8 ounces macaroni
6 tablespoons salted butter, plus more for buttering the pan
2 lobster tails, meat removed and chopped into large chunks
1/4 cup all-purpose flour
2 cups whole milk
1/2 cup half-and-half
Salt and freshly ground black pepper
1 cup shelf-stable grated Parmesan, such as Kraft
3/4 cup grated sharp Cheddar
3/4 cup grated fontina cheese
4 ounces goat cheese (chevre)

Steps:

  • Bring a large pot of water to a boil. Cook the macaroni until still very firm; the macaroni should be too firm to eat right out of the pot. Drain and set aside.
  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan generously.
  • Melt 2 tablespoons butter in a large skillet over medium-high heat. When it just starts to brown, throw in the lobster and stir and cook for 1 minute. Set the lobster aside.
  • Add the remaining 4 tablespoons butter to the same skillet. Sprinkle in the flour, whisking to combine. Let the roux cook for a minute or so, whisking constantly. Pour in the milk, whisking constantly, then cook the white sauce until thick and bubbly, 3 to 5 minutes. Next, add the half-and-half, 1 teaspoon of salt and plenty of black pepper, and stir to combine. Add the Parmesan (holding back some for the topping), Cheddar, fontina and goat cheese and stir them around to melt. Stir in the lobster and macaroni.
  • Pour the mac and cheese into the prepared pan and top with the reserved Parmesan. Bake until bubbly and a slight crust forms on top, 20 to 25 minutes.

1 pound cavatappi or elbow macaroni
1 quart milk
8 tablespoons (1 stick) unsalted butter, divided
1/2 cup all-purpose flour
12 ounces Gruyere cheese, grated (4 cups)
8 ounces extra-sharp Cheddar, grated (2 cups)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon nutmeg
1 1/2 pounds cooked lobster meat
1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Steps:

  • Preheat the oven to 375 degrees F.
  • Drizzle oil into a large pot of boiling salted water. Add the pasta and cook according to the directions on the package, 6 to 8 minutes. Drain well.
  • Meanwhile, heat the milk in a small saucepan, but don't boil it. In a large pot, melt 6 tablespoons of butter and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. Still whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1 tablespoon salt, the pepper, and nutmeg. Add the cooked macaroni and lobster and stir well. Place the mixture in 6 to 8 individual gratin dishes.
  • Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

1/2 ounce lobster roe (see Cook's Note)
12 tablespoons (1 1/2 sticks) unsalted butter, softened
1 cup panko breadcrumbs
Kosher salt and freshly ground black pepper
1 pint (2 cups) milk
1 pint (2 cups) heavy cream
1 tablespoon fresh rosemary, finely chopped
1/3 cup all-purpose flour
8 ounces white American cheese, diced, at room temperature
8 ounces Swiss cheese, grated, at room temperature
1/3 cup grated Parmesan, at room temperature
1 tablespoon truffle butter
1 pound elbow pasta, cooked to al dente in salted water, drained well and cooled
8 ounces picked lobster meat, roughly chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Make the lobster butter: In small bowl, add the lobster roe and macerate with a whisk. Add 2 tablespoons butter and emulsify the roe with the butter.
  • Make the breadcrumbs: Heat 4 tablespoons butter in a medium skillet over medium heat until melted and foamy, about 1 minute. Stir in the breadcrumbs and cook, stirring often, until golden brown, about 4 minutes. Season with salt and pepper to taste and set aside.
  • Make a bechamel: In a medium saucepan, heat the milk and heavy cream.
  • In a large saucepan, melt the remaining 6 tablespoons butter over medium heat. Add the rosemary and saute until fragrant, 2 to 3 minutes. Add the flour and cook, stirring constantly, until it forms a light golden paste (make sure it doesn't brown), 5 to 6 minutes. Add the warm milk and cream and whisk until incorporated. Bring to a simmer and cook, stirring occasionally, until the mixture is thickened and coats the back of a spoon, about 15 minutes. Add the cheeses and whisk while the bechamel cooks, but do not let it boil. Cook until the cheeses are melted, then remove from the heat and season to taste with salt.
  • Add the lobster butter and truffle butter to the bechamel and stir to fully incorporate. Add the cooked pasta and lobster meat and stir gently to combine. Transfer to a 9-by-13-inch baking dish and sprinkle with the breadcrumbs. Bake until heated through and bubbling around the edges, about 20 minutes.

Two 1 1/4-pound lobsters
3 tablespoons unsalted butter
1 shallot, minced
2 to 3 tablespoons cognac
1 cup shrimp stock
1/2 cup heavy cream
Juice of 1/2 lemon
1 sprig fresh tarragon, coarsely chopped
1 quart (4 cups) heavy cream
1/2 cup finely grated Parmesan
2 tablespoons Dijon
2 teaspoons Worcestershire sauce
1 teaspoon hot sauce, such as Tabasco
1/4 teaspoon freshly ground black pepper
Kosher salt
3 to 3 1/2 cups grated Gruyere
1 pound elbow macaroni

Steps:

  • For the lobster and sauce: Bring a large stockpot filled three-quarters of the way with water to a rolling boil over high heat. Add the lobsters to the pot, making sure that each lobster is completely submerged. Cook the lobsters until they are bright red, about 8 minutes, then drain and set aside.
  • For the mac and cheese: Add the 1 quart heavy cream, Parmesan, Dijon, Worcestershire, hot sauce, pepper and a pinch of salt to a large skillet over medium heat. Simmer gently, whisking until smooth. Add the Gruyere and turn off the heat. Carefully stir and let melt. Taste for seasoning and stir occasionally until melted and smooth.
  • Bring 4 quarts water to a rolling boil in a large pot over medium heat. Add salt and bring the water back to a boil. Add the macaroni and stir with a wooden spoon to ensure the macaroni does not stick to the bottom of the pot. Cook until the macaroni is still quite firm, about 7 minutes. Drain and transfer to a glass bowl. Add the cheese sauce and stir to combine; keep warm.
  • Carefully remove the lobster meat from the tails, claws and legs, taking care to remove any cartilage from the claw meat. Cut the meat into bite-size pieces, put in a medium bowl and then season with a pinch of salt. Discard the tail and body shells but keep the heads. Cut the heads in half.
  • For the lobster sauce: Melt 1 tablespoon butter in a medium skillet over medium-low heat. Add the shallots and cook until tender, about 4 minutes, then add the head halves and steam in the shallot butter, about 3 minutes. Carefully add the cognac and cook down until there is very little liquid left in the skillet, 2 to 3 minutes, then add the shrimp stock. Raise the heat to high and cook until reduced by about half, 3 to 4 minutes.
  • Add the 1/2 cup heavy cream and the remaining 2 tablespoons butter. Stir to combine and return to a simmer until the butter melts, then remove from heat. Add the lemon juice, then strain through a fine-mesh sieve into a bowl and add the chopped tarragon. Add the lobster and gently toss to fully coat. Season to taste with salt.
  • Fill serving bowls halfway with macaroni and cheese and top with the lobster and sauce. Repeat with another layer of macaroni and top with the remaining lobster and sauce. Finish with a pinch of salt.

1 frozen lobster (around 500g), defrosted
1 tbsp olive oil
1 onion , roughly chopped
big pinch cayenne pepper
1 tbsp tomato purée
1l milk
400g macaroni
50g butter
150ml white wine
50g plain flour
150g tub brown crab meat (or fifty-fifty white and brown)
1 tsp Dijon mustard
160g extra mature cheddar , grated, plus extra to top
2 garlic cloves
2 tbsp olive oil
50g breadcrumbs
1 lemon , zested

Steps:

  • Take the lobster and twist the claws off, then use a rolling pin to crack the claws and pick the meat out. Peel the tail, exposing and removing the fleshy meat. Roughly chop all of the meat, then cover and set aside in a bowl in the fridge. Bash all the pieces of shell with the rolling pin to break them up a bit.
  • Heat the oil in large frying pan over a high heat, add the onion and a large pinch of salt and cook for around five minutes until softened and well coloured, then add the lobster shell and fry for a couple of minutes more. Add the cayenne pepper and tomato purée and stir to coat everything, the turn the heat down to medium and add the milk. Stir well, then remove from the heat when it is just coming to a simmer and set aside for 30 mins to infuse. Meanwhile, mix the garlic, olive oil and lemon zest together with some seasoning to make the breadcrumb topping, then set aside. Strain the milk mixture into a jug and discard the shell.
  • Heat oven to 180C/160C fan/gas 4. Boil the macaroni in salted water until it has a slight bite (around two minutes less than on the packet instructions), drain and set aside. Melt the butter in a large frying pan over a medium heat until foaming, then add the wine and cook for 5 minutes until the wine has reduced by half, then whisk in the flour to make a sandy paste. Turn down the heat and pour the strained milk into the pan a little at a time, whisking constantly and allowing each addition of milk to be fully absorbed before adding any more.
  • Add the chopped lobster meat, mustard, crab and cheese. Stir well until the cheese has melted, then season to taste. Tip in the macaroni and stir to coat everything in the sauce. Tip into an ovenproof baking dish (or six small ones) and top with a sprinkling of grated cheese and the garlic breadcrumbs. Bake for 20 mins until golden and bubbling, then allow to cool a little before serving.

8 ounces elbow macaroni (we used more "designer" looking noodles)
16 ounces heavy cream
8 ounces shredded sharp cheddar cheese
4 ounces cream cheese
6 ounces fresh grated parmesan cheese
4 ounces shredded gruyere cheese
1 lb lobster meat, chopped
1/2 cup breadcrumbs
2 garlic cloves, minced
1 shallot, minced
1 tablespoon olive oil
1 dash salt
1 dash pepper

Steps:

  • Bring salted water to boil and add noodles. Cook 8 - 10 minutes (do not overcook). in a double boiler, combine cheddar cheese, 4 oz. parmesan cheese, cream cheese and Gruyere cheeses. Heat until blended.
  • Gradually add cream, stirring until smooth.
  • In a large pan, heat olive oil, add shallots and garlic. Saute. Add lobster meat and cook until opaque. Remove from heat.
  • Drain pasta. Add to lobster mix, then add cheese sauce, salt and pepper. Mix well.
  • Place in casserole dish, sprinkle with remaining parmesan cheese and top with breadcrumbs.
  • Bake at 350°F for 6-8 minutes until breadcrumbs are golden brown.

1 pound macaroni
1 (2 pound) lobster, split
1 small onion, diced
2 tablespoons unsalted butter
2 cups milk
1 small clove garlic, minced
1 shallot, chopped
10 black peppercorns
Kosher salt

5 tablespoons flour, plus 5 tablespoons unsalted butter, or 2 tablespoons cornstarch and water
2 pounds grated cheese, mixture of Gruyere, extra sharp cheddar, and Pecorino Romano
3 tablespoons panko bread crumbs (Japanese)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large pot, cook the pasta until al dente. Drain the pasta and reserve, also reserve the water. Steam the lobster over the water for 3 minutes, then cool, remove the meat, and reserve both the meat and the shell. In a medium sauce pot, sweat the onions in 2 tablespoons butter, and remove. In the same pot, scald the milk and add the garlic, shallots, and peppercorns. Add the lobster shells to create a fish stock. Bring the "stock" to a boil, then reduce the heat to a simmer, season with salt and pepper, and cook for 20 minutes.
  • Meanwhile, make a roux by combining 5 tablespoons of flour with 5 tablespoons of butter in a small sauce pot over medium-high heat. Cook until it thickens and develops a golden yellow color. Set aside roux. Strain the stock and return it to the pan. Once the stock begins to simmer again, start whisking the cheeses in slowly until fully incorporated (this will also thicken the sauce). Add the roux to thicken a little more, and then add the reserved onions and lobster meat. Toss the sauce with the pasta, and transfer it to a small baking dish. Top with bread crumbs, and bake for 8 to 12 minutes, or until bubbly and browned.

2 (1 1/2-pound) lobsters
1/2 cup white wine
1/2 cup white wine vinegar
1 tablespoon black peppercorns
1 large shallot, sliced
1/2 cup heavy cream
12 ounces high quality butter, cubed
12 ounces elbow pasta
Lobster shells (from above)
2 cups vegetable oil
1 tablespoon paprika
4 ounces high quality butter
8 ounces mascarpone
Freshly ground white pepper
Chervil, to garnish

Steps:

  • For the lobster:
  • Separate the tails and claws from the lobster and place the claws in a heat proof container large enough to cover completely with water, do the same with the tails. Bring a large pot of salted water up to a boil and pour over the tails and claws, let the tails sit for 6 minutes and the claws for 8 minutes, remove and plunge into an ice bath. When the lobster parts are cool, remove the meat from the shell. Keep the meat refrigerated and save the shells for the lobster oil.
  • For the beurre blanc:
  • Place white wine, vinegar, peppercorns, and shallots in a nonreactive pan and reduce down until au sec (almost dry), add the heavy cream and reduce down by 2/3 and drop in butter slowly, whisking constantly. Strain through a fine mesh sieve and hold warm till ready to use.
  • For the pasta:
  • Bring large pot of salted water to a boil and cook the elbow pasta for 1 minute less than the package indicates. Drain and cool and hold until ready for use.
  • For the lobster oil:
  • Take the bodies from the lobster and place in a pot with 2 cups of vegetable oil and bring up to very hot almost frying and let sit for 10 minutes. Add 1 tablespoon paprika and let sit for 30 minutes and strain through a fine mesh sieve or coffee filter.
  • In a large saute pan, melt the butter and add the chilled lobster, when the lobster begins to warm add the mascarpone cheese and allow to melt, stirring constantly. Add the macaroni and just warm through and pour in enough of the Beurre Blanc to make it saucy. Season with salt and white pepper, to taste, and serve with chervil garnish and lobster oil.

Speared Spheres: Lobster Mac-n-Cheese Balls image

1 pound elbow macaroni
2 lobster tails
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups half-and-half, warmed, plus 2 tablespoons for egg wash
1 pound Cheddar, grated
1/2 pound smoked gouda, grated
1/2 pound spicy gouda, grated
2 large eggs
3 cups seasoned bread crumbs
Canola oil, for frying
Long bamboo spears or toothpicks

Steps:

  • Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Transfer to a large bowl.
  • Bring a medium pot of water to a boil and add the lobster tails. Cook for about 3 to 5 minutes. Remove the tails from the water and cool. Gently remove the meat and chop into small chunks. Add the meat to a small bowl and lightly season with salt and pepper, to taste. Set aside.
  • In a medium saucepan, over medium heat, add the butter. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk in the warmed 2 cups of half- and-half into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper, to taste. Gently mix in chopped lobster meat. Fold the lobster-cheese sauce into the macaroni.
  • Pour the macaroni and cheese into a shallow pan and refrigerate until cold, at least 2 hours. Shape the cold macaroni and cheese into individual size balls and arrange them on a parchment paper-lined tray. Freeze the balls at least another 2 hours. In a shallow bowl, beat the eggs and 2 tablespoons half-and-half together to form an egg wash. Put the bread crumbs into another shallow bowl. Remove the macaroni and cheese balls from the freezer. Dip the frozen balls into the egg wash, then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
  • In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 350 degrees F. Fry the macaroni and cheese balls, in batches, until they are golden brown and center is hot, about 5 minutes. Remove the balls to a paper towel lined plate to drain.
  • Skewer the balls with a long bamboo spears to help hold together, and serve.

1 small garlic clove, chopped
1 shallot, peeled and minced
3 ounces all-purpose flour
3 cups 2% low-fat milk

2 cups aged white cheddar cheese, grated
1 cup parmigiano-reggiano cheese, grated
salt and pepper
1 cup panko breadcrumbs or 1 cup regular breadcrumbs
1 ounce smoked bacon

1 1/2 lbs lobsters, cooked and shelled, cut into 1/2-inch pieces

Steps:

  • SAUCE: In a heavy-bottomed pot over medium heat, melt butter. Add garlic and shallot to butter and cook for 1 minute. Add flour and stir with a wooden spoon until a roux is formed. Gently whisk in milk, 1 cup at a time, being sure to work out any lumps.
  • Add bay leaf and nutmeg and let slow simmer for 5 minutes on low heat. Stir in cheeses and seasoning and continue cooking and stirring until cheese is completely melted and incorporated.
  • CRUMB TOPPING: Place all crumb topping ingredients in a food processor and mix on low speed until bacon is fully incorprated.
  • NOODLES: In a large pot of boiling water (not salted), cook noodles until al dente. Strain noodles from water.
  • TO ASSEMBLE: Add noodles into sauce with lobster and bacon. Place in a casserole dish and top with crumb mixture. Bake in a 350F oven until crumb topping is golden. Remove from oven and serve.

1 1/2 lbs Lobster
4 ounces unsalted butter plus 1 tablespoon
1 tablespoon water
1 tablespoon all-purpose flour
1 cup heavy cream
1 cup whole milk
9 ounces Cheddar, shredded
4 ounces Gruyere, shredded
1 tablespoon morel powder (dried morels that are ground in a spice grinder)
10 ounces macaroni pasta (any kind)

Steps:

  • Drop the lobster in boiling water for no more than 45 seconds. Separate the tail, body, and claws. Split the tail and remove the meat. Crack the claws and knuckles open and remove their meat. Save the body and shells, if desired, for other applications - otherwise discard. Cut the butter into small cubes. Place them in a small saucepan and add the water. Heat the 4 ounces of butter slowly - whisking it with the water until fully melted. Add the lobster meat. Cook the meat in the butter over low heat for a total of about 5 minutes. Check the claw and knuckle meat after about 3 minutes. When cooked, remove the meat from the butter and set aside to cool slightly. Cut the tail and knuckle meat in medium/large pieces. The claw meat will break up in your fingers. Set aside. Before starting on the sauce, put a pot on the stove with heavily salted water for boiling the macaroni. Next, melt the remaining 1 tablespoon of butter in a medium saucepot over medium/high heat. Add the flour and cook for about 2 minutes, stirring often with a wooden spoon, until the mixture browns slightly and develops a nutty aroma. Stir in the cream and bring back up to a boil, stirring constantly. Add the milk and, again, bring to a boil. Reduce to a simmer and let cook for about 3 minutes. Add the cheeses, a handful at a time, and stir until fully incorporated. Add the morel powder.
