14 ounces smoked cooked sausage
1/4 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 tablespoons white wine vinegar
1/3 cup olive oil
1 garlic clove, peeled and mashed
8 ounces uncooked penne pasta, 2 1/4 cups
1 cup frozen green pea, thawed
1 cup finely chopped green onion, with green tops
2 large medium red ripe tomatoes, seeded and chopped
1/2 cup thinly sliced carrot, 1 medium carrot
1/4 cup grated parmesan cheese
1/4 cup fresh basil, julienned
additional fresh basil (to garnish)

Steps:

  • Bring pan with 2 to 3 inches of water to a boil.
  • Turn heat off and add sausage.
  • Immediately cover pan and let sausage stand 15 minutes.
  • Remove sausage to a plate and let cool in the refrigerator.
  • Meanwhile, prepare vinaigrette dressing by mixing dry mustard, salt, pepper, garlic and vinegar together in a small bowl.
  • Slowly whip in olive oil to form an emulsion.
  • Cook pasta according to package directions.
  • Drain.
  • Place in large bowl and toss with 1/4 cup vinaigrette dressing.
  • When cool, slice sausage into thin 1/4-inch slices.
  • Remove garlic clove from vinaigrette dressing.
  • Add sausage, peas, onion, tomatoes, carrots, 1/4 cup basil and remaining vinaigrette to the pasta.
  • Sprinkle top with cheese. Garnish with fresh basil.

1 pound smoked sausage, cut into 1/4-inch slices
1-1/2 cups sliced fresh carrots
1 cup coarsely chopped green pepper
1 small onion, halved and sliced
1 tablespoon canola oil
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 cup Italian salad dressing

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute the sausage, carrots, green pepper and onion in oil until sausage is browned and vegetables are tender. , Drain pasta; place in a large bowl. Add sausage mixture and olives. Drizzle with dressing and toss to coat. Serve warm or chilled.

1 box (7.6 oz) Betty Crocker® Suddenly Salad® basil pesto pasta salad mix
1/4 cup pine nuts
1/3 cup cold water
3 tablespoons olive oil
1 cup cherry or grape tomatoes, cut in half
1 cup bocconcini (small fresh mozzarella cheese balls)
4 precooked smoked Italian sausage links, thinly sliced
2 tablespoons chopped fresh basil leaves

Steps:

  • Fill 3-quart saucepan 2/3 full of water; heat to boiling. Add Pasta. Gently boil, uncovered 12 minutes, stirring occasionally; drain. Rinse with cold water to cool; drain well. Meanwhile, to toast pine nuts, place in ungreased heavy skillet. Cook over medium heat 3 to 5 minutes, stirring constantly until nuts are light brown. In large bowl, combine Seasoning mix from packet, cold water and oil. Stir in tomatoes, cheese and sausage. Stir in cooked pasta until well mixed. Cover; refrigerate about 1 hour or until chilled. Garnish with pine nuts and basil.

If you ever get a chance to smoke a log of summer sausage, it is off the hook good. I created this salad to use up leftover summer sausage, and it's really a meal in itself! You could use any cooked sausage or even bacon instead.

4 cup(s) cooked pasta
2 cup(s) smoked summer sausage, cubed
1 - red bell pepper, roasted
1 - poblano pepper, roasted
1/2 cup(s) diced onion
1 1/2 cup(s) grated cheddar, 2%
1/2 teaspoon(s) black pepper
1 cup(s) sour cream, lite

Steps:

  • Cut red bell and pablano in half, remove stems and seeds. Place on baking sheet and broil for 5-7 min. till charring begins. Remove, cool, and dice. Dice onion, and grate cheese. Cube summer sausage, or any other sausage into small bite size pieces.
  • Place all ingredients in a large bowl, add black pepper and sour cream. Mix to combine. Refrigerate until serving.

Olive Oil
1 Onion
1 Garlic Clove
Diced peppers (approx 3 whole peppers)
Italian Herbs (oregano, basil, Italian seasoning)
200g Smoked Sausage (Mattessons Smoked Pork Sausage)
400g Tin of Chopped Tomatoes
Tomato Puree
1 tsp sugar
Pasta
Parmasan Cheese

Steps:

  • Dice onion and the garlic. Heat a pan with some of the Olive Oil (roughly 1tbs). Add the onion, peppers and 1 tsp each of Italian herbs mix through. Cook for 5 minutes until the onion is soft and slightly translucent. Add the garlic and stir through, cook for a further 5 minutes.
  • Meanwhile slice the Smoked Sausage. Add to the mixture and stir through, cook for 5 minutes. Add the 400g tin of chopped tomato and stir through. Add a good squeeze of tomato puree and 1tsp sugar. Mix through. Bring to the boil then reduce the heat and simmer for 30 minutes. Taking care not to let the mixture dry out, stir occasionally to make sure its not sticking to the bottom of the pan and add spoonfuls of water if needed.
  • While the sauce is cooking, measure out 75g per person of pasta (penne, fusilli, rigatoni, etc). Bring a pan of water to the boil (with a tsp of salt) and add the pasta and cook as per the packet instructions.
  • Serve the pasta with the sauce over the top and grate some parmasan over it. Can serve with garlic bread or salad.
