HOISIN MEATBALL LO MEIN
The flavors in this noodle stir-fry are about as different as you can get from Monday's Spanish-inspired meal, but it uses leftover meatballs as a protein. Smarts: Slice the meatballs into quarters before cooking so that they will heat up faster (and will be all the better if you're using chopsticks to eat them!).

Steps:
- Heat a wok with oil over medium-high heat. Add mushrooms, snow peas, and carrots and saute until starting to turn tender, 3 to 4 minutes.
- Add meatballs and sauce to wok and bring to a simmer. Simmer until sauce bubbles and thickens, ~2 minutes.
- Remove from heat and add noodles. Toss everything to combine.
- Top lo mein with lemon juice and cilantro. Serve with some hot sauce if you'd like. Enjoy!

- Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Combine beef, bread crumbs, 1 tablespoon soy sauce, egg, 2 cloves minced garlic, and ginger in a bowl and mix thoroughly. Form into golf-ball-sized meatballs and place on the prepared baking sheet.
- Bake in the preheated oven until meatballs are no longer pink inside, 10 to 12 minutes.
- Meanwhile, combine remaining soy sauce, remaining garlic, hoisin sauce, green onion, vinegar, and sesame oil in a small bowl. Whisk sauce until well blended.
- Place frozen fried rice bag on a plate and heat in the microwave oven until thoroughly heated, 6 to 8 minutes. Peel back film and stir. Re-cover and heat for 1 minute more.
- Transfer cooked meatballs to a serving bowl. Pour sauce over meatballs to coat. Serve meatballs over fried rice.

- Preheat broiler. In a 3-qt. slow cooker, whisk together wine, hoisin sauce and soy sauce. Cook, covered, on high 30 minutes. Meanwhile, combine next 7 ingredients. Add beef and pork; mix lightly but thoroughly. Shape into 1-1/2-in. meatballs; place on a rack in a broiler pan. Broil 3-4 in. from heat until browned, 3-4 minutes., Add meatballs to slow cooker. Cook, covered, on low, stirring halfway through, until meatballs are cooked through, 2-3 hours. Sprinkle with sesame seeds. Freeze option: Freeze cooled meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high until heated through, about 8 minutes, gently stirring halfway through.

- Combine mince, egg, breadcrumbs, onion, chilli, half the garlic and half the hoisin sauce in a bowl and season with salt and pepper and mix to combine.
- Roll level tablespoons of mix into balls and place on a plate.
- Heat oil in a large frying pan over medium-high heat and cook meatballs, turning for about 5 to 7 minutes or until browned and cooked through.
- Using a slotted spoon, transfer to a plate and cover to keep warm.
- Add ginger and remaining garlic to pan and cook, stirring, for 1 minute or until fragrant and add 1/2 cup cold water and remaining hoisin sauce and bring to the boil and then reduce heat to medium and simmer for 5 minutes or until sauce has thickened and then return meatballs to pan and stir to coat.
- Serve with noodles and onion.
- VARIATION - you could use pork mince instead of chicken.

- 1. Preheat oven to 375F. Take out your sausage. I used Bob Evan's Italian Sausage, which has a milder flavor rather than butcher bought.
- 2. In a medium bowl, add your meatball ingredients and using a small melon scoop, make your meatballs and roll again slightly to ensure perfect balls. Place balls on a foil and non-stick spray lined pan to ensure easier clean up.
- 3. Bake at 375F for approximately 15-17 minutes. Take out oven and set aside.
- 4. As meatballs are baking, in a medium saucepan add 4-6 cups water, bring to boil. Start dicing your vegetables. Start with your celery, slice on an angle.
- 5. Now your carrots.
- 6. Finish off with your onion and set aside all veggies.
- 7. In a saute pan, add your oil and sesame oil. Once hot, add your onions, saute for about 1 minute. Add your celery and carrots. Stir and continue cooking for 4-5 minutes, till veggies are just starting to get tender.
- 8. Add all sauces and seasonings. Let simmer for a 1-2 minutes. Meanwhile, in a small bowl, incorporate corn starch and orange juice, stir till smooth, add to sauce. Add your meatballs and simmer sauce till slightly thickened and meatballs have been heated thru.
- 9. As sauce is simmering, open ramen noodles, (discarding packet seasoning mix), and add to boiling water. Let simmer for 4-6 minutes, till tender. Drain well and add evenly to bowls.
- 10. Sauce should be ready at this point. Divide sauce evenly between bowls and sprinkle with toasted sesame seeds and chopped cilantro if preferred. Grab your chopsticks and ENJOY!!

This is my family's favorite Lo Mein recipe. We love the versatility. Add any veggies or meat you want.

- Cook the noodles according to the package directions until just tender. Drain out the water. Rinse the noodles with cold water, drain them well, and then set them aside.
- In a small bowl, mix the hoisin sauce, chicken broth, soy sauce, sesame oil, and cornstarch. Then set the sauce aside.
- Heat 1 tablespoon of the vegetable oil in a large wok or nonstick skillet over medium-high heat. Stir-fry the ginger for 30 seconds. Then add the onion and stir-fry for 2 minutes. Add the mushrooms and carrots and stir-fry 2 minutes more. Finally, add the broccoli, pea pods, and bok choy. Stir-fry the vegetables for 2 more minutes, then transfer them to a plate.
- Heat the remaining tablespoon of oil in the pan. Add chicken (or other meat) and stir-fry it until it's no longer pink, about 3 to 4 minutes. Add the cooked noodles, vegetables, and sauce. Turn the heat down to medium.
- Using two spatulas or wooden spoons, lightly toss the mixture until heated through, about 3 minutes.
