Shrimp bisque is such an elegant soup that you wouldn't think it would be so quick and easy to make - but it is.

1 1/2 pounds shrimp ( cooked, deveined and with shells removed)
6 tablespoons butter
2 tablespoons onion (grated)
3 cups milk (warm)
1 cup cream
salt (if needed)
1 pinch paprika ( or freshly ground white pepper)
1 pinch nutmeg
3 tablespoons sherry
2 tablespoons parsley ( or chives)
extra fresh chives or chopped parsley for garnish

Steps:

  • Put the shrimp through a meat grinder or blender and grind.
  • Cook the butter and onion, covered, in the top of a double boiler over, not in, hot water, for 5 minutes. Add the ground shrimp and milk and cook for 2 minutes. Stir the cream in slowly. Heat, but do not boil. Add the remaining ingredients. Heat all for about 3-5 minutes without letting it come to a boil.
  • Serve at once.
  • Garnish with chopped fresh chives or parsley.

4 (1 1/2-pound) lobsters
1 1/2 cups tomato paste
1 1/2 cups coarsely chopped onion
1 1/2 cups coarsely chopped celery, including leaves
1 1/2 cups coarsely chopped carrot
1 sprig thyme
3 sprigs flat-leaf parsley, plus extra, for garnish
1/2 teaspoon saffron
6 cups heavy cream
1 cup cream sherry
2 tablespoons freshly ground black pepper
1/4 cup cornstarch

Steps:

  • Fill large stockpot with water and bring to a boil. There should be enough water to cover lobsters completely when immersed. Place live lobsters in boiling water head first to minimize splashing. When water re-boils, turn down the heat, and simmer for 20 minutes. Do not overcook lobsters. Remove lobsters from the pot using tongs; save all the water in stockpot as this is now a flavorful stock to be re-used.
  • Place 10 cups of stock in a clean stockpot and put on low heat. Clean claws and tails of lobsters and reserve meat, legs, and swimmerets. After lobsters are cleaned, place shells in stockpot with 10 cups of stock. Cut bodies in quarters and place in stockpot, making sure to include all roe and tomalley in pot. Add 1 cup tomato paste and simmer on low heat for 1 1/2 hours, stirring occasionally. Be careful not to have heat so high as to burn stock. Pour entire contents of pot through sieve into clean stockpot; this should now be 8 cups of glorious red stock.
  • Place onions, celery, carrots, thyme, parsley and saffron in a large saute pan, add 4 cups stock from original stock pot and put on high heat for 30 minutes, stirring every 5 minutes. Add 1/2 cup tomato paste and black pepper. Turn down heat and simmer 30 minutes, stirring every 5 minutes. Press entire contents of saute pan through sieve into stockpot of 8 cups previously made stock.
  • To finish Bisque, put pot on medium heat. Add heavy cream slowly, using whisk to blend. Add sherry. Simmer on low heat for 20 minutes; bisque will thicken slightly. Mix cornstarch with 1/4 cup water and slowly add to bisque with whisk. Simmer on low heat for another 20 minutes.
  • If you prefer your bisque to be thicker, you may add more cornstarch, or perhaps, flour, but have found the bisque thickens nicely over low heat, and additional cornstarch or flour takes away from the wonderful flavor.
  • Place pieces of previous cleaned lobster meat in bowl and add 1 cup of bisque. Garnish with legs and swimmerets around the bowl and one parsley leaf in center, if desired.

LOBSTER OR CRAB BISQUE

Rich and delicious seafood bisque! I use chicken broth because it's cheap and easy to find, but if you are so inclined, you could use fresh lobster stock or 3 ounces of Glace de Fruits de Mer Gold reconstituted in 4 cups of hot water.

1 cup onion, minced
1 cup carrot, minced
2 (10 1/2 ounce) cans chicken broth
4 tablespoons flour
6 tablespoons butter
1 cup heavy cream
1/2 cup cooking sherry
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon cayenne pepper
fresh chives, minced

1/2 lb raw lobsters, chopped or 1/2 lb lump crabmeat

Steps:

  • Saute onion and carrot in 2 tablespoons butter until soft. Set aside.
  • In 4 quart saucepan, melt 4 tablespoons butter and add flour, whisking constantly over medium heat until roux becomes light brown (about 5 minutes). DO NOT BURN!
  • Slowly add chicken broth, whisking constantly to ensure mixture stays smooth.
  • Add onions and carrots, cover, and simmer for 1/2 hour.
  • Add cream, sherry, lemon juice, Worcestershire sauce, cayenne pepper, salt, and lobster or crab and simmer an additional 5 to 10 minutes.
  • Garnish with fresh minced chives if desired.

½ cup dry white wine

Steps:

  • Melt the butter in a large saucepan over medium-low heat. Add the mushrooms, onion, celery, and carrot. Cook and stir until tender, about 10 minutes. Stir in the chicken broth, and season with salt and cayenne pepper. Bring to a boil, then simmer for 10 minutes.
  • Pour the vegetable and broth mixture into the container of a blender, and add 1/4 cup of the lobster meat. Cover, and process until smooth. Return to the saucepan, and stir in the half-and-half, white wine, and remaining lobster meat. Cook over low heat, stirring frequently until thickened, about 30 minutes.

I can't remember where the original recipe came from, but I have worked on this for some time and it is so good. Simple, quick and yummy. You can substitute crawfish or shrimp for the lobster.

1/2 lb lobster meat, cut into small chunks
2 tablespoons minced shallots
2 tablespoons chopped green onions
3 garlic cloves, crushed
1/4 cup white wine
2 teaspoons Worcestershire sauce
2 teaspoons Tabasco sauce
1 teaspoon dried thyme
6 tablespoons dry sherry
1 teaspoon paprika
1 cup hot water
1 teaspoon lobster base (better than boulion)
4 ounces tomato paste
2 bay leaves
2 cups heavy whipping cream
4 tablespoons butter

Steps:

  • In a saute pan heat a little oil over med-high heat and saute shallots, onions, and garlic for one minute.
  • Deglaze the pan with the white wine.
  • Add the worcestershire, tabasco, and thyme and saute for another minute.
  • Deglaze the pan with the sherry.
  • Add the paprika, hot water and lobster base and combine well.
  • Stir in tomato paste and add the bay leaves.
  • Simmer for 10 minutes.
  • Whisk in heavy cream and the butter and bring to a boil.
  • Add the lobster and simmer until cooked through.
  • Serve with crusty garlic bread.

2 steamed fresh lobster tails
4 tablespoons butter
1 small white onion, finely chopped
2 stalks celery, finely chopped
2 garlic cloves, minced
1/3 cup all-purpose flour
3 cups chicken broth
1/2 lb steamed medium shrimp, peeled, deveined, and chopped
2 cups half-and-half
1 teaspoon creole seasoning
1 round loaf sourdough bread
olive oil
fresh parsley
shredded parmesan cheese

Steps:

  • Remove lobster meat from shell; coarsely chop and set aside.
  • In a large saucepan, melt butter over medium heat. Add onion, celery, and garlic; cook for 5 minutes, stirring occasionally.
  • Stir in flour, and cook for 2 minutes.
  • Stir in chicken broth; cook for 10 minutes, stirring occasionally, until thickened.
  • Add lobster meat and shrimp. Stir in half-and-half and Creole seasoning; cook for 10 minutes, or until heated through, stirring occasionally.
  • Meanwhile cut out the center portion of a round loaf of bread. Brush with olive oil and place on a sturdy cookie sheet. Bake at 350F for about 15 minutes to seal bowl.
  • Ladle soup into bread bowl and sprinkle on parmesan and parsley if desired.
  • Serve immediately.

  • In a saucepan, melt the butter. Stir in the flour. Simmer on low heat, stirring often, until mixture turns golden and has a slightly nutty flavor, about 10 minutes. Set aside to cool.
  • In a large soup pot, melt the 1/2 cup butter. Add peppers, onions, garlic, shrimp and lobster. Saute until vegetables are soft and shrimp is just pink. Add white wine, brandy, tomatoes, tomato juice, clam juice, lobster base and heavy cream. Bring just to a simmer.   • In a small frying pan place 1/4 cup chicken broth and the onion. Cook over a low heat for 5 to 7 minutes.

16 ounces lobster tails (I used four 4-oz sized tails)
15 ounces seafood stock (okay to use water instead)
4 cups water ((I just filled the 15-oz can twice))
1 teaspoon Herbes de Provence ((aromatic blend of dried herbs including rosemary, oregano, thyme, basil, savory, sage and lavender))
1 teaspoon salt
4 tablespoons butter
1 cup yellow onion (finely chopped (1 medium sized onion))
1 cup carrots (peeled and finely chopped (3 medium sized))
1 cup celery (finely chopped (4 medium sized stalks))
4 cloves garlic (minced)
2 tablespoons tomato paste
3 tablespoons all-purpose flour
1 1/2 cups dry white wine
lobster stock (strain and use all of it)
1 cup heavy cream
salt and pepper (to taste)

Steps:

  • Split lobster tails lengthwise with sharp kitchen shears. Remove meat and set aside. Add empty shells to stockpot or 4-qt sauce pan. Cover with seafood stock and water. Add Herbes de Provence and salt. Bring to a boil over high heat, then reduce heat as low as you can while still maintaining a simmer. Allow to simmer, uncovered, for about 15 minutes.
  • Add the lobster meat, cover with lid, and let simmer for 5 minutes. Remove when meat is bright red and white. If any part is still translucent, continue to simmer until cooked. Remove meat from pot and transfer to a cutting board. Cut into small pieces and refrigerate until ready to add to bisque.
  • While the lobster stock is cooking, you can begin to make the bisque at the same time.
  • Heat butter over medium high heat in a large pot. Add the onions, carrots, and celery. Stir to coat in butter and cook until soft, about 5-10 minutes, stirring occasionally to prevent burning.
  • When vegetables are just about done and begin to stick to the bottom of the pan, add garlic, stir to combine, and allow to cook for 1-2 minutes.
  • Add tomato paste, stir well to coat vegetables, and cook for 1-2 minutes.
  • Reduce heat to medium. Sprinkle over flour over mixture, stir well to combine, and cook while stirring frequently to prevent burning for an additional 2 minutes. The mixture should really start sticking to the bottom of the pan and turning brown. Do not allow it to burn.
  • Add wine to deglaze pan. Stir well with a flat bottom wooden spoon, scraping the bottom of the pan. Allow in wine to simmer for several minutes. The liquid will reduce and the mixture will become thick.
  • Set a fine mesh sieve or strainer over your pot and pour the lobster stock through the strainer into your pot. Discard shells. Stir broth into bisque base until well combined. Reduce heat to lowest setting to maintain a gentle simmer and allow to cook for about 30 minutes to allow flavors to develop. Stir occasionally during this time.
  • Remove bisque from heat. Use an immersion blender to purée the soup right in the pot. Alternatively, transfer to a blender to purée and then return bisque to pot.
  • Add heavy cream and chopped cooked lobster pieces to bisque and stir well. Heat over medium-low heat until bisque is heated through. Season with salt and pepper, as desired. Serve hot with crusty bread on the side.

3 lbs lobsters, whole (2 x 1.5 pounds or substitute 3 lbs unpeeled shrimp)

Steps:

  • Blanch lobsters in salted, boiling water for 12 minutes and then immediately plunge into an ice bath. Crack lobster shells and remove meat. Set meat aside. If using shrimp, peel shrimp and set meat aside.
  • Heat rondeau (a large pot, wide and low, with 2 handles) or other large pot to medium and add butter.
  • When the butter stops bubbling, add lobster or shrimp shells, celery, carrots, onion, garlic, and tomato puree. Cook until lightly caramelized.
  • Deglaze with white wine and add thyme, bay leaves, and water. Cook for at least 30 minute Strain stock and discard solids.
  • Melt butter in a skillet over medium-low heat. Stir in the flour and cook over low heat for 5 minutes, stirring frequently. Add to strained liquid and stir to distribute, allowing mixture to thicken.
  • Add brandy, sherry, and cream. Season with smoked paprika, salt and pepper.
  • Saute lobster or shrimp meat in additional butter, garlic, salt, and pepper. serve with bisque.

  • Gather the ingredients.
  • Melt the butter in a Dutch oven or large saucepan over medium-low heat; add the chopped green onion and celery. Sauté, stirring, until tender, about 2 minutes.

  • Warm the milk in another saucepan over medium heat.

2 tbsp butter
1 medium yellow onion (finely chopped)
2 stalks celery (finely chopped)
2 carrots (peeled and finely chopped)
1/2 teaspoon kosher salt and pepper to taste
2 cloves garlic (minced)
2 tbsp tomato paste
2 tbsp all-purpose or gluten-free flour
5 cups seafood or fish stock
1/2 cup dry white wine
1 bay leaf
3 sprigs fresh thyme
chopped chives (for garnish)

Steps:

  • Over medium heat, heat butter in a large pot.
  • Add onion, carrots and celery. Cook for 6 to 7 minutes, or until soft.
  • Add salt and pepper to taste and stir in garlic and tomato paste. Cook for 2 minutes or until tomato paste covers the vegetables.
  • Sprinkle flour on top and cook for 1 minute.
  • Add seafood stock and wine. Stir in with bay leaf and thyme.
  • Reduce heat and let mixture simmer until liquid is reduced and flavors combine.
  • Stir occasionally and let simmer for 30 minutes.
  • Remove bay leaf and thyme then puree in a blender until smooth, in batches as needed.
  • Bring heat back to medium-low. Add the lobster tails. Cook for 3 to 5 minutes or until cooked through.

16 cups water
1 1/2 cups dry white wine
two 1 1/4-pound live lobsters
3/4 pound large shrimp (about 18), shelled, reserving shells, and deveined if desired
2 medium onions
1 fennel bulb, chopped (about 2 cups), reserving fronds for garnish if desired
4 large carrots, chopped
1 celery rib, chopped
2 bay leaves
3/4 teaspoon dried thyme, crumbled
1/4 cup fresh parsley sprigs
1/4 teaspoon black peppercorns
the zest of 1 navel orange, removed in strips with a vegetable peeler
3 garlic cloves, minced
2 tablespoons olive oil
1/4 teaspoon saffron threads
a 28- to 32-ounce can whole tomatoes, drained and chopped
1/4 cup heavy cream
1 1/2 tablespoons Pernod, or to taste
1 tablespoon fresh lemon juice, or to taste

Steps:

  • In a large (5-to 6-quart) kettle combine water and 1 cup wine and bring to a boil. Plunge lobsters into liquid headfirst and return liquid to a boil. Simmer lobsters, covered, 9 minutes. With tongs plunge lobsters immediately into cold water to stop cooking, reserving cooking liquid.
  • Working over a bowl to catch the juices, twist off tails and claws and reserve juices. Discard tomalley, head sacs, and any roe and remove meat from tails and claws, reserving it separately.
  • To reserved cooking liquid add lobster shells, reserved lobster juices and shrimp shells, 1 onion, quartered, 1 cup fennel, half of carrots, celery, 1 bay leaf, thyme, parsley, peppercorns, and zest. Simmer mixture gently, uncovered, skimming froth occasionally, 1 1/4 hours.
  • Strain stock through a large sieve set over a large bowl and pour into cleaned kettle. Boil stock until reduced to about 6 cups and return to bowl. Stock, cooked lobster, and shelled raw shrimp keep, covered separately and chilled, 1 day.
  • In a kettle cook remaining onion, chopped fine, remaining 1 cup fennel, remaining carrots, remaining bay leaf, garlic, and salt and pepper to taste in oil over moderate heat, stirring, until vegetables are softened.
  • Add remaining 1/2 cup wine and boil until mostly evaporated. Add saffron, tomatoes, and shellfish stock and simmer, covered, 20 minutes. Add shrimp and reserved lobster claw meat (reserving tail meat) and simmer 2 minutes, or until shrimp are cooked through. Remove soup from heat and remove 6 shrimp, reserving them. Discard bay leaf.
  • In a blender purée soup in batches until smooth, transferring as it is puréed to a very fine sieve set over a saucepan. Force soup through sieve, pressing hard on solids, and whisk in cream, Pernod, and salt and pepper to taste. Heat bisque over moderate heat until hot (do not boil) and stir in lemon juice.
  • Chop fine reserved shrimp and lobster tail meat and divide among heated soup bowls. Ladle soup over shellfish and garnish with reserved fennel fronds.

2 stalks chopped celery
1 with top, chopped green onion
4 tablespoons butter
1 clove minced garlic
1/3 cup all purpose flour
2 cups half and half
3 1/2 cups fish stock
3 tablespoons chopped fresh parsley
8 oz cooked or lobster meat, chopped shrimp
3 slices white bread

Steps:

  • In a medium saucepan, add celery, onions and butter, stirring occasionally. When tender add garlic and mix together. Stir in flour and half and half. Let simmer for 5 minutes.
  • Stir in fish stock and parsley. Cook for 10 minutes until it thickens. Add shrimp meat and let simmer for 10 minutes or until heated through. Stir occasionally. Add salt, to taste.
  • When ready, serve with croutons.
  • Homemade Croutons:
  • Preheat oven to 350 °F.
  • Cut bread with a heart shaped cookie cutter. Place onto a cookie sheet and bake until toasted.

  • Whisk in sherry until smooth, scraping brown bits from bottom of pan. Stir in broth and half-and-half; bring to a gentle boil and cook until thickened, about 5 minutes. Stir in shrimp and lobster and simmer 5 minutes, just until shrimp turn pink. Garnish each serving with chives, if desired.
