CRISPY OVEN-ROASTED CABBAGE WEDGES
From Joshua McFadden's Six Seasons The original recipe calls for saba*, which I've never tasted, but which, according to Amazon, is made by "cooking selected grape musts, especially of Lambrusco or Trebbiano grapes, over fire," and is the main ingredient in the production of Traditional Balsamic Vinegar of Modena. Don't feel you have to run out and buy a bottle -2 tablespoons of white balsamic vinegar has been working just fine for me. To toast walnuts: Preheat the oven to 350ºF. Spread the walnuts on a sheet pan. Transfer to the oven and cook for about 9 minutes or until the nuts are golden and smelling toasty. Remove, let cool, then, if you're up for it, transfer to a tea towel and rub away the skins. Then transfer nuts to a sieve and shake to remove the papery skins. To make dried bread crumbs: Preheat the oven to 250ºF. Pulse stale bread in a food processor until fine, like the texture of coarse polenta. Spread onto a rimmed sheet pan. Transfer to the oven and cook 45-60 minutes or until very dry-crumbs should take on very little color. If you like video guidance, check out this Instagram Story.

Steps:
- Heat oven to 475ºF.
- Spread the cabbage wedges out onto a large sheet pan. Drizzle with the olive oil. Season with salt and pepper to taste. Toss to coat, then spread back into a single layer. Transfer to the oven and roast for 15 minutes or until it's browned and crisped around the edges and slightly softened in the center. Note: don't be alarmed if you see extra-charred bits-this is going to happen, and some of the extra-crispy bits may be inedible. What you don't want to happen is have the cabbage not be all the way cooked through. Plus, the perfectly bronzy bits are so, so good.
- Sprinkle the saba or vinegar over the cabbage and toss lightly to season them, trying to keep them intact.
- While the cabbage is roasting, put the garlic in a small bowl and pour on the remaining 4 tablespoons of olive oil. Add the walnuts, bread crumbs, parmesan, and 2 tablespoons fresh lemon juice. Season with salt and pepper. Stir and adjust the seasoning to taste. The texture is supposed to be like a "loose, sloppy salsa," and to achieve this, you may need to add more lemon and olive oil. Both times I've made this, I've ended up using all of the lemon juice (so about 3 tablespoons total), and 2 more tablespoons olive oil. Also, the mixture itself may taste quite lemony and maybe a little salty ... this is OK-when it hits the sweet cabbage, the sharp flavors will soften.
- Arrange the cabbage wedges on a platter. Spoon some of the walnut salsa over top-keep the extra handy in a small bowl at the table...you'll want more with every bite. Grate a little more parmesan over top. If you wish, drizzle on more saba (or balsamic) or lemon.

WALNUT AND BLUE CHEESE WEDGE
"I love serving a classic for a holiday and the varied colors and textures on here give it an American holiday feel to me.... I love the addition of the cranberries and the tangy blue cheese, but for me the star of this salad is the glazed walnuts. Best of all, make the dressing and cut the salad ahead of time. When ready to serve, just assemble and enjoy." -Alex Guarnaschelli

STRAWBERRY KIWI "WATERMELON" COOKIE WEDGES
This giant cookie is topped with fresh strawberries and sliced kiwi so that it looks like a cross-section of watermelon-complete with chocolate chip "seeds." Instead of rolling out the dough into a round, it is simply spread with damp hands-a great way for kids to help. Ice pop sticks are baked into the sides of the extra-thick cookie so that it can be sliced into an on-the-go treat.

Steps:
- For the sugar cookie: Whisk together the flour, salt and baking powder in a medium bowl. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, mix the butter and sugar until light and fluffy, 2 to 3 minutes. Add the egg and vanilla and almond extracts, then mix on medium-low speed until fully combined. Scrape down the sides of the bowl. Add half of the flour mixture and mix on low speed until mostly incorporated. Add the sour cream and mix on low speed until combined, then add the remaining flour mixture. Mix on low speed until just combined, being careful not to overmix.
- To shape the cookie, draw or trace a circle 9 inches in diameter on a sheet of parchment paper. Place the parchment, drawing-side down, on an inverted baking sheet. Transfer the dough to the parchment and use damp hands to pat the dough into a flat round, using the drawing as a guide. Score the dough into12 wedges and insert an ice pop stick into each wedge at the "rind," leaving a 3- to 4-inch handle. Refrigerate the dough for at least 1 hour or up to overnight.
- Preheat the oven to 350 degrees F.
- Bake the cookie until slightly puffed and lightly brown on the edges, about 20 minutes. Let cool completely.
- For the frosting: In the bowl of a stand mixer fitted with the paddle attachment, mix the cream cheese, butter and salt on medium-high speed until light and fluffy, about 2 minutes. Add the confectioners' sugar and mix on low speed until incorporated, then increase the speed to medium high and mix until fluffy, about 2 minutes. Add the strawberry preserves and vanilla extract and mix for 1 more minute.
- For the topping: Spread the frosting on the cooled cookie, almost to the edges. Arrange the kiwi slices all around the edge of the cookie, overlapping them slightly. Fill the center with the strawberries. Microwave the strawberry preserves until melted, 15 to 20 seconds, then brush onto the strawberries with a pastry brush. Sprinkle the chocolate chips over the strawberries. Refrigerate for 30 minutes then cut the cookie along the score marks into 12 slices.
