Not sure where I got this recipe, but it's easy and tasty. Plan ahead as you need to marinate the red peppers in vodka for 24 hours.

2 dried red peppers
3/4 cup vodka
2 2/3 cups whipping cream
10 tablespoons butter
6 ounces tomatoes, peeled, seeded and chopped
1 lb penne
3/4 cup parmesan cheese, grated
3 tablespoons fresh parsley
pepper, to taste

Steps:

  • Soak red peppers in vodka for 24 hours.
  • Combine cream, butter and tomatoes in heavy large saucepan. Simmer until reduced by 1/3, about 12 minutes.
  • Cook pasta according to directions. Drain and add to sauce. Boil 1 minute, stirring constantly. Discard red peppers, and add vodka to pasta.
  • Simmer until sauce thickens, stirring constantly, about 3 minutes. Mix in 3/4 cup Parmesan and parsley.
  • Serve immediately, passing additional Parmesan and pepper separately.

3 tablespoons olive oil
1 small onion, chopped
4 cloves garlic, minced
¼ teaspoon crushed red pepper flakes
½ cup vodka
1 (28 ounce) can crushed tomatoes
1 cup light cream
½ cup grated Romano cheese
salt and pepper to taste
1 pound penne pasta

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Stir in the onion and cook and stir until softened, about 5 minutes. Add the garlic and crushed red pepper flakes and cook, stirring, for an additional minute.
  • Stir the vodka, crushed tomatoes and light cream into the onion mixture, turn heat to high, and bring sauce to a boil. Reduce heat to low, stir in the Romano cheese and simmer for 2 hours, stirring occasionally. Season finished sauce with salt and pepper.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Drain well in a colander set in the sink. Transfer pasta to a large bowl and pour vodka sauce over, tossing to coat pasta with the sauce to serve.

A coworker gave me this recipe. It's delicious. Imagine my surprise when a few years later I saw the same recipe on the side of a pasta box! Oh, well - still one of our favorites!

1 tablespoon corn oil
1 garlic clove, minced
1 (8 ounce) can tomato sauce
1/2 cup heavy cream or 1/2 cup evaporated milk
2 tablespoons vodka
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/2 lb cooked medium shrimp (optional)
1/4 cup grated parmesan cheese
8 ounces penne rigate, cooked and drained (3-1/3 cups)

Steps:

  • In a large skillet, heat corn oil over medium-low heat.
  • Add garlic, stirring constantly, cook one minute.
  • Stir in tomato sauce, cream, vodka, basil and oregano.
  • Cook 8 minutes.
  • Stir in shrimp (optional) and Parmesan cheese; heat through.
  • Toss with penne.
  • Serve.
