HOLIDAY BISCOTTI

Holiday Biscotti image

Provided by Giada De Laurentiis

Categories     dessert

Time 1h40m

Yield Makes about 2 dozen

Number Of Ingredients 11

2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 cup sugar
1/2 cup (1 stick) unsalted butter, room temperature
1 teaspoon grated lemon zest
1/4 teaspoon salt
2 large eggs
3/4 cup pistachios, coarsely chopped
2/3 cup dried cranberries
12 ounces good-quality white chocolate, chopped
Red and green sugar crystals, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Line a heavy large baking sheet with parchment paper.
  • Whisk the flour and baking powder in a medium bowl to blend. Using an electric mixer, beat the sugar, butter, lemon zest, and salt in a large bowl to blend. Beat in the eggs 1 at a time. Add the flour mixture and beat just until blended. Stir in the pistachios and cranberries.
  • Form the dough into a 13-inch-long, 3-inch-wide log on the prepared baking sheet. Bake until light golden, about 40 minutes. Cool for 30 minutes.
  • Place the log on the cutting board. Using a sharp serrated knife, cut the log on a diagonal into 1/2- to 3/4-inch-thick slices. Arrange the biscotti cut side down on the baking sheet. Bake the biscotti until they are pale golden, about 20 minutes. Transfer the biscotti to a rack and cool completely.
  • Stir the chocolate in a bowl set over a saucepan of simmering water until the chocolate melts. Dip half of the biscotti into the melted chocolate. Gently shake off the excess chocolate. Place the biscotti on the baking sheet for the chocolate to set. Sprinkle with the sugar crystals. Refrigerate until the chocolate is firm, about 35 minutes.
  • The biscotti can be made ahead. Store them in an airtight container up to 4 days, or wrap them in foil and freeze in re-sealable plastic bags up to 3 weeks.

½ teaspoon salt
2 teaspoons baking powder

Cut the loaves into diagonal slices 1/2 inch wide, place the slices onto the cookie sheets and return to the oven. Toast on one side, then turn them over to do the other side. LINDA'S ONCE-BAKED BISCOTTI

Linda's Once-Baked Biscotti image

My sister developed this recipe and I made it for the first time last Christmas. The biscotti turned out great, despite the fact that I mistakenly baked them twice.

Provided by Artemis Platts

Categories     Dessert

Time 1h20m

Yield 2 dozen, 24 serving(s)

Number Of Ingredients 8

2 cups flour
1 1/3 cups sugar
2 teaspoons baking powder
2 large eggs
1 teaspoon grated lemon rind
1/4 cup anisette
1/4 cup rum
1 1/2 cups whole raw almonds

Steps:

  • Mix all ingredients in order listed.
  • Grease and flour a cookie sheet.
  • Form the dough into a rounded loaf. If the loaf is a bit flat, it's no problem- just decrease the cooking time slightly.
  • Bake at 350 degrees for 1 hour.
  • Slice loaf with a heavy knife. Don't worry if there is some crumbling as you slice. Once the loaf cools, the slices will firm up and stay together.

BISCOTTI

Categories     dessert

Time 1h15m

Yield about 4 dozen biscotti

Number Of Ingredients 8

3 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
3/4 cup canola oil
1 teaspoon pure vanilla extract
3 large eggs
Add ins: 1/2 to 3/4 cup (total) of your favorites, such as toasted coconut, raisins, walnuts, etc. (I use semisweet chocolate chips and then throw in a chopped-up toffee bar)
Cinnamon sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together the flour, sugar and baking powder in a large bowl. Add the oil, vanilla and eggs and stir together. Toss in the add ins and combine with your hands. Form the dough into 3 to 4 loaves, depending on how big you want your cookies to be. (I do 4 loaves.) Place the loaves on parchment paper on a cookie sheet and sprinkle with cinnamon sugar.
  • Bake until golden brown, about 40 minutes. Allow to cool for 10 to 15 minutes, then slice on the bias. If you prefer traditional biscotti, after slicing, lay them flat on the cookie sheet. Reduce the oven temperature to 300 degrees F and continue to bake for another 10 to 15 minutes.

ANNA'S TWICE BAKED ALMOND BISCOTTI

Anna's Twice Baked Almond Biscotti image

Anna migrated to Queens NY from Italy with her husband and lived in my Granny's house in the upstairs apartment. She had no children of her own so it gave her great pleasure to spoil us often with these baked goodies called "biscotti". Who knew these very traditional breakfast treats would turn into the very stylish biscotti found in the best coffee bars today! Thanks Anna for the memories :)
