GRILLED GIANT PORTERHOUSE (OR T-BONE) WITH GRILLED EXOTIC MUSHROOMS



Grilled Giant Porterhouse (or T-bone) with Grilled Exotic Mushrooms image

Number Of Ingredients 8

2 giant (2 to 2 1/2-inch thick) porterhouse (or T-bone) steaks, about 2 pounds each
1/2 cup olive oil (1/4 cup for steak, 1/4 cup for mushrooms)
Salt and freshly ground black pepper
1 1/2 pounds mixed large mushrooms (portobellos, shiitake, creminis, chanterelles, oyster, or other kinds), trimmed
1 teaspoon freshly ground black pepper
4 tablespoons unsalted butter
1/3 cup roughly chopped fresh flat leaf parsley
3 tablespoons dry sherry

Steps:

  • Build a multi-level fire in the grill: Leave 1/4 of the bottom free of coals, bank the coals in the remaining 3/4 of the grill so that they are 3 times as high on 1 side as on the other. When the coals are all ignited and the temperature is hot (Hold hand about 5-inches above grill grid, over the area where coals are deepest, for 2 seconds or less), the grill is ready to cook.
  • Pat the steaks dry with paper towels, then rub them all over with 1/4 cup of the olive oil and sprinkle generously with salt and pepper. Place the steaks over the hottest part of the fire and cook until well seared on 1 side, 6 to 8 minutes. Then move them to the medium hot part of the grill and cook, turning once, until they are done the way you like them, 10 to 15 minutes more for rare. Check for doneness.
  • Make mushrooms while grilling steaks: Combine the mushrooms, the remaining 1/4 cup of olive oil, and the teaspoon of pepper in a large bowl. Toss gently until the mushrooms are well coated and all the oil is absorbed.
  • When steaks are done, transfer them to a serving platter, cover loosely with foil, and let them rest while grilling mushrooms. Put the mushrooms on the medium-hot part of the grill and cook, turning occasionally, until they are golden brown and moist all the way through, about 8 to 10 minutes. Slice the cooked mushrooms and put them back in the bowl along with the butter, parsley, and sherry, season with salt and pepper, to taste, and toss gently to coat.
  • To serve, cut the meat away from the bone, then cut it into thick slices. Divide them among 4 serving plates and spoon mushrooms over the top.

8 lamb porterhouse chops, 4 to 5 ounces each
2 tablespoons pure olive oil
Salt and freshly ground black pepper
Fig-Cascabel Sauce, recipe follows
Flat-leaf parsley leaves, for garnish
1 cup chopped dried figs
1 1/2 cups red wine vinegar
1/2 cup port wine
1 cup sugar
1 cup orange juice
1/4 cup cascabel chile puree
4 cups chicken stock
Touch of honey

Steps:

  • Heat grill to high or heat a grill pan over high heat. Brush chops on both sides with the oil and season with salt and pepper. Place the chops on the grill or grill pan and cook until golden brown and slightly charred, 3 to 4 minutes. Turn over the chops and continue grilling to medium doneness, about 2 to 3 minutes longer.
  • Ladle some of the sauce into the center of each dinner plate. Place 2 chops per order in the center of the sauce and drizzle the edges of the meat with some more of the sauce. Garnish with parsley leaves.
  • Place figs in a bowl, cover with boiling water and let sit until softened, approximately 30 minutes. Place the softened figs in a food processor with 1/2 cup of the soaking liquid and process until smooth.
  • Combine the vinegar and port wine in a medium nonreactive saucepan and reduce by half over high heat. Add the sugar, orange juice, and fig puree and reduce by half again, stirring occasionally.
  • Combine the chile puree and chicken stock in another saucepan and reduce by half over high heat. Add the reduced vinegar-fig mixture to the chicken stock mixture along with a touch of honey and reduce by half again, stirring occasionally. Strain the mixture into a clean medium saucepan and reduce to a sauce consistency.

52 ounce Porterhouse 28 day dry-aged Masami steak
California solar salt/sea salt
Clarified butter
Fresh sage leaves
Fresh thyme
2 bulbs of garlic
Freshly ground black pepper
Shallot butter, for serving

Steps:

  • Season the meat before broiling: liberally rub salt over both sides of the steak. Place the steak directly onto the broiler, no extra fat is needed, at 1200 degrees for 20 minutes. After 10 minutes turn the steaks over and return to the broiler: they only need turning once. After 20 minutes, remove the steak from the broiler. Place the steak in the clarified butter, sage, thyme and garlic mixture, and leave to rest for 10 minutes, basting the top with butter. Remove the steak from the clarified butter and place on kitchen roll to remove any excess. To serve, separate the fillet and strip sirloin from the bone and slice. Place the T-bone in the centre of the plate and reassemble the steak, with the sliced sirloin to the left and sliced fillet to the right. Sprinkle over freshly ground black pepper to taste. Place the shallot butter on top of each steak, and garnish with half a garlic bulb taken from the clarified butter, a sprig of thyme and a generous drizzle of garlic butter.

1 cup olive oil
3 tablespoons kosher salt
2 tablespoons ground coriander
2 tablespoons sweet paprika
1 tablespoon freshly ground black pepper
1 1/2 teaspoons onion powder
1 teaspoon dried oregano
8 cloves garlic, smashed
Six 2-inch-thick porterhouse steaks (2 pounds each)
Herb Butter, recipe follows
2 sticks (8 ounces) salted butter, at room temperature
1/4 cup sliced chives
1/4 cup finely chopped fresh parsley
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • In a small bowl, combine the olive oil, salt, coriander, paprika, black pepper, onion powder, oregano and garlic. Rub the steaks on both sides with the mixture and let sit at room temperature for 30 minutes.
  • Prepare a grill for medium-high heat. Grill the steaks until the internal temperature registers 125 degrees F on an instant-read thermometer for medium rare, 8 to 10 minutes per side. Remove the steaks from the grill, top each with 1 to 2 tablespoons of the Herb Butter and let rest for 5 to 10 minutes.
  • Cut the meat from each side of the bone and slice across the grain into strips. Arrange around the bone and top with more Herb Butter for serving.
  • In a large bowl, blend the butter, chives, parsley, Worcestershire, salt and pepper until completely combined. Use immediately or wrap into a cylinder in plastic wrap and refrigerate for up to a month.

1 tablespoon fresh ground black pepper
2 shallots, sliced (about 1/2 cup)
1 sprig rosemary, leaves stripped from stem
1 teaspoon soy sauce
1 teaspoon balsamic vinegar
2 tablespoons olive oil
1 porterhouse steak, about 32 oz. (2 inches thick)
1 tablespoon coarse salt, kosher salt or 1 tablespoon sea salt

Steps:

  • In a bowl, combine the first six ingredients and rub both sides of the steak with equal amounts of the mixture.
  • Let marinade for 1 to 2 hours.
  • Set aside and prepare the grill to medium hot (you'll be able to hold your hand just above the grate for 2 seconds).
  • Drain liquid from the steak and rub both sides of the steak with salt.
  • Grill the steak on one side for 7 to 10 minutes, keeping the smaller tenderloin section over a less intense heat.
  • If there are flare-ups, move the steak to another part of the grill that is cooler.
  • Turn the steak and grill for another 6 to 7 minutes. It should be rare to medium rare at this point.
  • Medium is about 10 minutes per side.
  • Transfer the steak to a wooden carving platter and let it rest for 3 to 4 minutes so the meat relaxes and the juices redistribute.
  • Serve it whole or else carve it, slice it, and reassemble it, saving the juices to pour over it.
  • Fight over who gets which piece of the steak. LOL.

coarse salt or kosher salt
extra virgin olive oil

Steps:

  • Meat should always be at room temperature before it is cooked.
  • Remove your steaks from the refrigerator at least half an hour before you are ready to cook.
  • Preheat broiler or grill to maximum temperature.
  • Rub both sides of the steaks with coarse or kosher salt and pepper.
  • Place the steaks 3 to 5 inches from the flame to sear the outside and seal in the juices.
  • Turn the steaks after 2 to 3 minutes.
  • After the steaks have been seared on both sides, remove from the heat, and brush both sides with extra virgin olive oil.
  • This will help form the crust that adds the touch of perfection.
  • Return the steaks to heat and cook on both sides to a desired doneness.
  • Transfer to warmed dinner plates or a platter, and let rest five minutes before serving.

Combine the olive oil, garlic, scallions, salt and pepper in a glass or ceramic dish. Put the steak in the dish and turn several times to coat. Cover and marinate at room temperature for 1 hour or in the refrigerator for as long as 4 hours. Turn the meat once or twice during marinating. Return the meat to room temperature before grilling.
