough 1/8 inch thick (about 13 inches in diameter). Fit it into a 9-inch pie dish. Trim overhang to 1 inch, fold edges under, and crimp as desired. Brush edges of crust with egg and fill with apple mixture; refrigerate for 15 minutes (to help crust hold its shape in the oven).
  • For the Topping: In a medium bowl with an electric mixer, beat butter, brown sugar, baking powder, and salt until light and creamy, about 2 minutes. Add flour and oats and beat to combine.
  • Crumble topping over filling and bake for 20 minutes. Reduce oven temperature to 375°F and bake until golden brown all over and bubbling in center, 50 to 60 minutes more. (If the top browns too quickly, tent it with foil.) Transfer to a wire rack and let cool completely, at least 6 hours.
