This macaroni and cheese is loaded with lots of cheese and real butter. It's not for the diet conscious. Everything in moderation, they say. Recipe is from Taste of the South.

1 (16 ounce) package elbow macaroni, cooked according to package directions and hot
1 cup butter
2 (8 ounce) packages sharp cheddar cheese, shredded
4 large eggs, lightly beaten
2 (12 ounce) cans evaporated milk
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 (8 ounce) package mild cheddar cheese, thinly sliced

Steps:

  • Preheat oven to 375 degrees.
  • Lightly grease a 13x9x2-inch baking dish; set aside.
  • In large bowl, combine macaroni, butter and shredded Cheddar cheese, stirring until melted.
  • Spoon mixture into prepared baking dish.
  • In medium bowl, combine eggs, evaporated milk, salt and pepper.
  • Pour mixture over macaroni, stirring to combine.
  • Cover with sliced Cheddar cheese.
  • Bake for 1 hour, or until cheese is lightly browned.

I was tired of my usual Mac N' Cheese, so this is what I came up with.The prep times include the frying of the bacon, and also includes the cooking time of the pasta.If you don't have the pasta that this recipe calls for, please use whatever you have on hand. And the amount of salt and pepper is strictly up to your own personal tastes.And if you are a cheese addict like me, :) you can add more cheese to the top before baking.Submitted to " ZAAR " on November 18th, 2009

8 slices bacon
1 cup shredded extra-sharp cheddar cheese, divided
3/4 cup of uncooked elbow macaroni
2 tablespoons margarine
2 tablespoons flour
3/4 cup milk
1/2 teaspoon salt (to taste)
1/2 teaspoon ground black pepper (to taste)

Steps:

  • Preheat oven to 350 degrees.
  • Fry bacon till lightly crisp, crumble and set aside.
  • Cook macaroni according to directions on pasta box, and drain.
  • In the same pan as you cooked the pasta, melt margarine and add flour.
  • Cook for about 3 minutes,until flour taste is cooked away.
  • Add milk a little at a time, stir until flour is well blended.
  • Remove from heat and add 3/4 cup of cheese, stirring until melted ( at this point, you may add a bit more milk if it's too thick ).
  • Add pasta, crumbled bacon, and salt and pepper to taste.
  • Pour into a greased a 1 1/2 quart baking dish, sprinkle top with remaining cheese.
  • Bake for 25 to 30 minutes, or longer if you like a more golden cheesy top.

  • In a large pot, melt 4 tablespoons of butter. Sprinkle in ½ cup of flour. The mixture will look lumpy. Very slowly, pour in the milk 1 cup at a time stirring out the lumps, making a creamy mixture. Continue to pour in the milk and stir at the same time on medium heat. Allow to come to a slight simmer, 2-3 minutes. The sauce will thicken slightly.
  • Next, add the salt, pepper, dry mustard, garlic powder, and Worcestershire Sauce; add the cream cheese, half of the shredded cheddar cheese and white cheddar cheese. Stir until smooth, creamy, and the cheeses have completely melted.
  • Next, add the macaroni and stir until evenly distributed. Finally, add the jalapeno, chives, bacon, and drained diced tomatoes. Stir until evenly distributed. In a 9X13 casserole dish, pour half of the macaroni mixture into the dish, sprinkle with half of the left over cheeses in the middle, pour the rest of the macaroni mixture on top, sprinkle with any left over cheese and the panko bread crumbs. Bake in a preheated oven on 350 Degrees for 20-25 minutes. Allow to cook and serve!
