Best jalapeno poppers EVER! So delicious you'll just need to start off with a double batch!

4 jalapeno peppers ((sliced in half lengthwise, remove the seeds if desired))
3 Tbsp sour cream
4 oz cream cheese ((softened, room temperature))
2 tsp lemon juice ((1/4 lemon fresh squeezed))
3 slices bacon ((cooked and crumbled))
1 Tbsp chives
4 oz lobster meat ((finely chopped))
each, salt & pepper ((to taste))
1 Tbsp Parmesan cheese ((optional garnish))
parsley ((chopped, optional garnish))
lemon zest ((optional garnish))

Steps:

  • Preheat your oven to 425 degrees F (218 degrees C) and coat your baking dish with non-stick cooking spray (or vegetable oil).
  • Combine sour cream, cream cheese, lemon juice, bacon, chives, and salt & pepper in a small to medium bowl. Add lobster meat and gently stir in to the filling mixture.
  • Arrange sliced jalapeno halves in your baking dish. Divide filling mixture evenly between jalapeno halves, spooning the mixture into each pepper.
  • Bake at 425 degrees F (218 degrees C) for 10-15 minutes, or until the top of the filling is golden on the edges and the jalapenos have reached your desired level of tenderness. Garnish with chopped parsley and/or lemon zest (if desired). Serve immediately.

12 jalapeno peppers, halved lengthwise, seeds and membranes removed
12 slices bacon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.

10 mini sweet peppers or 10 jalapeno peppers
3 slices bacon
1 eight-ounce package cream cheese
1 cup shredded cheddar cheese
2 teaspoons cajun seasoning (or your seasoning blend of choice)
2 tablespoons butter
1/2 cup panko breadcrumbs or 1/2 cup corn, flake crumbs

Steps:

  • 1. Preheat oven to 375°F Slice each sweet pepper in half lengthwise. Use your spoon to scoop out any seeds and some of the rib to make a nice, clean boat.
  • 2. Cook bacon to crisp (you can use a microwave - place bacon between paper towels, microwave 3-4 minutes or until crisp). Mince cooked bacon. In a bowl, mix together the bacon, cream cheese, cheddar cheese and Cajun seasoning. Spoon cheese mixture into each sweet pepper.
  • 3. Melt butter in microwave, stir in the bread crumbs. Hold each popper and dip cheese side down into bread crumbs. Bake 375F for 20 minutes or until cheese melty and bread crumbs crusty.

1 tablespoon butter, melted
2 tablespoons chopped fresh chives
1 tablespoon hot pepper sauce (such as Tabasco®)
salt and ground black pepper to taste
3 large jalapeno peppers, halved lengthwise and seeded
6 slices thinly sliced bacon

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Bring a large pot of water to a boil over high heat. Boil lobsters until they turn bright red and the claws are easily pulled off, 20 to 25 minutes.
  • Break lobster claws and tail removing as much meat as possible. Discard shells. Roughly chop the meat and transfer to a bowl.
  • Mix melted butter, chives, and hot sauce with the lobster; season with salt and pepper. Spoon mixture into the jalapeno halves and wrap each tightly with a slice of bacon, wrapping three times around each popper and trimming bacon so there is no excess hanging off the edges. Arrange onto a baking sheet.
  • Bake in preheated oven until bacon is browned, about 15 minutes.

25 jalapeno peppers, medium sized
1 (8 ounce) package cream cheese, softened
3 cups cheddar cheese, shredded
1 1/4 teaspoons Worcestershire sauce
4 slices bacon, cooked & crumbled

Steps:

  • Put a pot of water, large enough for all of the peppers to boil, on. Preheat oven to 400 F
  • Cut jalapeno peppers in half lengthwise; remove seeds. Place peppers in boiling water for 5 minutes. Drain well.
  • Combine cream cheese, cheddar cheese and Worcestershire sauce, stir well. Place one heaping teaspoon cheese mixture on each pepper half. Sprinkle with bacon. Place on a baking sheet.
  • Bake at 400 F for 5 minutes or until cheese melts.
