LOADED POTATO CROQUETTES
This is a easy and tasty side dish. The croquettes can be made into smaller portions for appetizers. It is also lends itself as recipe that can be adapted easily to personal tastes and cooking styles.

Steps:
- Preheat oven to 400 degrees.
- Mix all of the ingredients except 1 cup bread crumbs.
- Shape mixture into 8 balls.
- Flatten croquettes to 3/4 inch thick.
- Roll croquettes in remaining bread crumbs.
- Place on non-stick pan and bake for 20 minutes turning once.
LOADED MASHED POTATOES
This is like the best parts of a loaded baked potato and traditional mashed potatoes all rolled into one. For extra fun, take your leftovers, add some milk or cream, reheat, and you've got a kickin' loaded potato soup!

Steps:
- Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
- Place potatoes into a large pot of lightly salted water; bring to a boil, reduce heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and return them to the pot.
- Mash butter into the potatoes with a potato masher or electric hand mixer until melted completely into the potatoes; add sour cream and continue to beat until combined. Crumble bacon into the potato mixture; add Cheddar cheese and chives and stir. Season potatoes with salt and pepper.

Steps:
- Stir Parmesan cheese into mashed potatoes.
- Add cream cheese, butter, onion soup mix and pepper; mix well.
- Add 1 to 2 tablespoons of milk, if mixture is dry.
- Shape mixture into 10 to 12 balls.
- Dip into the 2 beaten eggs; roll into the corn flakes.
- Place on greased baking sheet.
- Bake at 400°F for 10 to 15 minutes or till hot and crisp.
TRUE BANGERS AND MASH WITH ONION GRAVY
Bangers and mash gets its name because sausages used to burst (or bang) while cooking, due to rusk (dried bread) being added to the meat. Mash, meanwhile, refers to the mashed potatoes. This recipe was a staple at our home in Dublin at Halloween. It is a very cheap, very traditional supper, and one that truly requires good sausage. Try to use a good quality sausage or perhaps even a bratwurst. Please note that this is a very thin gravy, as is traditional. It will still be very liquidy.

- Preheat oven to 200 degrees F (95 degrees C).
- Cook the sausage links in a skillet over medium-low heat until browned on all sides, about 5 minutes per side; transfer to an oven-safe dish and move to the preheated oven to keep warm.
- Place potatoes into a saucepan over medium heat, cover with water, and boil gently until potatoes are tender, 10 to 15 minutes. Drain and allow to steam dry for a minute or two. Mix in 1/4 cup of butter, milk, dry mustard, salt, and black pepper; mash until fluffy and smooth. Set aside.
- Melt 1 tablespoon butter in a skillet over medium-high heat; cook the onions until translucent and just starting to brown, about 8 minutes. Pour in the beef broth and red wine; boil the mixture down to about half its volume, about 10 minutes. Season with salt and black pepper. To serve, place a sausage onto a serving plate with about 1/2 cup of mashed potatoes. Pour the onion gravy over the sausage and potatoes.

- - Preheat the oven to 350 degrees.
- - Line a stainless steel baking sheet with parchment paper.
- - Warm the potatoes in the microwave for 5 minutes.
- - Place the mashed potatoes into a bowl and whip with a hand mixer for 1-2 minutes. Add in the shredded cheese, crumbled bacon, and scallions. Fold together with a rubber spatula.
- - Unroll one of the pie crusts directly onto the parchment paper.
- - Gently spread the mashed potato mixture onto the pie crust, leaving 1/4" border all around.
- - Top with the second pie crust, gently pressing the crust into the mashed potatoes. Press the edges together.
- - Using a pizza wheel or a wheel with a decorative edge, cut one inch strips horizontally. Create fries that are approximately 2" long by cutting vertical strips.
- - Separate the fries.
- - Bake for 12-15 minutes, until the crust is golden and crispy.

- Mix potatoes, 1/2 cup flour and cheese in a large mixing bowl. Fry bacon until very crispy. Drain bacon on paper towel. Let cool. After bacon is cool, chop bacon very finely. Add and mix bacon to batter. Preheat oil to 180 degrees. While oil is heating, pour 1 cup of flour out on a baking sheet. Add batter to baking sheet and knead in flour. Roll batter into one long round strip. Cut potatoe batter into 1 1/2 inch stripes. Roll strips in leftover flour and gentle lay the strips in oil and let fry for 2-3 minutes Lay crokettes on paper towel and transfer to dinner plate and enjoy! These tasty treats can be served alone or with you favor meal. These could also be enjoyed with sour cream or your favorite gravy. This is also a great recipe for kids to have a hand on expierence :).
