Steps:
- Drain cherries and set on paper towels to dry.
- In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
- Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in by its stem, and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks.

LIQUEUR SOAKED CHOCOLATE MARASCHINO CHERRIES
Maraschino dipped cherries are great but liqueur soaked dipped cherries Wowser! These are so easy to make too. You don't waste the liqueur as you can use it in your favorite cocktail after soaking the cherries. This recipe is from The American cooking club magazine.

- Drain the cherries; dry well; place in a container; pour enough liqueur over the cherries to cover them, seal well and place at room temperature overnight.
- Drain the cherries, saving the liqueur for another use.
- Again dry the cherries well with cheese cloth or a clean cotton cloth. Paper towels will stick. Be careful not to break off the stems.
- Place chocolate chips in a heavy saucepan over LOW heat until the chocolate has melted, stirring constantly. DO NOT let the chocolate get too hot.
- Remove from heat.
- Dip cherries into the chocolate; swirl to coat.
- Place dipped cherries on wax paper; refrigerate to set.

- Pour cherries, with their juice, into a glass bowl. Cover cherries with rum. Cover with plastic wrap and store in the refrigerate for 1 week.
- Drain and dry rum-infused cherries.
- Line a baking sheet with waxed paper.
- Mix confectioners' sugar, 1/2 cup butter, milk, and maple syrup together in a bowl until smooth and pliable. Wrap each cherry with sugar mixture. Arrange on baking sheet. Cover loosely with plastic wrap and chill until firm, about 30 minutes.
- Combine chocolate chips, semisweet chocolate, 2 tablespoons butter, and paraffin wax in a saucepan. Heat over medium-low heat, stirring, until melted, about 5 minutes.
- Dip each wrapped cherry into the melted chocolate mixture using a toothpick. Return to baking sheet. Repeat with remaining cherries. Cover loosely with plastic wrap and chill until set, about 1 hour.

- Line a baking sheet with parchment paper and set aside. Place the pistachios in a shallow bowl and set aside. Place chocolate in a medium bowl and set aside.
- Bring cream to a simmer in a small saucepan over medium-high heat.
- Pour hot cream over chocolate and let sit for about 30 seconds; stir until the chocolate melts completely.
- Holding by the stem, dip the bottom of a cherry in the chocolate mixture, lightly shake off excess chocolate, and dip the cherry in the chopped pistachios.
- Transfer to the prepared sheet pan. Repeat with remaining cherries, refrigerate for 10 minutes, and store in a cool, dry place. Cherries will keep for several hours. Enjoy!

Steps:
- Drain cherries,place on paper towels and pat well.
- Set aside.
- Place sifted powdered sugar in bowl.
- Combine melted butter,evaporated milk vanilla,and salt.
- Pour over powdered sugar and mix well.
- May need to use hands to form a stiff,not sticky dough.
- Add more powdered sugar slowly,if need to form dough.
- Now pinch of a small amount,flatten into a disc and form around each cherry.
- Pinch off any excess dough.
- Place cherry on wax paper lined cookie sheets and refrigerate for 1 hour.
- Melt chocolate chips and shortening over boiling water in double boiler.
- Dip cherries in chocolate,scraping off excess.
- Refrigerate until chocolate is hard.
- (I cheat sometimes and just use the chocolate flavored Almond Bark or candy coating).

MAKE YOUR OWN MARASCHINO CHERRIES
Make your own Maraschino cherries! Adapted from Meal Master. I have not tried this yet, so putting it here for safekeeping! The sweet sundae-topper has its origins in Yugoslavia and northern Italy. For centuries, merchants had used marascas - small, bitter, black wild cherries - to make a sweet liqueur. Part of the flavor came from crushed cherry stones, which have an almond-like flavor. Marascara cherries preserved in the cherry liqueur were imported into the United States in the 1890s. These maraschino cherries were an expensive luxury served at the finest hotels. With typical ingenuity, American cherry processors figured out a way to make a less expensive version. They used Royal Anne cherries, less liqueur, and almond oil instead of crushed cherry pits. In the 1920s, alcohol was eliminated altogether when horticulturalist Ernest Wiegand found a way to preserve cherries using brine instead of alcohol. The American version of the maraschino became so popular that it completely replaced the foreign import. Cherries are grown in several regions of this country, but seventy percent of the cherries produced in the United States come from four states (Washington, Oregon, Idaho, and Utah). Maraschini cherries are also produced in New England and the Mid Atlantic.

- Soak pitted cherries overnight in heated brine.
- The next morning, drain cherries. Rinse them in cold water. Combine cherries, water, sugar, lemon juice, and red food coloring. Heat to the boiling point.
- Let stand about 24 hours. Again, boil juices, pour over cherries and let stand 24 hours. Bring to boil again. Add almond extract and cherries. Pack in hot sterilized jars and seal.
- The Ball Blue book says boil this in a water bath-pints-20 minutes, quarts-25 minutes.

CANNED MARASCHINO CHERRIES

- Brine cherries by bringing 6 cups of water to a boil and adding 3 tablespoons of sea salt; use a salt with no additives to ensure glossy-looking fruit (table salt can have all kinds of things in it). Remove brine from heat. Halve and pit the cherries, adding them as you go to the still-warm liquid, then let the cherries sit in liquid overnight, at least, in the fridge.
- Once the cherries are brined, bring the sugar, lime juice, and 3 cups of water to a simmer in a saucepan. Add the mashed cherries for a deeper, natural color (however, the cherries look pretty cool and slightly alien without it). Let this mixture reduce by a third, then cool. Drain the cherries and rinse them of brine. In a large, airtight jar, add the sugar mixture and the drained cherries. Top with at least a cup of Maraska maraschino liqueur, available at many downtown liquor stores, or substitute a spirit like bourbon or brandy. Because the cherries are preserved in alcohol, a snap-shut glass jar with a rubber gasket works just fine. They will easily keep in your refrigerator for a few months.

- In a medium bowl, mix together confectioner's sugar, margarine, milk and almond extract.
- On a lightly floured surface, knead the mixture into a large ball. Roll into 1 inch balls. Flatten the balls into 2 inch circles. Leaving the stems sticking out, wrap the cherries in the circles by lightly rolling in hands. Place the wrapped cherries on wax paper and chill in the refrigerator at least 4 hours.
- In a medium saucepan over medium heat, melt chocolate chips and shortening. Holding by the stem, dip the chilled cherries into the chocolate chip mixture. Chill until serving.
