HEALTHY NUT BARS
From The Cook and the Chef ABC TV series starring Aussies Maggie Beer and Simon Bryant. This recipe belongs to Simon. This recipe had all of us drooling and my kids begging me to make this.

Steps:
- Lightly warm all the ingredients.
- Mix all other ingredients together in a bowl except the honey, golden syrup, tahini and the LSA.
- Add the honey, syrup, tahini and mix well together.
- Add 1/3 cup of the LSA and as much more to 1/2 cup as required to bind the mixture together then spread onto a tray lined with baking paper.
- Spread evenly and allow to set (20 mins in the fridge should do it). Warming the honey/golden syrup a little enables them to combine more easily and the LSA helps to bind the mixture.
- Cut into bars and eat just as they are or coat in chocolate.
- Chocolate dip: Melt 400g chocolate in a bowl over a water bath until the temperature of the chocolate mass is 43C, remove from water bath & fold in the 200g grated chocolate which should lower temp to 35C as it melts. The chocolate is now tempered and ready to use.(There is a 2-3 degree C window of variation working with chocolate.).
- ***If your palate is more savoury try 3/4 cup tahini & ¾ cup of honey & omit the golden syrup.

Healthy refined sugar free, low fat oat bars. Cheap and easy.

Steps:
- mix dry ingredients and add a glug of hot water (maybe a couple of tbs)
- add in honey and nut butter, mix all together really well
- mixture should be sticky but quite lumpy, stiff and fairly dry, not like a cake batter but like a solid lumpy and flakey ball, almost more like a dough
- press down hard into silicon baking tin
- cook for 20-30 mins in 200 degree oven (preheat or not is fine). Take out and press down hard ten mins in with back of a plastic ladle or similar. press down again on removal. To ensure it all holds. When it comes out of oven it should all hold together fairly well but can still be softish, or can be left in longer or left in switched off oven for crispy Cool in tin but cut before it completely cools

- Add almonds, peanuts, cereal and salt to a large bowl. Stir until well mixed. Pour maple syrup over this mixture. Fold until well incorporated.
- Pour this mixture into the prepared baking pan. Using a rubber spatula, smooth into a tightly packed, even layer. Bake for 30-40 minutes (mine took 35 mins). Bars must bake thoroughly, or they won’t hold together when cooled.
- Allow to cool for 1 hour, or until completely cooled. Use a heatproof spatula to gently lift and loosen bars from parchment. Slice into 12 bars (6 rows by 2 columns). Enjoy! Storing instructions below.
