8 ounces linguine1 medium onion
1 clove garlic1 (15-ounce) can black beans
1 tablespoon vegetable oil
2 1/2 cups canned stewed tomatoes
1/2 cup picante sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon dried oregano
4 ounces finely shredded Colby Jack cheese blend
1/4 cup chopped fresh cilantro

Steps:

  • 1Cook pasta using package directions; drain. Rinse with cool water; drain again. Cover to keep warm. .2Chop onion coarsely. Mince garlic. Drain and rinse black beans. .3Heat vegetable oil in a large skillet over medium-high heat until hot. Add onion and garlic and mix well. Sauté until onion is tender. .4Add undrained tomatoes, picante sauce, black beans, chili powder, cumin and oregano and mix well. Bring to a boil, stirring occasionally. Reduce heat to low and cover. .5Simmer the sauce, stirring occasionally, for 15 minutes; remove cover. Increase heat to medium-high. Cook, stirring frequently, until of the desired consistency, about 5 minutes. Place hot cooked pasta on a serving platter. Spoon sauce over pasta. Sprinkle with Colby Jack. Top with cilantro.

1/2 cup olive oil
1 pound peeled shrimp
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1 cup sliced onions
2 cloves garlic, minced
3 teaspoons red aji paste
2 Poblano chiles, stemmed, seeded and cut into strips
1 1/2 cups chopped canned tomato, seeds and juice removed
1 teaspoon sugar
Juice of 1 lime

Steps:

  • Heat the oil in a large saucepan over moderate heat. Saute the shrimp with salt and pepper until just cooked, 3-4 minutes. Add the onion and cook 5-7 minutes until golden. Add the garlic, aji and poblano and cook until tender, stirring occasionally, 5-7 minutes. Add tomatoes and sugar and continue cooking for 5 minutes, stirring occasionally. Add the shrimp and lime juice. Serve garnished with Garlic Chips on top of Arroz Graneado.

LINGUINE WITH RAW TOMATO SAUCE

3 pounds very ripe tomatoes
3 tablespoons red wine vinegar
4 tablespoons extra-virgin olive oil
1 tablespoon olive oil
1/2 cup torn basil leaves
2 tablespoons finely-chopped garlic
1 pound linguine
1/2 cup freshly-grated Parmesan cheese

Steps:

  • Coarsely chop tomatoes, reserving juice. In a large bowl combine tomatoes and their juice, vinegar, 3 tablespoons of the extra-virgin olive oil and basil. In a very small skillet heat 1 tablespoon olive oil over medium heat. Saute garlic 3 minutes, without allowing garlic to brown. Scrape garlic and oil into tomato mixture and season to taste with salt and pepper. Marinate tomato sauce at room temperature, 5 to 6 hours.
  • In a large pot of boiling salted water, cook linguine according to package directions until al dente, 5 to 10 minutes; drain in a large colander. Return pasta to pot and toss with remaining 1 tablespoon extra-virgin olive oil and grated Parmesan; divide among 6 bowls. Using a slotted spoon top each portion with about 1 cup tomato chunks. Ladle remaining tomato liquid around pasta.

Linguine with bacon, spinach and pine nuts in a creamy garlic sauce. This recipe is from Taste of Home. The only change I would make is to cut back on the amount of cream cheese, to me, it almost overpowered the garlic flavor. I will make it again though, very good!

1 lb uncooked linguine
1/2 lb bacon, diced
5 cups fresh spinach
1/2 cup chopped onion
1/2 teaspoon minced garlic
1 1/4 cups milk
8 ounces cream cheese (light is what I used)
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1/2 cup pine nuts, toasted

Steps:

  • Cook linguine according to package directions.
  • Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 T. drippings.
  • In the drippings, sauté the spinach, onion, garlic until tender.
  • Add the milk, cream cheese, butter, salt, nutmeg and pepper; stir until smooth.
  • Stir in pine nuts and bacon; heat through. Drain pasta; toss with sauce.

This is from the Horn of the Moon cookbook. This was pretty good. I would ½ the recipe for two people and add a splash of red wine. Serve with some cheesy bread sticks.

3 quarts water
6 tablespoons butter (I use less)
8 -10 large garlic cloves, minced
6 cups sliced mushrooms
1 teaspoon basil
1/4 teaspoon salt
1 dash fresh black pepper
2 tablespoons olive oil
1 lb linguine
2 tablespoons fresh minced parsley
grated parmesan cheese

Steps:

  • Cook the pasta in the water. Drain.
  • Melt 2 T butter in a saucepan. Add garlic and cook for a minute, then add mushrooms, basil and salt and cook until just tender.
  • Add remaining 4 T butter, pepper and oil.
  • Stir and remove from the heat. Add the parsley to the sauce.
  • Toss with the pasta and serve topped with Parmesan cheese.

8 ounces dreamfields low-carb linguine or 8 ounces whole wheat linguine
1 medium onion
1 garlic clove
1 (15 ounce) can black beans, rinsed and drained
1 tablespoon olive oil
2 (15 ounce) cans stewed tomatoes, presliced
1/2 cup medium Pace Picante Sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon dried oregano
4 ounces shredded low-fat monterey jack and colby cheese
1/4 cup chopped fresh cilantro

Steps:
