From 50 Splenda Recipes by Marlene Koch, this sounds easy and good. The first ingredient (1/2 C strong coffee) should not be dissolved in warm water as Zaar insists. LOL.

1/2 cup strong coffee (dissolved in 4 ounces warm water) or 2 teaspoons instant coffee (dissolved in 4 ounces warm water)
1/4 cup fat-free half-and-half
1 tablespoon fat-free half-and-half
3 tablespoons Splenda granular
1 teaspoon unsweetened cocoa powder
1 cup crushed ice

Steps:

  • Pour the coffee, half-and-half, Splenda, and cocoa powder into a blender.
  • Blend to mix.
  • Add half of the ice and blend briefly (about 15 seconds) until ice is incorporated.
  • Add the rest of the ice and blend once more.
  • Pour into a tall 12-ounce glass.
  • Per serving:.
  • Calories 61.
  • Carbohydrate 10 grams.
  • Protein 2 grams.
  • Fat 0.5 gram (saturated 0).
  • Fiber 0 grams.
  • Sodium 67 milligrams.
  • Diabetic exchange = 1/2 carbohydrate.
  • WW point comparison = I point.

A raspberry flavored coffee. I use a French press but any brewed coffee would work. I make mine sugar free, but regular cocoa mix and syrup can be used. I don't buy cocoa mix anymore, since making --Nimz-- Recipe #147148 , which I make with Hershey's SPECIAL DARK Cocoa powder. I use about 4 tablespoons of the mix (2 per serving).

1 cup low-fat milk
1 (5/8 ounce) package fat-free sugar-free hot cocoa mix (Swiss Miss)
2 tablespoons sugar-free raspberry flavored syrup (Torani)
2 cups brewed coffee, hot (strong)

Steps:

  • Heat milk in microwave for 2 minutes (I use a microwave frother).
  • Stir in cocoa mix (and froth if using frother).
  • Divide syrup between two large mugs and divide hot coffee and hot milk between mugs If using frother, add some froth to top.

  • Squeeze Torani Dark Chocolate Sauce into a medium sized coffee mug. You can pool the chocolate sauce at the bottom of the cup or decorate the mug with a fancy drizzle.
  • Brew two shots of espresso into the mug with chocolate sauce. (I have an espresso machine and use the pods that are compatible with my specific brand of machine. If you don’t have an espresso machine, preparing instant espresso according to the package’s instructions work in a pinch. If you prefer to not use espresso, very strongly concentrated brewed coffee could be used in place of espresso.)
  • If using freeze dried raspberries, pulse them into a fine powder by using a food processor or blender with a milling blade.
  • In a separate mug or glass, either steam milk or heat and froth milk. My favorite milk frother/warmer can be found here. (If you do not have a milk frother, I have had success with warming a small amount of milk and pulsing it in a single serve blender to mimic the bubbles of a foamy coffee house drink.)
