This is one of those super quick pasta recipes that is ready in about 20 minutes. Use any kind of pasta and serve with this creamy Gorgonzola sauce with fresh spinach.

1 (16 ounce) package fusilli pasta
1 ½ tablespoons butter
2 shallots, minced
1 cup heavy whipping cream
4 cups fresh spinach
½ cup Gorgonzola cheese
salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • In the meantime, melt butter in a skillet over medium heat and cook shallots until soft and translucent, 3 to 5 minutes. Pour in cream and cook until heated through, 3 to 5 minutes. Add spinach and crumble in Gorgonzola cheese. Season with salt and pepper and cook until spinach is wilted and sauce has thickened, about 4 minutes.
  • Drain fusilli and toss with sauce. Serve immediately.

This easy pasta dish takes less than 30 minutes and less than 10 ingredients to make. The gorgonzola packs a creamy punch of flavor that is well balanced by the Parmesan and buttery spinach. The finely chopped toasty walnuts add a nice crunchy texture to each bite.

12 ounces spaghetti
1/2 cup walnuts
2 tablespoons unsalted butter
5 ounces baby spinach (about 4 cups)
1 cup crumbled gorgonzola cheese (about 4 ounces)
1/4 cup grated Parmesan cheese
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • Meanwhile, toast the walnuts in a large skillet over medium heat, shaking the pan occasionally, until golden brown, 3 to 5 minutes. Remove the walnuts to a cutting board (reserve the skillet) and let cool slightly, then very finely chop.
  • In the last 2 minutes of cooking the pasta, add the butter to the skillet and melt over medium heat. Add the spinach, cover and cook until wilted, 1 to 2 minutes. Add the cooked pasta, gorgonzola, Parmesan, 1/2 teaspoon each salt and pepper and 1/2 cup of the reserved cooking water to the skillet. Toss until the cheese is melted and the pasta is evenly coated in the sauce. Add more pasta water as needed; season with salt.
  • Divide the pasta among shallow bowls and top with the walnuts. Drizzle any remaining sauce in the skillet on top.

1/4 cup (1/2 stick) butter
4 firm pears (about 2 pounds), peeled, cored,sliced into 1/3-inch-thick strips
1 tablespoon (scant) chopped fresh rosemary or 1 1/2 teaspoons dried
1 cup canned low-salt chicken broth
4 ounces Gorgonzola cheese, crumbled
3/4 cup grated Parmesan cheese
1/2 cup whipping cream
3/4 pound linguine, freshly cooked
1/3 cup chopped pecans, toasted

Steps:

  • Melt butter in heavy large skillet over medium-high heat. Add pears and sauté until tender and beginning to brown but not soft, about 8 minutes. Using slotted spoon, carefully transfer pears to bowl.
  • Add rosemary to same skillet and stir until fragrant, about 1 minute. Add broth, Gorgonzola cheese, 1/2 cup Parmesan cheese and cream. Simmer until sauce thickens enough to coat spoon, whisking occasionally, about 6 minutes. Return pears and any accumulated juices to sauce. (Can be made 2 hours ahead. Let stand at room temperature. Bring to simmer before continuing.)
  • Add linguine and pecans to sauce. Toss over medium-low heat until sauce coats pasta, about 3 minutes. Season to taste with salt and pepper. Transfer to large bowl. Sprinkle with remaining 1/4 cup Parmesan cheese.

1/4 cup chopped sun-dried tomato
1 tablespoon grated lemon zest
1 tablespoon garlic paste
4 ounces prosciutto, torn into pieces
1/3 cup fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
8 cups Baby Spinach, loosely packed
1/2 cup toasted pine nuts
grated parmigiano-reggiano cheese or grana padano, grated, garnish

Steps:

  • In large pot, cook linguine according to package directions, al dente.
  • Meanwhile, in large, deep skillet, heat oil over medium-high heat.
  • Add shallots, sun-dried tomatoes and grated lemon zest and cook, stirring constantly, 1 minute.
  • Add garlic paste and cook, stirring constantly, 1 minute.
  • Add prosciutto and cook, about 2 minutes, until crisp.
  • Drain linguine, add to skillet along with lemon juice, salt and pepper, tossing over medium heat to combine.
  • Place spinach in large bowl.
  • Add hot linguine mixture to spinach, tossing to combine.
  • Stir in pine nuts.
  • Garnish with cheese.

I modified this recipe to suit our needs that I got from the Bon Appetit archives years ago. This dish is beautiful and delicious enough for company, yet so flexible enough to make everyday. I have played around with it and added tomatoes, olives, artichoke hearts. You can use bacon instead of the prosciutto...changed the cheese to goat cheese or parmasan cheese. The options are endless

1 lb spinach (coarse stems discarded, leaves washed well and spun dry)
1/2 lb prosciutto, cut into 1/2-inch pieces
2 tablespoons garlic, finely chopped
2 tablespoons fresh basil leaves, chopped (or 1 tablespoon dried basil, crumbled)
2 tablespoons fresh oregano, chopped (or 1 tablespoon dried oregano, crumbled)
1/4 cup olive oil (more if you need it)
1/4 lb gorgonzola, crumbled (more if you need it)
1/2 cup pine nuts, toasted until golden
fresh basil leaf
parmesan cheese, freshly grated

Steps:

  • In a 6-quart kettle bring 5 quarts salted water to a boil for linguine.
  • Cut half of spinach leaves into thin strips and reserve remaining whole leaves.
  • In a large heavy skillet cook prosciutto, garlic, basil, and oregano in the oil over moderately high heat, stirring, until lightly browned, about 3 minutes.
  • Add pasta to boiling water and cook until al dente. Drain in a colander. Return pasta to kettle and toss with the prosciutto mixture, cut spinach and Gorgonzola. Season pasta with salt and pepper.
