2 tablespoons canola oil
4 boneless skinless chicken breast halves (cubed)
3 garlic cloves (minced)
2 zucchini (diced)
2 yellow squash (diced)
1 onion (minced)
1 red bell pepper (minced)
1 cup frozen corn (thawed)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
2 tablespoons dried chilies (ground)
salsa
guacamole
shredded lettuce
sour cream
salt (to taste)
1 1/4 lbs blended mexican cheese (shredded)
1 (1 lb) bag tortilla chips

Steps:

  • Heat oven 400.
  • Heat oil in a large skillet. Add chicken. Brown well.
  • Add the garlic, zucchini, squash, onion, pepper, corn, cumin, oregano, chilies and salt. Saute 5 minutes.
  • Remove from heat.
  • Layer with the cheese and chips in sprayed baking dishes.
  • Bake 15 minutes.

3 lbs chicken legs (skinned)
2 tablespoons olive oil
2 garlic cloves (minced)
1 large onion (minced)
1 red bell pepper (julienned)
2 teaspoons curry powder
3 teaspoons nuoc nam
2 cups evaporated skim milk
2 tablespoons soy sauce
3/4 cup sweetened flaked coconut
jasmine rice

Steps:

  • Boil chicken until just opaque. Drain. Let cool. Remove meat from bones. Chunk.
  • Heat oil in a wok. Add the garlic and onion. Stir-fry 2 minutes.
  • Add chicken, bell pepper and curry powder. Stir-fry 2 more minutes.
  • stir in the nuoc nam, milk, soy sauce and coconut.
  • Bring to s boil. Reduce. Simmer 3 minutes.
  • Serve on Jasmine rice.

3/4 cup dry roasted salted peanut (ground)
2 cups flaked unsweetened coconut
salt & fresh ground pepper
1/4 cup toasted ground rice powder
4 boneless skinless chicken breast halves (in one inch strips)
2 eggs (beaten)
canola oil (as needed)
1 garlic clove (minced)
1 inch piece fresh ginger (minced)
1 tomatoes (seeded, chopped)
1 serrano chili (seeded, minced)
1 mango (seeded, chopped)
2 tablespoons soy sauce
3 tablespoons honey
1/2 teaspoon curry paste

Steps:

  • Combine the peanuts and coconut in a bowl.
  • Season lightly.
  • In another bowl place rice powder.
  • Prepare chicken.
  • Dredge in rice powder.
  • Dip in egg, then coconut mix to coat.
  • Place on racks over a baking sheet.
  • Chill 1 hour.
  • Bring back to room temperature.
  • Heat about 1 inch of oil in a deep wide skillet.
  • Fry half of the strips until golden all over, about 6-9 minutes.
  • Drain well on paper towels.
  • Keep warm in a low oven while preparing rest.
  • Meanwhile, combine the rest to make salsa.
  • Serve on top.

1 lb boneless skinless chicken breast, cubed
2 tablespoons soy sauce
1 1/2 tablespoons cornstarch
1 1/2 tablespoons water
1 garlic clove (minced)
4 small dried chilies
2 tablespoons soy sauce
1 tablespoon white wine vinegar
1 tablespoon sugar
1 teaspoon cornstarch
1/2 teaspoon salt
1 teaspoon sesame oil
2 tablespoons canola oil
1 teaspoon ginger (minced)
1/2 cup peanuts (chopped, toasted)

Steps:

  • Combine the chicken, soy sauce, cornstarch, water, garlic and chilies. Let stand 30 minutes.
  • Combine the soy sauce, vinegar, sugar, cornstarch, salt, sesame oil and ginger.
  • Heat oil in a wok.
  • Add chicken mix. Stir-fry 3 minutes.
  • Remove with a slotted spoon.
  • To wok add sauce mix. Cook 1 minute.
  • Return chicken. Heat through. Add peanuts.
