DILL PICKLE DIP
Dill Pickle Dip is a light and creamy dip made with cream cheese, sour cream, pickles and fresh dill. This easy appetizer recipe only takes minutes to make!

Steps:
- Using a stand mixer or electric beaters, beat cream cheese until light and fluffy. You can't really over mix it, so whip it until it is very smooth.
- Mix in remaining ingredients except for salt. Scrape bowl as needed. Once fully mixed, taste to determine if salt is needed.
- Serve with chips, crackers, or fresh vegetables for dipping. This dill pickle dip also works great as a spread on sandwiches!

HOMEMADE SPICY DILL PICKLES
Steps:
- Combine the vinegar, honey, pepper flakes, peppercorns, coriander, mustard seeds, fennel seeds, cumin and salt in a medium non-reactive saucepan over high heat and bring to a boil. Let boil for 2 minutes; remove from the heat and let sit until cooled to room temperature. Add the dill and cilantro. Place the cucumber in a medium bowl and pour the cooled vinegar mixture over them. Refrigerate, covered for 24 hours or up to 4 days.

- In a small bowl, beat the cream cheese, sour cream and pickle juice until smooth. Stir in pickles and pepper blend. Serve immediately or refrigerate for up to 4 hours. If desired, serve with chips or pretzels.

- Combine ingredients together until smooth. If needed, pickle juice can be added to thin out to desired consistency (dip will thicken slightly when chilled). Chill at least1 hour to blend flavors.
- Note: I mince up the pickled garlic and cayenne pepper from the jar of homemade spicy pickles and add to the dip - delicious!
