GIANT GRILLED CHEESE FOR A CROWD



Giant Grilled Cheese for a Crowd image

This gooey and crunchy grilled cheese is perfect for feeding a crowd and easier to whip up then a whole loaf's worth of individual sandwiches.

1 loaf unsliced white bread or brioche loaf (about 1 pound 5 ounces)
1/4 cup mayonnaise
1/3 pound sliced sharp Cheddar
1/3 pound sliced Monterey jack cheese
1/3 pound sliced low moisture part-skim mozzarella

Steps:

  • Put 1 baking sheet on the center rack of the oven and preheat to 350 degrees F.
  • Slice 1/4-inch of the crust off the top and bottom of the loaf of bread. Split the loaf evenly in half, horizontally. Cut a piece of parchment paper large enough to accommodate both halves of bread and put both the top and the bottom on the parchment, cut-side up so the inside of the loaf is visible.
  • Scoop about a 1/4-inch of the soft middle of the loaf out. Spread the mayonnaise evenly on the crustless top of each half, then flip them over so the mayonnaise-side is face down on the parchment.
  • Evenly distribute the 3 cheeses between the 2 bread halves. Use the parchment to transfer your grilled cheese to the preheated baking sheet, using a spatula if the bread is sticking, then remove and discard the parchment. Bake until the crust is golden brown and crunchy and the cheese is melted, about 18 minutes. Remove from the oven and immediately sandwich the 2 halves with the cheese in the middle. Let rest about 10 minutes. Slice and serve while hot.

6 tablespoons butter, softened, divided
8 slices sourdough bread
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
4 ounces Brie cheese, rind removed and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, mix together mayonnaise, Manchego cheese, onion powder and remaining 3 tablespoons butter. In another bowl, combine cheddar, Monterey Jack and Gruyere. , To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

1 package yeast
1/2 cup warm water
4 tablespoons sugar
6 eggs
3 teaspoons sea salt
4 1/2 cups organic flour, plus more as necessary
2 sticks unsalted butter (best quality possible!), plus more for greasing baking sheet, at room temperature
Heavy cream, for basting
Your favorite gelato flavors, for serving

Steps:

  • Mix together the yeast and water in a large bowl. Add in the sugar, stirring until the sugar is dissolved. Let sit for 5 to 10 minutes. Beat in the eggs one at a time until a bit frothy. Gently beat in the salt and flour, a cup at a time, mixing well. Transfer to a greased bowl, cover the dough and refrigerate for 24 hours.
  • Bring the dough back to room temperature. Meanwhile, prepare a baking sheet for baking with a thick coat of butter, or use parchment paper or a silicone mat if you prefer.
  • When the dough is warm and soft, put it in the bowl of an electric mixer and start to add the softened butter in pieces. Add a bit of flour if it becomes too wet or sticky. It needs to form a dough ball.
  • Put the dough on a lightly floured surface and separate in halves until you have 12 pieces patted into brioche shapes. Place onto the prepared pan. Cover with a warm cloth or leave in a warm place to rise for 2 or more hours.
  • Preheat the oven to 350 degrees F.
  • Bake long enough for the rolls to rise, about 20 minutes. Then baste with heavy cream and finish baking until brown, another 10 minutes.
  • Cool and cut in half.
  • Place up to 2 flavors of gelato inside the halved brioche for the perfect gelato sandwich!

1/4 cup shredded Gruyere cheese
1/4 cup sliced Robiola cheese
1 tablespoon prosecco
1 teaspoon chopped fresh parsley
1 teaspoon Dijon mustard
1 clove garlic, minced
Four 1-inch-thick slices brioche
2 tablespoons butter, at room temperature
Salt and freshly ground black pepper

Steps:

  • Heat a griddle over medium heat.
  • Buzz the Cheddar, Gruyere, Robiola, prosecco, parsley, mustard and garlic in a food processor until combined but still chunky and spreadable. Spread the mixture among the bread slices. Sandwich 2 slices, spread 1 tablespoon of the butter on the outside of the sandwich and season with salt and pepper. Repeat with the remaining ingredients.

4 slices brioche bread
8 slices aged Cheddar
8 tablespoons (1 stick) butter, softened
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon balsamic glaze
1 teaspoon honey
2 pinches salt
2 pinches freshly ground black pepper
1/3 lemon, juiced
One 5-ounce container mixed greens
1 cup cherry tomatoes, halved
1/4 cup fresh basil, torn

Steps:

  • For the sandwiches: Prepare a grill for medium-high heat.
  • Assemble 4 sandwiches by spreading 2 tablespoons fig jam on 2 of the multigrain slices and 2 of the brioche slices, then adding 2 slices of cheese to each and another slice of the same bread. Spread the butter on both sides of the assembled sandwiches.
  • Place the sandwiches carefully onto the grates of the grill and grill on each side until the bread has grill marks and the cheese is melted, about 5 minutes per side.
  • For the salad and dressing: Meanwhile, whisk together the olive oil, balsamic vinegar, balsamic glaze, honey, salt, pepper and lemon juice in a large bowl. Add the mixed greens, tomatoes and basil to the same bowl and toss to coat.
  • Serve each sandwich with a side of salad.
