Here's what you need: hearts of palm, celery, fresh dill, fresh chives, old bay seasoning, salt, pepper, lemons, mayonnaise, long potato rolls, melted butter

28 oz hearts of palm, 2 jars, drained
celery, 1 large stalk, or 2 small stalks
2 tablespoons fresh dill, chopped
2 tablespoons fresh chives, plus more for garnish
1 teaspoon old bay seasoning
salt, to taste
pepper, to taste
1 ½ lemons, juiced
⅓ cup mayonnaise
4 long potato rolls
2 tablespoons melted butter

Steps:

  • Cut the hearts of palm into oblique chunks and add them to a large bowl.
  • Mince the celery and add to the bowl with the hearts of palm.
  • Add the dill, chives, Old Bay seasoning, salt, pepper, lemon juice, and mayonnaise and stir to combine.
  • Brush the insides of the potato buns with the melted butter.
  • Toast in a medium skillet over low heat for 2-3 minutes, until golden.
  • Fill the buns with the hearts of palm mixture.
  • Garnish with chives.
  • Enjoy!

⅓ cup mayonnaise, plus 2 tablespoons, divided
2 lemons, juiced
1 teaspoon lemon zest

2 lemons, halved
Sea salt
3 1 1/4-to-1 1/2-pound live lobsters
1/3 cup mayonnaise
7 tablespoons unsalted butter, melted
6 top-split hot dog buns
1/4 cup roughly chopped celery leaves
1/4 teaspoon celery salt

Steps:

  • Fill a large steamer or pot with about 2 inches of water. Squeeze the juice of 1 lemon into the water, then add the lemon halves and 1 tablespoon sea salt to the pot. Bring to a boil over medium heat.
  • Place the lobsters in the steamer basket or directly in the pot; cover and steam until the shells turn bright red, 8 to 10 minutes. Remove from the pot with tongs and rinse under cold water to cool slightly.
  • Remove the meat from the lobster shells: Twist off the claws, then break off the tail. Pull off the flippers. Insert your thumb into the flipper end of the tail and force out the meat. Crack the claws with the flat side of a knife or a lobster cracker; remove the meat. Roughly chop the lobster meat. Transfer to a bowl and chill 15 minutes.
  • Meanwhile, whisk the mayonnaise, 4 tablespoons melted butter and the juice of the remaining lemon in a large bowl. Add the lobster meat and toss to coat. Season with salt.
  • Heat a grill pan or skillet over medium heat. Brush the outside of the hot dog buns with 2 tablespoons melted butter. Toast the buns until slightly golden, about 1 minute per side. Divide the lobster salad among the buns. Drizzle with the remaining 1 tablespoon melted butter and sprinkle with the celery leaves and celery salt.

Summer is when lobster is most abundant and least expensive, so I wanted to create a dish that utilized this elegant ingredient without messing around with it too much. The beauty of this lobster roll is that it lets the taste of fresh summer lobster meat shine. Too often, lobster rolls are made with overcooked lobster meat that's been drowned in mayo. Here, the lobster meat is par-cooked, then finished in melted butter, so it's perfectly done. Just a kiss of mayo with mustard won't overpower the purity and succulence of the lobster.

Kosher salt and freshly ground black pepper
Two 1 1/4- to 1 1/2-pound live lobsters
3 sticks unsalted butter, plus additional for toasting buns
1/2 teaspoon seafood seasoning, such as Old Bay
Zest of 1 lemon
1 tablespoon mustard powder, preferably Colman's
1/2 cup mayonnaise, preferably Hellmann's
1/4 cup Dijon mustard
1 tablespoon lemon juice
1 heaping tablespoon finely chopped fresh dill
4 brioche hot dog buns
Chopped fresh chives, to garnish

Steps:

  • Fill a large pot halfway with water. Place over medium-high heat and bring to a boil. Add a generous amount of kosher salt to make the water taste salty. Add the lobsters and boil, covered, for 6 minutes. Remove the lobsters and let cool to room temperature, about 1 hour.
  • In a small saucepan, heat the butter on low heat. Add the seafood seasoning, lemon zest and 1 teaspoon each of salt and pepper. Keep the butter on low while removing the lobster meat from the shells.
  • Meanwhile, make the spicy mustard mayonnaise. In a small bowl, combine the mustard powder and 1 tablespoon water until smooth. In a separate bowl, whisk together the mayo, Dijon, lemon juice and salt and pepper to taste. Whisk in the mustard powder mixture and the dill. Set aside.
  • Twist off the tails and claws of each lobster, reserving the body for another use, such as stock. Remove the lobster meat from the tails and claws and roughly chop into large pieces. Place the meat in the melted butter and poach until cooked through, 2 to 3 minutes.
  • To prepare the buns, lightly butter each side of the buns. Place on a frying pan or griddle on medium heat to toast. Remove and fill each bun with the butter-poached lobster and drizzle with the spicy mustard mayo. Sprinkle with chives.

1 1/2 lemons
1 head garlic, split horizontally
1 thyme bundle
2 dried bay leaves
2 (1 1/2-pound) lobsters
1/2 to 3/4 cup mayonnaise
1 celery rib, cut into 1/4 inch dice
1/2 bunch of chives, finely chopped
Juice of 1/2 lemon
Celery salt
4 tablespoons (1/2 stick) of unsalted butter
1 clove garlic, smashed
4 top split hot dog rolls

Steps:

  • To cook the lobsters:
  • Fill a large pot with water and season it generously with salt. Squeeze the lemons into the water and drop them in and toss in the garlic, thyme bundle and bay leaves. Bring the water to a boil and drop the lobsters in. Cover and cook for 11 minutes. Remove the lobsters from the pot and let cool.
  • Remove the lobster claws, knuckles and tails from the shells and coarsely chop.
  • In a large mixing bowl combine the chopped lobster, 1/2 cup of mayo, celery, chives and lemon juice. Mix together and season with celery salt. Add remaining 1/4 cup of mayo if you like the mix a little creamier (this is traditionally a very low mayo type deal). Taste to make sure the lobster is delicious and reserve.
  • Toss the butter and garlic into a large saute pan and melt the butter. When the butter is melted, bubbly and very garlicky smelling, remove the garlic clove and discard it. Add the hot dog rolls to the pan and cook in the garlic butter on both sides until the butter is absorbed and the rolls and crispy on both sides.
  • Divide the reserved lobster between the 4 buttered rolls and serve immediately.

500g cooked lobster
5 tbsp mayonnaise
1 tbsp lemon juice
2 celery sticks, stringed and diced
small pinch of cayenne , plus extra to serve
1 tbsp melted butter
6 good-quality hot dog buns (brioche if you can get them)
snipped chives (optional)
good-quality potato crisps , to serve
gherkins , to serve

Steps:

  • Crack the lobster, remove all the meat, cut it into large chunks and set aside. (Lobster shells can be kept to make a delicious soup.)
  • Mix the mayonnaise with the lemon juice, celery, cayenne and a small pinch of salt, then fold the lobster through to combine. Taste and adjust the seasoning. If eating straight away, leave at room temperature - or chill for up to 1 day in advance.
  • To serve, split the rolls and lightly butter on all sides, including the outside. Heat a griddle pan and griddle the rolls in batches on all sides. Divide the lobster mix between the rolls, scatter with chives (if using) and serve on a platter with napkins, a bowl of crisps and some gherkins.
