Steps:
- Heat a medium sized cast iron deep skillet over medium-high heat of campfire, RV stovetop or camp stove.
- Add bacon and cook until it is crispy, then remove it from the pan. Do not drain the bacon grease from the skillet.
- Add the hash brown potatoes, onion and green pepper to the pan, cook until the veggies are softened, scraping up brown bits from the bottom of the pan.
- Now, crumble the bacon into small pieces and add it to the potato mixture.
- Reduce to medium heat, then, stir in the eggs and cook until they are almost fully set.
- Sprinkle the cheese over the top of the mixture, cover with lid and let eggs finish cooking and the cheese to melt, about 2 minutes.
- Top with salsa and sour cream. Serve hot.

HUNGRY MAN'S BREAKFAST CASSEROLE
Grandma would be proud! This was a good dish to make the night before and refrigerate. Let it come to room temp while preheating the oven. I often seen this at Sunday Services Brunch when I was a child. Sitting all purdy next to a glass of orange juice. THAT was breakfast. Mmm, good.

- 1. Preheat your oven to 350 degrees (F) and spray a baking dish (9x13) with cooking spray. Set aside.
- 2. In a skillet, cook and crumble sausage over med heat. Drain. Set aside.
- 3. In a large bowl, add stuffing, milk, sausage, onion and bell pepper. Mix well.
- 4. In a separate bowl, whisk the eggs and pour over the sausage mixture, followed by the cheddar cheese and stir together until well combined.
- 5. Pour everything into the prepared baking dish and bake, uncovered for 45 minutes, or until set and the color is nice and browned. Cover if the edges are getting too dark before end cook time.
DUTCH OVEN MOUNTAIN MAN BREAKFAST
Our kids request this meal every time we go camping, and seeing as we have about 15 laying chickens, it's a great way to use up eggs! Please note, this makes a LOT! You may want to consider sharing it with your camping friends or, if you're like our family and enjoy leftovers, just save the leftovers for the day you're leaving the campground and need a quick breakfast without a lot of mess and fuss. You can easily re-heat it in a microwave or in a skillet over low heat. Feel free to add more spices and personalize this recipe to suite your taste buds!

- Build a campfire and allow the fire to burn until it has accumulated a bed of coals.
- Cook and stir the sausage, onion, and garlic in a 12-inch cast iron Dutch oven with lid, raised over the coals to medium-high heat, until the sausage is no longer pink and the onion is tender. Stir in the red bell pepper, green bell pepper, and hash brown potatoes until evenly mixed. Cook, stirring occasionally, until the hash browns are hot and the peppers are tender, about 15 minutes.
- Pour the beaten eggs evenly over the top of the potatoes, allowing them to sink into the potatoes. Cover the Dutch oven, and place 6 to 9 coals underneath, and 12 to 18 on top. Allow to bake until the eggs are firm, about 40 minutes. Sprinkle with Cheddar cheese, cover, and continue cooking until the cheese has melted, about 5 minutes.

Steps:
- Cook biscuits in oven. Cook ground beef.
- Add everything except biscuits and cheese into crock-pot. Stir ingredients. Top with cheese.
- Cook on low or warm. Serve on top of biscuits.

- Place a 10-12 inch Dutch oven over hot coals, fry the breakfast sausage and green peppers in the Dutch oven. Break sausage up into smaller pieces as it cooks.
- Add hash browned potatoes to sausage fat and cook until soft, then flatten out along bottom of Dutch oven.
- Sprinkle the sausage and peppers over the top of the potatoes. Pour the beaten eggs over the sausage mixture, then sprinkle with the shredded cheese.
