Steps:
- Pour can of lychee fruit into a strainer. Reserve 2 tablespoons lychee juice.
- In a shaker, add crushed ice, lychee liqueur, vodka, lime juice and reserved lychee juice.
- Shake well. Pour mixture into chilled martini glasses over a few pieces of lychee fruit from can. Add a splash of Champagne and serve.

- Place 2 to 3 litchis in each of two chilled 10-ounce martini glasses. Fill a 20-ounce cocktail shaker with 2 cups of ice. Add vodka, sake, and litchi syrup. Shake well, and divide between martini glasses. Serve immediately.
LYCHEE MARTINI WITH HOMEMADE LYCHEE LIQUEUR
Steps:
- Gather the ingredients.
- Peel and cut the lychee fruits in half. Add the pieces to a glass jar that has a capacity of at least 16 ounces. Add the zest of 1 lime, then fill the jar with the vodka.
- Seal the jar and give it a good shake.
- Store in a cool, dark place for four weeks, shaking it every couple of days. Give it a taste test after two weeks, then again a week later to see how the flavor is progressing. Four weeks will give it a good flavor, but it might take more to get to your ideal flavor.
- Once the vodka is flavored to your liking, heavily strain the fruit from the vodka through a cheesecloth or a very clean kitchen towel. Be sure to squeeze all of the liquid from the lychee.
- Strain again to ensure all of the liquid is removed from the fruit. During this final straining, you can filter it directly into the bottle that will store the liqueur: Use a funnel and place the cheesecloth inside.
- Add 1 cup of simple syrup to the bottle, tighten the lid, and shake vigorously. Store the finished liqueur in the refrigerator where it will keep for about three months.
- Gather the ingredients.
- Combine 1 cup each of sugar and water in a saucepan.
- Bring to a slow boil, stirring constantly until the sugar is completely dissolved.
- Add the lychee fruit, reduce the heat, and cover.
- Simmer for about 10 minutes.
- Remove from the heat and allow to cool for about 30 minutes.
- Strain the fruit from the syrup and pour it into a glass bottle with a tight-sealing lid. It will keep in the refrigerator for two to three weeks.
- Gather the ingredients.
- In a cocktail shaker filled with ice, pour the vodka, lychee liqueur or syrup, and lime juice. Shake well .
- Strain into a chilled cocktail glass .
- Garnish with pitted lychee fruit. Serve and enjoy.

- Heat sugar and water in a 1-quart saucepan over high heat, stirring, until sugar is dissolved, then pour into a heatproof bowl set in a large bowl of ice and cold water. Let stand, stirring occasionally, until syrup is cold, about 3 minutes.
- Purée lychees with sugar syrup and lemon juice in a blender until smooth, then force through a fine-mesh sieve into a bowl, pressing hard on solids and then discarding them. Fill cocktail shaker halfway with ice cubes and add lychee purée, vodka, and Cointreau. Shake 15 seconds and strain into Martini glasses.

LYCHEE GINGER MARTINI
A fresh and crisp drink. I first made this to serve at an Asian-themed dinner party, and it was great! The original recipe called for crystallized ginger to be placed in the glass, but I felt weird about that so I left it out. I'm not sure what lychee puree is exactly, so I found canned lychees in syrup at my grocery store and blended them for a few minutes. I had to strain it a little through a colander because the lychees didn't blend perfectly so it was a little gross looking, but in the end I came out with a milky liquid that worked well.
